I was looking forward to being the first to review Henbit -- the new "popup" burger joint at The Pearl's food hall -- not because I craved a smattering of insincere "Congrats on your FTR!" "compliments" from strangers but because I was duly impressed and wanted my review to take the interwebs by storm. Unfortunately, I see that a fellow named John E. has beaten me to the punch. *Fortunately*, however, Mr. E.'s review focuses on Henbit's vegan "chicken" sandwich*, so I shall still be the first to regale Yelp with my fresh (and totally accurate) assessment of the main event, the outstanding Henbit burger! The skeletal menu describes the Henbit burger as follows: two patties of Peeler Farms beef, milk bun, American cheese, shitake aioli, sour pickles, tomato, onions, and red romaine. What the menu doesn't divulge is that the patties are smashed, which often translates to "hard and bereft of all juiciness." If you read my review of Tin Top Burger Co. in New Braunfels (the owner sure did...and he didn't like it one bit!), then you know how I feel about the trendy smash burger concept. In many cases, the patties are about as texturally appealing and juicy as a bulldozed hockey puck. In very rare instances, however, a burger joint works its alchemy to produce a smashed patty that's crisp and desiccated around the edges yet juicy in the middle. Such was the case at Henbit! Of course, a burger is more than just the meat. The other constituent parts -- nothing superfluous -- must coalesce, mingle, and meld into something special. I'm pleased to report, Dear Reader, that the Henbit burger -- in all its constituent parts -- was indeed nothing short of spectacular. At first, I was concerned that the bun might be too weak to withstand the juices from the meat and veggies, but it held up from beginning to end. The shitake aioli might sound like a gimmick, but it added a bold umami flavor reminiscent of *real* black truffles. The tomato and pickles cut through the richness with sweetness and acidity, respectively, while the onions and romaine added crunch. If you took a gander at my photo (which *should* be the featured one on Yelp), then you probably noticed that it includes not two but three patties. That's because I added a third for $3.50 extra. Each patty weighs only three ounces, so nine ounces of beef doesn't sound too extravagant...unless you're some kind of a wuss. I'm not sure how long Henbit will remain in The Pearl's food hall, but it strikes me as a semi-permanent fixture. Perhaps the owners are advertising it as a limited-time offering simply to drum up business. I can only speculate. What I *can* tell you is that my burger ranked among the top five in the city...and that's saying something coming from me. I go out a lot, I eat lots of burgers, and I'm super duper smart. I know of what I speak, folks, so trust me when I say that Henbit is an excellent addition to The Pearl and one of the best places for a burger in San Antonio. *Ordering a vegan "chicken" sandwich from a burger joint is like ordering water at a saloon in the Wild West...or using a slingshot in the showdown that ensues when the other patrons disapprove of your beverage of choice. read more

Seating is communal long tables in a noisy environment but we found a seat at noon on a busy Saturday before our food was ready. Very good burger with peeler wagyu, had the henbit burger without cheese, the sweet potatoes, & a monster cookie. The burger is cravable enough to drive 30 mins for, the beef was very succulent. The sweet potatoes tasted like a 2nd order to go, they had a spicy flavor & the texture was so crispy outside & smooth inside. I want a monster cookie now, actually I want three- it was so thick but so soft at the same time. Pretty solid spot, highly recommend. I tried Henbit following someone's enthusiastic recommendation. First time visit I tried their basic smash burger, which I'd rate as "very good", but not "great". However when out-of-town visitors who like a burger place like Henbit came, they chose to go there and we each order burgers above the basic one which I have to say were "great". They were worth the extra expense, and we all agreed that they were very tasty and satisfying. Service is OK, however. They clearly try hard to please, but both times there was a small matter of confusion or a hiccup in the order. Although the wait times are long - because the line to order can be long, and because they cook on order, it is worth it. The long line is more a testimony to their popularity, and the cook time means what you are getting is freshly cooked. Besides, it is in a sizable indoor food court, and in direct proximity to a large outdoor plaza with tables, and they use your phone number/text messaging to notify you that your order is ready. If you like a great smash burger at a reasonable price, I recommend Henbit. read more

I ate here because of the two five star reviews. Disappointed. The burger had the fat taste, but lacked the meat aroma. The bun was fine and the garlic fries were crisp and tasty. The kale salad was not up to most places. The salad and dressing were meager with tiny bits of avocado and seeds, etc. The website price for the salad is $6; the posted and charged price was $11. Great vegan options at the Pearl! The kale salad was full portioned and the crispy quinoa, avocado dressing, currants, and pumpkin seeds made it a healthy option. The vegan chicken sandwich was deliciously coated and fried to a delicate crunch. The sweet potato fries are exceptional since they were cubed and lightly coated so they came out light, not greasy. The cooks and servers were professionals and not the run of the mill hourly employees seen at fast food places. It is associated with the Ladino restaurant at the Pearl and the food reflects it. The burgers are really good and pretty much the best tasting smash burger I've ever had. It wasn't dry at all, but very juicy and flavorful. The fries are a little dry, and I don't really care for the rosemary on them. Those are the only 2 things I've tried but would definitely be going back for the burger. The staff is friendly. The place is clean, but you might have a hard time finding a table if you go on Saturday or Sunday. read more

We're from Temple and don't get down to SA very often but we tried Henbit the last time we went to the Farmer's Market at Pearl and my wife and I both agreed it was the best burger we've ever had.
