We ordered the Mala beef shank dry noodle, Spicy Stir fried Green Beans, and Chili Oil Spill Dumplings. The Mala Beef Shank Fry Noodles were ordered at 3 star spice, not too spicy just right for my partner and I. It was so saucy and savory. I love how the sauce poured over the flat noodles. This was my second time having them here. The Spicy Stir Fried Green Beans were fried in Sichuan peppers making it a bit spicy with the numbing feeling. That crunch was amazing with them! The Chili Oil Spill Dumplings were also very yummy and juicy. It pairs well with the other dishes. 3 dishes for two is the perfect amount to fill you up here! I had their beef rib noodle soup with the wide noodles. It was surprisingly full of bold flavors! The noodles had a good bounce or chew to them. It had lots of meat! It was so tender; the meat just fell right off the bone. Their side dishes were okay....we got the tofu, green beans, and the xiao long baos. All fine, the green beans were seasoned well and the XLBs had a good amount of soup in them and the flavor was okay. All in all, great experience. I do wish they had hot tea available. Fang's has been one of my go to spots for hand pulled noodles! I've known about this local restaurant before they blew up on social media! Been going here since 2021 and the food hasn't changed. The restaurant looks more modern now. They have QR codes for you to look at the menu, place your order and checkout online. The restaurant isn't big, probably 5-8 booths and 2 long tables. Prior to the social media blowup, they had all of their food items on the menu and were never out of anything. Now, if you show up late, most of the popular items are out of stock. Some of my favorite dishes is the Mala spicy beef dry mix with the hand pull flat noodles! So flavorful and you can choose how spicy you want it. We loved their chewy noodles but too much salt contained in the noodles and sauce is little sweet compared other Xian noodles restaurants. Smelled like they already cooked yesterday and kept it in the fridge and added when we ordered. And flavor is very strange when I took bite. But the filling was kinda dry and not flavorful For the biang biang noodles, I got 1 star spice which was perfect amount of spice for me. But it was a bit too spicy and not enough acidity. I asked for some vinegar and the worker came back with a dish of soy sauce :c noodles themselves were good though. Pork is fine, not amazing. There is booth and standard table options. We ordered 3 different dishes. Our personal favorite was the dry noodle with beef. It was flavorful and the noodles were cooked perfectly. They know their spice for sure, as we got 2/5 and I personally got spiced out after a couple bites in, but it was still spectacular and I know for next time to order it at a lower spice level. The Mala spicy mix noodles with the beef rib is what I consider one of the best items you can get for under $25 in this entire state. I visited Fang's back in April 2024 when they first opened and I can proudly say after returning approximately one year later, the quality, price, and taste all stayed consistent or improved. Added an extra noodle because we were sharing. Definitely worth it! The hand pulled noodles are sooooo good. (We aren't big eaters, if you have a good appetite definitely enjoy a few more dishes than we did!) The pork noodles are the most ridiculous noodles I have ever eaten, in a really good way. Our order had four noodles, and they filled the bowl. Wide like lasagna noodles, but so very long and chewy. Absolutely delicious. We added extra cabbage to the dish, and I definitely recommend that. Our order was "2 star spicy" and was a really good level. Spicy enough to keep us sniffling, not so spicy we weren't picking through the bowl to make sure there wasn't any more stray bits of cabbage or pork hiding in the sauce. The beef gyoza had really thin wrappers, probably the thinnest I have seen. They had great flavor from the griddle (wok?) and $6 for 6 gyoza seems like a steal compared to other places. The filling was soft enough I gave it a second look to make sure it was cooked! Yep, it's just really tender. The red bean rice balls were excellent of course, they were freshly fried and had a good amount of filling and a crisp exterior. The menu is online, you scan the QR code at the table and order on their website, but there was a server patrolling the aisles to make sure everyone had water, etc. As a person with food allergies, I appreciated that individual dishes were marked with major allergens.
