I recently tried Cha Pa's before seeing a Broadway show and later found out that it's part of a group of sister restaurants around NYC that operate under different names. They're especially known for their pho, but I wasn't in the mood for soup that day, so I decided to order something different. I ordered the grilled lemongrass chicken since I had already eaten a pretty big lunch earlier in the day. The chicken was good and it was great to eat if you want something light. The staff was friendly and our food came out pretty quickly. We were able to finish our meal in about 50 minutes from sitting, ordering,eating, and paying. This was perfect since we had a show to catch right afterwards. The pho was decent overall. One of my daughters had the Seafood Pho and raved about it. My other daughter had the Grilled meat Pho and seemed to enjoy that. Perfect day for pho with a snowstorm outside. We ordered the "All in one pho" ($19.45) and crispy spring rolls ($8.50). The pho broth was rich and flavorful, with thin-cut sirloin, round steak, and braised beef. The portion of rice noodles was generous, and it came with bean sprouts, Thai basil, jalapeño, and lime on the side. That said, maybe because of the weather, the bean sprouts and Thai basil didn't look as fresh as I expected. I've come here a good handful of times recently after not having come for a few years, and I was thrilled to see that there are now a couple of vegan and gluten-free items on the menu! There's a vegan pho now, and the vermicelli bowl or rice bowl with tofu are also vegan and gluten-free. I believe there's also a fresh summer roll that can be made with tofu, too. They even have a vegan fish sauce! I've had the vegan pho and the vermicelli bowl with tofu a couple times each and they're both delicious and filling for a good price! The tofu is marinated and very flavorful and grilled to a meaty but still soft texture. The servers are very helpful if you have questions or need help deciding. The vermicelli bowl always comes out so fast (I guess because it's just assembling different components into a bowl). I came by on a Saturday dinner with a friend - the restaurant was pretty full but we were still immediately seated. We ordered the crispy spring rolls to start, and I got the Cha Pa's Pho (meat lover). The spring rolls were tasty and perfectly crisp, but quite small and thought the sauce could've been more fragrant/flavorful. The pho was not bad but not the best. I was excited for the bone-in short rib since I'd always wanted to try it in pho and that exceeded expectations. The beef was abundant - both the short rib and brisket. The short rib was delicious and incredibly tender. Where it fell short was mainly with the basics like the broth and noodle texture. The broth could've been more flavorful; and although I liked that the noodles were a little wider/thicker than other pho noodles I'd typically had, it was slightly overcooked/could've been more al dente, sometimes falling apart when picking them up. Overall, I would probably give this restaurant closer to a 3.5 but rounded up. Came here from my overnight hotel and was very pleased. I got the lunch special which I thought was very generous for the price ($16), with a bowl of pho and a Banh mi sandwich included. I came out stuffed. I have lived in Vietnam and had pho from north to south and I thought this pho was very good, with a very legit bone broth, generous portion of beef (I also ordered an add on of brisket) and an ok plate of herbs and bean shoots. The noodles were fresh tasting and textured, more like a northern pho, which is my favorite. I ended up draining the entire bowl so as not to miss any broth. The Banh mi was really good also, with what tasted like legit house-made mayo and a generous helping of pork. The bread was tasty and the right texture and thankfully didn't tear up the roof of my mouth, like many otherwise excellent Banh mi are often doing to me. I think it could use some more pickled vegetables but it was really good regardless. I also had an iced coffee and it was good, but not really remarkable. The inside of the restaurant is small and narrow, so it's best to come here with a small group of 2 to 6 people. Everything that I had so far were very authentic.
