During my trip to Maui this time I caught some cold and was really looking for some spicy noodle soup kind of dishes and this one had the perfect one I needed. This was the last food truck park we hit up for our Maui trip. We tried their dessert Halo Halo, which we had for the first time. Their poster on the truck made it sound good and thought the price was comparable so we decided to get it. The lady was nice and there are tables in the middle you can sit down to enjoy your food. Halo Halo is pretty much Filipino shaved ice. It comes with multiple ingredients. Ours had ube and coconut ice cream with some colorful jellies. There were also sweet potato chunks and some cantaloupe shreds. We enjoyed it, ending the day on a sweet note. Would be interested in trying their other offerings if we ever came back. read more

Found this place while looking at food trucks. Everything on the menu looked so good and comforting we had to stop. We ordered a Pork & Veggie Lumpia, Braised Short Ribs, and the Dry Mein. Food came out hot and quick. Portions were very big. Lumpia was crispy and filled well. The Braised Short Ribs were so tender and was a very heavy meal. Don't get me wrong, I've been coming to Vidad's for years, and their Hurricane Chicken Bowl is absolutely to die for. However, today, I ordered a smoothie and my friend ordered a boba, and both drinks had more of a juice-like consistency rather than what we expected. I was definitely a bit disappointed, although the flavor of the smoothie itself was still delicious. Food was okay at best. Prices are expensive as hell (expected) however, i ordered the salmon bowl and it was dry so i asked for some teriyaki sauce and the lady said "50 cents". The palabok is savory and comforting while the pork adobo has a rich taste with ample gravy and a strong peppercorn flavor with the perfect ratio of gravy/meat to rice. Went to Vidad's for dinner last night. Unfortunately did not enjoy the meal as much as we had hoped. Both dishes Kiwali and Sweet chili chicken were extremely dry and lacked a lot of flavor. Both dishes had great crunch factor but the flavors were lacking. Rice was cooked great - not mushy or hard. Good value for the meals - only $33 with taxes. Service was not the best - had to yell our orders several times before they understood. They were also out of lumpia which was disappointing but we did go toward the end of the night. What a good find. Unfortunately, most of the food trucks were closed but at least Vidad's was open. I had the Lechon Kawali which is deep fried pork. It was cooked perfectly and had plenty of meat and was well seasoned. My wife ordered the pork belly adobo, which was good. It was on the salty side, but overall a good dish. The Turon which is deep friend plantain bananas wrapped in a spring roll wrapper with caramelized sugar was very good (It would be better if they used caramelized brown sugar or caramelized honey), but it held its own. There's a lot on the menu that I wish I could have tried, but I was satisfied with what we ordered. We highly recommend this place. read more

I love the Kihei Food Truck Court, behind Azeka Mauka. Heard good things about Vidad's Local Kine Grindz, so I had to try the Garlic Noodles. We stopped by, on the way to the beach to watch the sunset. What a great combination. The bowl of noodles were just right for sharing. Topped off with a few crispy sprouts and veggies. And, several pieces of savory braised beef (slow cooked to a tender perfection). Underneath it all, a good helping of delicious noodles. Tough enough to withstand tugging with chopsticks or a fork without breaking but so tender when eating. Just slightly oily and nicely seasoned. I only would have liked more bits of garlic. Right amount of garlic, not too overwhelming and topped with a tasty boneless super soft braised short ribs. Also tried the lumpia, crab won tons, fried calamari, and Hurricane fries. This was a great food truck find. We were looking for a mid-afternoon snack and we went to where the food trucks are set up next to the Azeka Mall. We chose Vidad's based on their Filipino offerings. We ordered the garlic noodles and the adobo fried rice to share between the three of us. Both the rice and the noodles had fantastic flavor. Lots of fried garlic pieces in the noodles. The rice has a perfect Filipino adobo flavor, mild (maybe needed just a tad more vinegar?) Perfect for those who enjoy something different from a typical fried rice. Great and friendly service too. Vidad's is a restaurant turned food truck. They were originally located at Queen Ka'ahumanu Center, but when that location closed, they opened up this food truck in the food truck lot behind Azeka Mauka. While they don't have a restaurant space with seats and tables anymore, I am just glad that they stuck around and I can still access their deliciuosly scrumptious adobo fried rice 'cause lets be real, da buggah is ono! Loaded with flavor and pork adobo bits, the fried rice is sure to please time and time again. I really can't leave Vidad's without at least 1 order of it whether it's for myself or to share at a group gathering. Another dish that I enjoy is their miki noodles. It's a bit different from the version I'm used to to, but delicious all the same. I'm down for it even on a sweltering summer day if I'm truly in the mood. Speaking of hot days, they also have halo halo when you need to cool down. This has been a hit or miss for me. The last time I'm pretty sure they forgot to add the evaporated milk so it tasted pretty watery. For the most part though, everything else was legit good and hits the spot when those Filipino cravings strike.
