I took my daughters out to dinner here the other night. We were so excited to finally experience the food that has been raved about on yelp. We were so disappointed. We had 3 appetizers that were good but not amazing. Three entrées-pheasant breast with asian inspired orange veggie noodles. The orange flavor was so overpowering and sweet that the delicate pheasant disappeared. Duck sausage toad in a hole. Sausage was dry, pancake was sticky and over cooked. The onion gravy did not taste of onion and but tasted burnt. Steak was excellent. Dessert- deconstructed german chocolate cake. The cake morsels were very dry. Sybaris has become one of my all time favorite restaurants. I live out of state but always stop in when in town visiting friends. Seasonal dining at its best! Try the Pumpkin party dish. We had a large group on Saturday night at 6:30. We were seated immediately and the cocktails were quick and yummy! We all ordered different things including the special (salmon). Loved our meals - the lamb and beef kabobs were amazing! Great seasoning and I am super picky about lamb. A couple desserts that we shared were fantastic. Will be back again. read more

From appetizers to dessert there wasn't single misstep. The crab roles were crisp and stuffed with real crab - no krab here!! The halibut wa tender and perfectly matched with the rich corn chowder. With a Milky Way martini, a crisp Chardonnay and a buttery melt in the mouth creme brulee, it was a perfect meal. read more

Wow! I'm surprised there aren't any reviews here! I was just going to write a review about Clemenza's and thought I'd see what people were saying about other places in Albany. Sybaris is great. My husband and I have been going a few times a year for a long while now. We've never had a bad dinner, and the atmosphere is wonderful. The scattered lights in the ceiling recall a nighttime picnic. We always like the food, but a while back, they had duck-fat french fries; very good! Highly recommended. read more

My husband and I choose Sybaris for our date night last weekend and now plan to try to get there once a month as their menu changes! We started off with a bottle of chardonnay - one we've had before but knew we like. Reasonably priced (for the restaurant world). Next we shared the romaine with beer cheese vinaigrette, which it states for "2" on the menu, but honestly could have served 4-5. The dressing was great! The the main entree I had the spinach-lobster risotto, actually an appetizer item, but the portion size was enough for me and there was a good amount of lobster pieces in it - probably one every other bite. On top was a baked/dried beet - I wish I could have had a whole bowl of those to snack on! They were out of the rockfish that night, but had substituted cod, for the dungeness crab crust - wow it was AMAZING! Awesome flavor, nicely golden brown crust, yumm! Don't get me wrong, the food was great, pricey but good. The ambience is far from bistro, eclectic smallish pieces of art, terrible color of the walls, but we are talking customer service. Yes, this could be the best place in Albany as far as food, poor town is not spoiled by sophisticated places to eat, the absence of competition however does not stimulate the owner to strive for the best, because it is good enough. I made reservation for a day and a half in advance, this was mom's 89th birthday. A person who took the reservation, told me they are wide open. We were shown to the first from the entrance table that faced half the wall and half the entrance, one could feel the breeze from an opening and closing door. I asked for a different table, the hostess was stern and said that this is the table t"hey reserved for us", that they had full house reservations. There was a large space with at least 10 tables to the right of us, they remained un occupied for the rest of our dinner. When after we paid I expressed my frustration, the hostess remained unshaken and said the usual " I am sorry you feel that way" though it was obvious she was not. I left in a very bad mood, mostly because of the attitude. A kind you will see in a Russian cafe on Brighton Beach.Though Russians are quick learners. I took my mother here for her birthday. I'm giving Sybaris five stars because to me, it encompasses everything a restaurant should be. It's probably the most expensive place in town, but if you're looking for an experience or amazing food this is the place to go. My mom took me by suprise when she ordered the steak, which is quite the heavy dish. After she had already eaten a whole bowl of clam chowder. She was not shy to ask "what's for dessert" either, and my mother is not a big woman! read more

Our favorite restaurant in all of western Oregon! Whenever we are ready for the best, most innovative and fresh, from-scratch food, Sybaris is our choice. Matt Bennett, twice-nominated NW James Beard Chef, consistently puts together creative, inspired meals frequently including indigenous, local ingredients. For example, last week we started with a chilled artichoke soup with Dungeness crab and the chilled scallop and a shrimp boudin blanc with local bay shrimp and leek vinaigrette. Both were outstanding--visually as well as on the palate. Often the words on a restaurant's menu lead one to expect more than is served. Not so at Sybaris. Our main course included Mrs. Shalashova's tvorg (house made fresh cheese), smoked asparagus & sorrel vareniki pyraminds (very special raviolis), spring vegetables, with a carrot juice reduction and candied sunflower seeds. I had the roasted halibut, halibut "ham" broth, Grandma Stroh's strudia, wild and domestic spring vegetables, raw & cooked. We'll be savoring the delicate, refined aspects of this meal as well as the potent full-bodied flavors of this meal for a long time. We had a wonderful anniversary meal here. Excellent value, delicious food and relaxing atmosphere. The fish was especially good - all very fresh with seasonal and locally sourced veggies. Maybe the best part of our meal was REALLY outstanding service from Jessie. He was super knowledgeable and seemed to know exactly what we wanted - often without ever being asked or being overbearing. We walked in on a Saturday with no reservations and the waiter told us it would be over a hour wait, even though there where lots of open tables not just then but the whole time we had dinner. My husband had the veal with a pasta dish priced around $30, the veal was pretty good however the pasta tasted like cooked noodles with tomato sauce(not good at all). My dinner was the fish it was good but also $30. Overall food was ok but not what a $30 plate should taste like. Service was good, waiter was nice and knew is stuff however really pushed for up sale on everything. It wasn't horrible but I wouldn't go back, seasonings and flavors where just not there. read more

What a great restaurant! This eatery is not your typical nice valley restaurant. The man (Matt) responsible for the food is a chef. The menu items are always presented well and cooked with local vegetables. The entrées are unique, fresh and usually seasonal. The wait staff has been with Matt in some cases for years and they know the menu(which changes monthly) front and back. Wow. Food actually tasted fresh. They definitely give Vault a run for their money. Makes you wonder how sweet red will stay in business with two amazing bistros that serve fresh not frozen food really close by. Four stars because the service could have been a little better. Chef Matt Bennett showed a commitment to making excellent and appropriate use of local ingredients before it was popular. His philosophy has borne fruit in creating a magnet drawing appreciative customers from throughout the Willamette Valley. Recently Matt created a truly fantastic dinner featuring local wild mushrooms for Slow Food Corvallis members. For an extremely reasonable price, we were treated to a fabulous meal with a multinational flair--French leek soup with lobster and shrimp mushrooms, Russian lamb prepared in two ways, loin and "communist cutlet" on a bed of a delicious, creamy mushroom stroganoff, and most amazing of all, an incredible pannacotta infused with candycap mushrooms resulting in a sweet maple flavor, accented with a dollop of black truffle ice cream. The dinner was accompanied by a trio of wines selected to compliment the dishes. Many kudos to Matt for this excellent meal. Service by his friendly and hospitable staff made the entire experience extremely satisfactory. Sybaris's chef-owner truly deserved the honor of his recent invitation to bring local Oregon cuisine to the James Beard House in New York. read more

My Hubby and I eat at Sybaris every time we get to Oregon to visit family. We are always very impressed with the creative presentation of the unique foods they serve. My hubby usually goes for the juicy flat iron steak (that melts in your mouth) and I go for the seafood. OMG! We've had the seafood tower, and if you are out to impress anyone, or pop the question, this is what you need to order! But the Chef needs a three day notice on this one! It captivated the attention of all the surrounding tables! They change their menu every month as they buy locally. Not only is the food the best in the West, :D the staff is very knowledgeable and attentive. We highly recommend Sybaris as a place for some fine dining. Meals there are excellent and creative if not for things I have seen already in many famous chefs cookbooks. I wish he had more imagination in trusting his cooking and realizing he is an amazing chef, instead of copying other peoples recipes a lot of the time. However, the food is amazing and done with the utmost care and perfection this side of Portland. I highly recommend you don't go to one of the special dinners due to the need to cook every single tables dish at the same time. Much of the food comes out completely cold and done with a quick hand with speed over quality. I went here for a New Years Eve dinner and was highly disappointed in many of the dishes. A shame because I touted this place highly to my dinner companions. I can't blame him and the kitchen though, cause trying to get the same dish out to 50+ people at the same time is not gonna work when you believe in quality food and don't have heat lamps. read more

I have been coming here for a few years now and have always been impressed with this place. The food is delicious, the service is awesome, and the atmosphere is great. They have a brand new menu every month. Its never the same. I came here on my birthday and they took great care of me. I had a six course meal with wine pairings. Absolutely amazing!! Far too overpriced for the quality! I had heard good things from friends about this restaurant, but I left wondering if the staff had completely changed since they visited. From the host to the chef, the staff were unhelpful and added to the overall unappetizing experience. Maybe I should have trusted my instincts and left immediately because when we walked in, my senses were overwhelmed by the scent of rancid oil - like in a roadside diner/casino/bar on a backroad in Nevada. I had missed breakfast and lunch that day, so I was hungry and ready to enjoy just about any food...which was why I was so surprised when I couldn't eat the bread which arrived dense, dry, and flavorless. I left it alone and hoped my entree would redeem the place. In the meantime, I ordered a cocktail which was unbalanced and again overpriced. My entree was ok. Better than those of my dining partners, but I felt like we could have easily made a meal 2-3x as delicious at home. I will not return. read more

We try to go to Sybaris once a month (it's menu changes monthly). It has a nice atmosphere and a menu that ranges from comfortable to adventurous so it suits just about any mood. It is arguably the nicest place in Albany (Vault is nice too but can be loud and doesn't permit anyone under 21). We've seen wait staff that are "typical" of a nicer restaurant and one that came across as a true pro. He was great and reminded us of a similar experience at a McCormick's in Beaverton when the server was clearly a pro and took a lot of pride in her work. Whether you will like the food or not seems to be spotty and will depend a lot on your personal taste. This is part of why we go once a month so we can try something new on the menu. I really like how the restaurant is laid out...provides some semblance of privacy versus the usual large (and loud) open room one tends to find in Albany. Overall, fair value for the dollar; classy establishment. read more

I went to Sybaris about 8 years ago and I remember having a good meal and a fantastic appetizer. I returned this week to experience one of the most disappointing meals I have had in the last few years. I had the vegan soup and the vegetables were very unevenly cooked, with the red peppers being almost crunchy. The soup was bland, and the presentation was off, with salad on the soup, which I've had in restaurants before but this time was simply a very odd pairing. The bread was what you would expect at a cheap diner, the cocktail was unbalanced with too much anis and not enough spices. Though the waiter was friendly, he did not ask the questions waiters should ask --my first job was as a waiter, so I can be both understanding and critical if basic waitering tenants are not respected. For example, even though I only ate about 1/4 of my dish, I was never asked how my meal was, only if I wanted a box. The rest of our party had a similar experience. None of us was ever asked about our meals. In fact we could not stop talking about it and we even started joking and using "pulling a Sybaris" as a metaphor for doing a really poor job. I love Sybaris, it is in a nice downtown location with a beautiful surrounding area and inside has a nice and peaceful atmosphere to it. The inside is a beautiful and quaint little place, you can either sit and relax close to the fire while you enjoy your food or you can be placed at another table or outside on a sunny day. Not only do i love the atmosphere of Sybaris but i also believe they have one of the best wait staffs in the Willamette Valley. From the moment you walk in to the moment that you leave it feels as if you are being waited on hand and foot. Their main waiter Jesse seems to do everything that he can to ensure that you as the customer will have the best experience that you possibly can while at Sybaris. Not only am i blown away by the effort that their servers put out but also everything that Matt does in the Kitchen is Amazing!! Not only does Matt already make amazing food that sometimes just blows you away he also changes his menu every month and keeps it up to date with vegetables that are in season and he also tries to keep his food local. Sybaris is a well respected restaurant and i recommend it to anyone that has the time and is willing to try something new. You will not regret it! read more

I recently ate at Sybaris with eleven of my colleagues from work. Several of them were new to the area and have eaten in fine restaurants across the country, including our boss. We were all blown away. We arrived about fifteen minutes early and the staff was ready for us, even seating us early. It's tough to wait on a large party, but our waiter, Jesse, did a great job, making sure that everyone got just what they wanted. The atmosphere is definitely not "cookie cutter" at Sybaris and probably not for those who prefer a chain restaurant, but is it warm, inviting and unique. The feeling is not rushed we were able to relax and enjoy a great meal. The food was so good. With twelve people there were quite a few menu items ordered and we got a great sampling of what Sybaris has to offer. Not only does the food taste amazing, but the fresh local menu is another reason to eat at Sybaris. At the end of the evening our boss made a point to go into the Kitchen to compliment the chef and our waiter. Great evening at a truly great restaurant. read more

It's funny really when I read through these reviews and it really makes me believe they are scripted. This place is definitely not worth the money. I am blessed to have the opportunity to enjoy well prepared food on a regular basis living in Portland Oregon but this is one of the few places I've ever eaten at that I've ever wanted to alert people to not visit. Every request from me to leave an item off the dish was followed with the chef likes things to look a certain way and he won't omit any bread items. I had asked for the bread chunks to be left out of the salad, rice to be left off, I asked to combine one salad with an entree and various other combinations. I typically never have to tell a server that I am diabetic and can't eat certain foods but once I did she discussed this with whoever it needed to be authorized by. The end result was I could have the rice removed for an additional five dollar charge. I would have left in an instant if it was any other night but I have drove to Corvallis from Portland to take my friends out for their 14 year wedding anniversary and she chose the place based on Yelp reviews. The food was mediocre, not amazing at all and the service was strained. I was wholeheartedly disappointed and even asked the server if we were being treated in such a fashion due to our arriving at 7:30 pm. Reservations were made for that hour, they are very adamant that they will not allow a reservation to be made at the quarter hour and can only reserve for on the hour or half past. When we arrived the server turned the closed sign on, which was right over our outdoor table. She denied having a problem with our arriving at that time. I wish they would have told us they close at 7:30 and not taken our reservation then maybe I wouldn't be so pissed to have spent $141 on fairly bland food and my friends would have nice memory of their Anniversary day.
