The other night, though, we finally convinced her to give Wadaya a shot, and we're so glad we did. We had never tried their mazemen before, and it ended up being one of the highlights of the meal. My wife and daughter split the Deluxe and the Tokyo mazemen, and both were outstanding. The noodles had an incredible chew, and the flavors were rich, layered, and deeply satisfying. I played it safe with the Spicy Miso Ramen, and it was every bit as delicious. Of course, greed got the best of us, so we also ordered a lineup of appetizers: takowasa, karaage, shishito peppers, and the pumpkin croquette. Every dish was a winner. What made the evening even better was the staff. They were warm, playful, and genuinely attentive without ever being overbearing, checking in just enough to make sure we were enjoying everything (and yes, we were more than okay). We couldn't finish it all, so we brought the leftovers home. To our surprise, everything stood up well the next day We moved from San Francisco to Fremont about 10 years ago, and we've had our share of great ramen back in the City. It was very flavorful and rich, which was good at the start, but eventually it got too much to finish. I am not used to adding umami vinegar halfway through/towards the end and I felt it made the dish not as good, so I'm glad I didn't add a lot of it. The portion size was great and most definitely can be shared if you aren't too hungry and want to also eat appetizers too. I would try another dish again in person.
