We did more of a family sharing dinner and tried their spicy mussels, the quartet pizza, mac and cheese, and two different cuts of steak. The steaks literally fell apart and cut with minimal effort. It was glorious. The bread service was on point and the drinks were lively. From a proper restaurant setting to a full on prohibition-inspired bar. The pasta was delicious and we learned they make it fresh in-house. Look for those double stars and see what's on special during HH.

The first floor of the restaurant was very cool! You could see the cuts of meat in the refrigerators and there is also a bar on the left of the entrance. There was a beautiful chandelier by the staircase as well. The upstairs dining area was very plain however. Bare walls, industrial type of standard light fixtures. The server recommended the skirt steak which we ordered MR. Also ordered the ribeye, portobello mushrooms fries and the steak tartare to start. I've never seen a steak tartare come out brown as it shows in the photo. I was so hungry, so I tried some, assuming the kitchen wouldn't send out bad raw meat. It tasted ok but the more I kept eating the weirder I felt about the color. We asked the manager if this was a common occurrence as my experience with steak tartare had never been this way. She said that it shouldn't come out brown and said she'd take it off the menu. She then later came back to explain that the lime juice that's in the marinade oxidizes the raw beef so that's why it's brown... which is an acceptable answer I suppose? It just felt weird bc I couldn't find any photos of browned steak tartare on google when looking up the restaurant menu. The steaks we ordered MR came out. The ribeye was cooked decently but the skirt steak was more on the rare side so we had to send it back for an oven heat up for 1 more minute. I enjoyed the skirt steak but it was too sweet to enjoy the whole thing. Cooking it in the oven for another minute made it even sweeter. It tasted like over sweetened Korean galbi in steak form. I'd say the portobello fries was my favorite dish and decided to take the rest to go to pick at in the hotel. After dinner we were given the dessert menu which didn't really call out to me, but since we told the server it was our anniversary, they gave us complimentary sorbet which was very nice. I liked the sorbet quite a lot but I was pretty full so didn't get to enjoy much of it. The gesture was kind though. At the end, the steak tartare was not taken off our receipt so we had to ask for that to be taken off since the manager told us she'd do that. The server gladly obliged. I want to say, that there was a female employee - maybe a busser, who worked really hard to be attentive with our waters and clearing our plates. I wish I got her name! I believe she was Latina with a ponytail if that helps at all working Saturday evening of Labor Day weekend at 6PM. All in all, the experience was not as great as my husband's first time at the Henderson location - he said the cuts were so much bigger before and the ambience of the Henderson location was more fine dining-esque. But the economy is tough lately so I figured the quality could've easily gone down. Because the price points were very reasonable, I thought it was up to par with what we paid. Probably won't go back unfortunately but it was great to try it out. The plaza it is in is called Trivoli(?) and I thought it was a cute spot with a lot of shops. Although everything was closed by 8, we walked around to digest a little and enjoyed the evening.

It almost feels like you're walking up to a red carpet moment before dinner, very Vegas, very dramatic in the best way. We came to Don's Prime at the Fontainebleau on August 1st. Once you immediately enter, the hostess desk is right there, and to the right is the bar and waiting area. The lighting is perfect... not too dark, not too bright, just that moody, elegant glow where you can still read the menu without squinting. We sat in a booth, which added to the cozy‑lux vibe. Don's Prime features Pat LaFrieda's most selective top tier USDA Prime cuts sourced from the highest‑percentage cattle -- and you can absolutely taste the quality. The menu is easy to read and not overwhelming, which I appreciate. The whole vibe was classy, elegant, and the service was impeccable from start to finish. My boyfriend's mother ordered the classic Caesar salad, and her go‑to entrée was the filet mignon with her choice of sauce -- soy sauce. Simple, clean, and she loved it. My boyfriend and I shared the dry‑aged bone‑in ribeye, 26 oz of pure heaven. For sides, we went all in: creamed corn, macaroni and cheese, sautéed spinach, and scallops. Everything was delicious and came out beautifully plated. For my red wine, I ordered the Châteauneuf‑du‑Pape from Rhône Valley, France -- loved it. Smooth, rich, and paired perfectly with the steak. And I noticed their steak knives are labeled with the restaurant's name... such a thoughtful, bougie little detail that I absolutely appreciate. One of the best steakhouses I've been to. Don's Prime was such an amazing experience. This is easily one of the best steakhouses I've had, and I genuinely think it's worth the price you're paying. We tried the bone marrow, which was absolutely delicious, as well as the seafood platter, which was a great addition to the meal. But the real star for me was the tomahawk steak. It was so juicy, incredibly high quality, and cooked perfectly. Every bite was delicious, and you could really tell that they use quality ingredients. The sides were also really good and paired perfectly with the steak. Everything we ordered was flavorful and well-prepared, and there wasn't anything that disappointed me. The staff was also really nice and welcoming. We did a family-style dinner, which made the whole experience feel really fun and special. Everyone was friendly and accommodating throughout the meal. From the moment we arrived, the energy and atmosphere made the evening feel special. The food was absolutely outstanding. The lobster mac & cheese, ahi tartare, filet mignon, and Wagyu bites were all phenomenal. Honestly, everything we ordered was delicious and beautifully prepared. Every dish lived up to the hype. The ambiance is one of the best parts of the experience. You can enjoy a more casual vibe at the bar or grab a table and soak in the lively atmosphere around you. The restaurant was packed, and it was clear everyone was having a great time. One thing that really stood out was the staff. They genuinely seemed to get along, and you could see the respect they have for one another. Love seeing positive teamwork! A special shoutout to GMs Cammi and John, who were incredibly warm and welcoming. I can't say enough about the service. Joe is one of the nicest most welcoming person Kami is amazing attentive mark Mike and everybody else is just amazing. They really know how to treat a human being when they come to eat. Whether I'm with a group or alone I love coming here the Ambiance is very very nice. I enjoyed just being there. I can't say enough good things about the service and how welcome I feel. The mashed potatoes are by far the best I've ever had and I'm a fat guy who knows food. The whipped potatoes are a must try it's a 9.1 on anyone's scale who knows food. It's so silky and buttery and literally it is delicious. I'll add some photos to prove it. The mushrooms are always always good. I recommend the snake Farms New York it's soft and buttery and busting with flavor. I never even order New York but I do hear because it's that good. I've had the lamb chops I think they're great as well. I've been there three or four times in the last month and I keep coming back for the service the ambience and the food. We had an amazing anniversary dinner at Don's Prime. From the moment we arrived, the service was exceptional. The hostesses and our servers were incredibly friendly, attentive, and made us feel genuinely welcomed throughout the evening. I appreciate the fact that they didn't make a fuss about our lack of reservations. Our server was pleasant, however, she could benefit from more training and experience as there were moments where our water glasses were empty and getting utensils and plates took longer than expected, though it didn't greatly impact our dining experience. We thoroughly enjoyed the wedge salad we ordered; it had flavorful bacon chunks and delicious dressing and was a generous serving size. The half roasted chicken was also good, though it was slightly on the salty side. If you're a meat lover, you must go to Don's Prime located within the Fontainebleau. The Dry Aged Bone-In Rib Eye Oscar style with king crab and caviar was the best dry aged steak I've ever had. Slightly beating out Joe's Seafood at Caesars Forums. Their mash was amazing like a puree with butter and beef fat, and their shrimp cocktail was amazing. They use beef bullion to give it an umami flavor along with an amazing cocktail and radish sauce. The free bread was also extraordinary. 10 out of 10. With high-toned decor, engaging music on the sound system, muted (but carefully designed and focused) lighting, and a smiling staff, the restaurant is more approachable than many Vegas eateries at the same price point. I was dining solo, and had made a reservation, but requested to sit at the bar, which I always find more enjoyable when eating alone. I was quickly welcomed by Julie, a charming and genuinely friendly bartender who stirred up a well-balanced and very tasty gin martini, served in a chilled, delicate glass with a lovely etched pattern. That glass is a seemingly minor detail, but is one of the many carefully considered choices made by the owners that subtly elevate the experience above even the stalwart steakhouses that serve good food in nice environments but may be resting a bit too much on laurels earned long ago. Like the decor, the menu here is also enjoyably tweaked, so that you feel like you do have options a bit different from the norm. Caviar Poppers were a perfect starter to go with my martini: 4 freshly puffed gougéres filled with a lemony crème fresh and topped with a dollop of mild, black caviar. Meant to be eaten whole, in one "pop," the cool, citrusy crème blends perfectly with the slight saltiness of the caviar, creating a flavor jolt that really gives you a moment of foodie pleasure. There were many very interesting starters available, and I look forward to returning with friends so I can try some of them as well. But, as a solo, I needed to move on to my main: My entree was a 9oz Australian Wagyu Rib Cap. Pleasingly charred on the outside and topped with an equally-charred pepper with an appreciable hit of heat, the well-marbled and boldly-flavored meat was cooked to an exact medium rare. This is very high quality beef, quite properly prepared, and full of flavor. It's not inexpensive ($96 means you're at a bit over $160/pound), but if you're going to splurge, this is an indulgence you won't regret. My side was the Pommes Purée, rich and buttery and comforting, they paired wonderfully with the rib cap, especially when topped with a touch of chimichurri sauce. This was very good eating, and I really appreciate the marvelously attentive service I received throughout the meal (bar-back Chloe was Julie's 2nd hand, and she expertly kept tabs on the action, so she was able to step in seamlessly when Julie was tending to another diner). And so, I am thrilled to have found a steakhouse I can return to and enjoy that's a bit different from the norm -- though one could say that what Carversteak is doing is actually creating a new norm, and I'm all for it!
