A host regaled a guest with tales of his Ecuadorian wife cheering on her home team all the harder as she'd not made it to the last World Cup games to show support. The same guest told an incomer it was a waitress' birthday, and hugs and well wishes were shared. A gaggle of Brazilians cheered to have found one another and gently teased each other among other Spanish speakers. Another guest sat to my left and started banter with the staff after a jovial exclaim that the right game was on tv. This is 3rd space, one that is entrenched in community. We are over the moon that it's Philippe Orrico and his team! The interior is very simply decorated, classy, no fuss. Our waiter, Nelson, was not only incredibly professional and knowledgeable but also very warm and simply fun to interact with. We started with two French 75s which there were able to make for us even if they were off the menu. The food was the most impressive part of the whole experience and it shows that the Chef has received Michelin stars in the past. The technique was impeccable. We tried: - Fennel salad: I never knew fennel could taste so good! Super refreshing dish. It had the perfect crunch from the fresh produce with a tangy vinaigrette and the sweet burst of flavor from the tomatoes. The aromatics were subtle, and did not overpower any other element of the dish. I appreciated how the flavor of the vegetables still shone through. Citrusy, tangy, punchy, bright--- the perfect summer app. - Salmon tartare: literally amazing. Finely diced salmon over a bed of avocado. The salmon was so flavorful, fatty, and just dissolved in the mouth. This came with some crispy ?wonton skins (at least that's how I can best describe them) but they had a mildly sweet aftertaste which balanced out the citrus and umami elements of the tartare. Good to share between 2. - Risotto: this was amazing. The risotto was cooked perfectly al dente and came in this creamy sauce with mascarpone and umami hints from bacon bits. It was absolutely divine. The escargot on top added the perfect buttery and earthy complement. I've never been much of an escargot fan but they worked very well in this dish and I would order again, no question. - Sole: we ordered the half portion which was perfect when sharing two mains. The fillet was flaky, tender, and came with a side of capers in butter that may be one of the most decadent combinations I've ever had. The punch of the capers, with the creamy sweetness and fats from the butter really were divine. The mashed potatoes that came with this were also amazing-- perfectly smooth and creamy. - Steak frites: this was stellar. I've had some other steak frites in the city but what I appreciated most about this was how light it felt and how the technique and quality of ingredients really shone through. The steak was cooked impeccably, was so tender we could basically cut it with a fork alone, and came with a peppercorn sauce that had a lot of depth but felt somewhat light and bright at the same time. The fries were crispy wand actually were properly salted relative to the steak. I will certainly get this next time I come. 10/10. - Trio of cremes brûlées: I'm usually a chocolate mousse girl but thought this looked special-- I certainly have no regrets. The Chef prepares 3 small cremes brûlées of different flavors and recommended that you eat them in a certain order. The vanilla was creamy, with a beautiful flavor and mild undertones of the egg that reminded me of the quintessential "French vanilla", the caramelized top was crispy, delicate, and perfect-- probably the best crème brûlée I've had in my life. The next was an orange saffron which had a similarly perfect consistency but a lovely orange flavor with the honey/earthy flavors of saffron. We got a bit of orange zest in there which was beautiful. Very well balanced! The last was a pistachio creme brulee which was a bit denser, richly flavored of pistachios with almond extract, with an equally delicate caramelized top. It was unreal. All were so unique and it was fun to see a range of the dessert outside of the ordinary. We had a really memorable dinner here. Overall, Le Sixth is a truly wonderful addition to the West Village scene. They execute the traditional impeccably, with high quality ingredients, strong culinary techniques, and well-balanced, enjoyable flavors. While there are some more inventive dishes on the menu, I think their strengths lie in how well they do the classics. The location is perfect for a fun night out in New York City, the service is also top notch. I am excited to see where the business goes. Highly recommend you give them a visit! When such flexibility is allowed, it tends to be 3x the price and accompanied by a star of the tire-made variety, meaning you're no longer in casual bistro territory. And sometimes I don't want to pay $100 for a duck canard just because the chef added a dash of yuzu to it. So I'll give Chef Philippe Orrico credit for offering a menu of bistro classics with a twist while not charging astronomically high prices. We were a party of three and walked away well-satiated without needing to draw from next month's paycheck. - Beef tartare / quail egg / melba toast / gem / cesar: Got the smaller portion at $26 and it was more than enough for two rounds per person. The tartare had great seasoning and was the perfect texture. - Foie Gras Creme Brulee: Temporarily off their dining menu but soon to be reinstated, this is what blowtorches and broilers were made for (if you can look past the moral ambiguity of foie gras). Rich, creamy and surprisingly not too decadent--with just a touch of sweetness--this is creative bistro fare that succeeds. - Risotto with snail, bacon, mascarpone, parmigiano: What a lovely twist on classic escargots. The risotto was perfectly made and smokier than a 10-year aged islay, the snails were delightfully chewy, and the creamy mascarpone was everything a dairy sauce should be. - Sole / mashed potato / grenobloise / croutons / brown butter: Perfectly pan-fried, though the mashed potatoes had almost too much butter even for me. - Steak frites / grilled gem / sauce Champs-Elysee: At first glance, it might be easy to judge this book by its unassuming cover, but the jus is made with a secret ingredient that really sets it apart from other steak frites. Have fun guessing what. We were fortunate to meet Chef Orrico and have a fun post-dinner chat with him where he shared some honest trials 'n' tribulations of how he got to this point. It's always interesting hearing BTS restaurant stories--aside from pure nepotism, there really is no easy path, huh? And even at the end, I had to get up to ask for our check and to pay for it too, we barely received any service at all. And especially, I don't think we received service warranting a 20% tip but that amount was forced on us, which is all good however, I wanted to raise these concerns-just because a good tip is guaranteed, doesn't mean we can be totally ignored! . The host showed up once to ask how we were doing but he appeared after I had already gotten up twice to talk to our waiter. This is unfortunate as I was ready to recommend this place to others. Although the food was good, we had to work to get any service. I don't blame the waiter - he worked really hard, management is at fault for not having proper staffing or training to indeed provide service worth a 20% tip.
