New spot in cherry creek and its focused on being fresh and authentic Mexican. The vibe is very modern but the food and drink really does remind me of Mexico. We had their barbacoa short ribs and also their shrimp platter and everything was way better than expected. Prices are a bit higher but the value is there! read more

Went after a long bike ride and I will be honest, wasn't expecting much as we were starving and wanted an open air space/patio. First the service is amazing! We had several rounds of drinks. All were very good! We had several tacos and the Mexican Cobb. All really fresh. I will say the ceviche was the highlight. I just got back from 2 trips to Tulum this year and thought I had the best ceviche in Mexico, Sol is right on par. The fish is so fresh and they don't drown the fish in lime juice, it was PERFECT! We stopped in for lunch on Sunday since the menu looked great and it did not look crowded, compared to all the other restaurants in the Cherry Creek neighborhood. We were told by the 2 hostesses it would be a 15-20 minute wait. Ok. We looked at the menu. 10 minutes later I asked about all the empty tables and she said they were all held for reservations. Really?!! No one had come in!!! The restaurant was 1/4 full. We should have left then. We stood in the door way longer. Was never told the couches were open seating. I asked again about the tables, told they just opened for lunch and have to follow "management rules" and hold tables for reservations. Ridiculous. We were finally seated and when we left tables were STILL OPEN. The food and flavors were great. However I would never go back. Note to others - make a reservation!! read more

There were three of us in for dinner tonight - myself and two colleagues. We are not from Colorado but from out of town and decided on Sol from Yelp reviews but always taking a chance. It was a fantastic experience!! The service was great, the food authentic, and the quality fabulous!! Delicious margaritas as well- the watermelon cocktail I really enjoyed. It is not a run- of - the -mill Baja or Mexican food restaurant. Fresh , seasonal and local ingredients as well- bonus! This was my first time at the restaurant. Loved the atmosphere. The drinks were amazing. A little disappointed on my entrée though. I ordered the shrimp stuffed poblano . I figured the whole thing would be stuffed with the shrimp mixture. However, the bottom half of the chili was loaded with rice. This was my 4th time at Sol, the previous 3 times being much better. First, the 12-ounce house margarita came with so much ice, that maybe there were 3 ounces of tequila in the drink. When I order a 2nd margarita, explaining to the waiter, that the first was nothing but ice, I was expecting maybe an apology with the 2nd margarita being on the house. Nope. I was charged for both with no apology. This is upscale Mexican food. The food is pretty good but kinda pricey, especially if you have a couple margaritas. The skinny margarita here is the best I've had in Colorado, but they are not cheap. You are paying for the ambiance. The decor is nice and when they open up the widows in the summer, it has that California outdoor feel. I went to the opening last night, and can honestly say it was some of the best food and drinks I've ever had in my life. The shrimp "al Mojo" is better than lobster.
