Thankfully, as our food was served she was there to explain that the best way to experience the chef's creation is to eat it as it presented (without soy sauce) first. She went on to explain that each dish is created with specific textures and flavors in mind to create an intentional balanced bite. She is absolutely correct and I am so glad we listened. In fact, after trying the "second" bite with soy sauce, we recognized that it was much better without it. The soy sauce is homemade and delicious but the sushi is so perfectly executed, it really does not need anything at all to shine. This is not your average sushi joint. The food and service will blow you away. Get the Princess Peach Roll if it's available. The Tiger Roll and the Flame Touch were also fantastic. We didn't have reservations but were easily seated in a booth in the side dining room. Bamboo's menu is very deep and boasts Chinese, Japanese, Thai, sushi, tempura, Bento boxes and more- easily 100 options. Our group decided on a miso soup ($3.50), a Hot and Sour Soup ($3.95), an order of Chicken Tempura ($21 with an included miso soup), an order of Lemongrass Tofu ($15.50), and an order of Tuna Avocado Tartar ($14.95). I had the Hot and Sour Soup and Lemongrass Tofu. I judge H&S soup by its broth, and this was excellent. Deep flavor, none of the watery blandness I see more than once in a while. And it was hot temperature wise and fairly hot spiciness wise. It was meatless, but it packed a lot of vegetables, egg threads, tofu and more. The Lemongrass Tofu included a very generous portion of fried tofu triangles served "Hot & spicy with red & green peppers, red onion & mushrooms in a spicy lemon grass sauce" and a cup of rice. I enjoyed it a lot -the veggies were plentiful, the sauce had a mild spicy burn, and the tofu was tender and delicious. Half of the portion came home with me. I did try an onion ring from my wife's tempura dish and was struck by the lack of oiliness to it. Some tempuras are served with an oil slick in the dish and pieces that glisten like a sky full of stars. The tempura onion I had was great. It was very tender with a crunchy delicious dry batter. Service was excellent, from the moment we approached the hostess station, to being walked to our table, to water glasses and refills, to ordering, to several check-backs, to delivery of our take-out boxes, to the check presentation. The salmon sashimi I had appeared to have been colored a deeper hue, which tells me it was probably farm raised. It also was very oily, and very hard to pick up with the chopsticks. I had to fork it. Of the ramen, we had the shoyu chicken, vegetarian and wonton (all tasty though more toppings would have been good especially vegetables); the wonton had a thick skin so they didn't fall apart in the broth - I liked this but others thought it was too thick. Much of the food had an unexpected sweet flavoring. We also enjoyed the seaweed salad and vegetable gyoza though the latter weren't big pieces. The packaging of the ramen was effective because the toppings were separated from the broth to prevent sogginess. The ambiance of the location feels pretty sparse with a lot of white space. No one was in the establishment when we picked up the food, given a Sunday evening and holiday. The vibe felt like more of a casual quick meal or takeout vs. someplace to linger and bask in the atmosphere. They also had a kiosk to order and pay in the store if you don't feel like talking with anyone. The rolls lacked any significant flavor and missed some basic elements of sushi preparation. The rice was not seasoned, was not sticky, and the fish was roughly cut. The spicy rolls lacked spice and the crunchy rolls lacked crunch. It was presented well, just didn't show the level of care the front of the menu had. We informed our server of the sushi problems and she apologized but still charged us for all the sushi. Making an otherwise great experience not so great. This restaurant seems to have much better hot options compared to other all you can eat sushi. Here the sushi fish quality wasn't amazing the tuna was chewy and the combo rolls and tuna pizza were packed w bread crumbs galore. The ambiance is darker but clean They take credit card and you will be charged if you are wasteful with food When we think all you can eat sushi we are there for the fish the hot food is just a bonus so we won't be back.
