Looking for an amazing Japanese Sushi restaurant in downtown Fort Worth, this is the place The service was amazing, our waiter took care of us and of course we asked for all his recommendations which of course we had to try a few The sake menu was very extensive, and worth exploring. There were so many things we ordered, and nothing disappointed. From the sushi, to the rolls, to the dumplings and the main dishes.. everything was delicious Amazing atmosphere, and so cool they turned the old bank vault into a meeting room and special events venue I definitely will be going back again.

Originally, we went for the restaurant week menu, but because it was a set menu or a la cart from the regular menu, we opted to a la cart it. The ambiance is good, the service is good, and the food is good. The sauce pairings had to be the best part of the meals. For each item we ordered, I would hands down order again other than the udon wagyu bolognese, which was a bit subpar with the flavors. Our plan is to come back to dine in the safe with friends. I can't wait to get the Morgan roll again.

We heard about Musume Dallas location, but never had the chance to stop by. Lo and behold, they are now in Fort Worth! It was the perfect place to celebrate a special occasion. Let's talk location first. They do not have a private parking lot. We couldn't find street parking, so ended up parking at the convention center. Musume is located in the Sandman Signature Hotel. Apparently, it used to be the Continental National Bank; some of the structures still hold. The dining experience is on the lower vault level. You'll find a rowdy lobby bar area and a more secluded dining area. Now the best part - food! Breaking down the menu, it is recommended to get the cold food first followed by the hot food. Ideally, the food would be brought out in the following order: sushi/sashimi, small plates, and then big plates. The order of the food could have been better since that was what they were aiming for, but we didn't mind the mix up. For example, we got our small plate Musume steamed buns last. The grilled lamb lollipops was out before the oyster trio. Nevertheless, the food was delicious. * Friday night roll: A well-made roll with yummy dynamite sauce. You can't go wrong with baked smoked salmon. I would say your typical sushi roll with a higher dollar sign. * Oyster trio: Oyster came out fresh and tasty. They had three different sauces that elevated the dish well. A must for the oyster lovers. *Musume steamed buns: You have four different proteins to choose from. We went with the five spice duck confit. Our server actually shredded the duck for us. A nice dish with the addition of cucumbers, scallions, and carrots. * Black cod: This was one of my favorite dishes. You can definitely tell the cod was marinated in miso for 3 days. * Wagyu hot rock: I love the presentation of this. It was a little extra, but oh so cute. The Wagyu was neatly placed on a leaf. There were rocks surrounding the entire dish. Here's an unexpected twist to the experience. Our server demonstrated how to cook the Wagyu on the hot sizzling plate, but it was not cooking/sizzling hot, and served me a piece of raw meat. I'm glad he quickly realized that the dish was not ready to be eaten, and took it back to the kitchen. * Grilled lamb lollipop: This dish tops the black cod dish. The meat was so tender, savory, and juicy; it just slides right off. The shoyu gari sauce was memorable in a good way. Overall, there are still some kinks in the service, which is totally understandable. The food makes up for it. We really appreciate part-owner Sean coming out to meet us. I plan to try the tableside ramen the next time I'm there.

The food was good. The sushi roll was on point. The buns were good but the chicken was dry. We also ordered fried rice but did not get it due to a mix up.

Fort Worth needed this!!! Food, ambiance and service were amazing. The menu is also extensive so there's something for everyone. Definitely recommended 10/10. Can't wait to come back.

Good fish. Rice needs work Ambiance: It's in a former bank's vault operations area. The kitchen appears to be in the safe deposit area and the tatami room is in the vault. It's dark, cool, and music is your typical Buddha Bar lounge soundtrack. I like it. Service: Considering the restaurant is only a few months old, the service was great. My waitress was attentive and did well to give me a rundown of the menu and items she found enjoyable. Food: Let's start with the Musume Steamed Buns. I chose the duck confit as my protein. With the buns and sliced vegetables, it's reminiscent of Peking duck. The buns were light and sweet. Unfortunately, the duck meat, although moist and perfectly cooked, didn't go past a "I cooked duck for meal prep" feeling. Tasty but nothing special. I don't believe I'll reorder it. Next a specialty sashimi dish. Yuzo's Yuzu Tuna. Essentially this was seared tuna with some ponzu sauce presented in little spoons. If you've had seared tuna with ponzu, this will not surprise you. Overall, it was delicious and fresh. However, it was either over-seared or allowed to sit too long as the fish was a little rubbery. Additionally, it could have used a little more flavor. I might reorder it and ask for less sear. Let's get to the real reason for visiting a sushi restaurant: the sushi. As a surprise, I received some sake (salmon) compliments of the chef. My main selection was hamachi (yellowtail), maguro (yellowfin tuna), and ama ebi (sweet shrimp). In regards to taste and freshness, all of the fish pieces were perfect. The disappointment was the rice. It was slightly overcooked and then packed extremely tight. Sushi rice is a key component in nigiri. If done improperly, the balance of the dish is completely destroyed. I'm hoping this was a one off event. I'll return because the fish was better than most and there are a few more dishes I want to try.

New addition to downtown fort worth. We decided to come during restaurant week to check them out. This is on the lower level of the sandman hotel. It gave a modern/lively vibe. In terms of sushi quality, you can definitely tell that the fish is prepared well and shipped in fresh. The service was exceptional - thanks to Tad and Andy for an exceptional experience for our first time to musume, will definitely come back again.

We enjoyed our meal! We did the Omakase. It felt like it went quicker than others we've done but overall it was good. The ambience is really great. The prices on the menu were different than what was listed on the website. And service was great and attentive.

Ambiance, music, and food were amazing! It's fairly new so I do think the food took some time to come but other than that everything was great. Tiffany was awesome.

My husband and I had a great time here for his birthday! The food was great! I kept saying how good it smelled in there. Our waitress was very knowledgeable and they even had a special celebration for his birthday. Hubby had scallops and I had a veggie fried rice. We enjoyed everything we were served. Ohhh and the drinks! The Japanese whisky was top tier! We will definitely be back!

    Tawaine H.

The food, drinks & service were great! While I was there I tried the Citrus Seared Scallops. The Scallops were pretty much perfect. The chef sent out a complimentary order of Shishito peppers as well I recommend you request a booth in your reservation if you want a bit more room. The seating can be tight.

Everything we ate was amazing. The table side ramen was awesome. Oysters Trio is a must. The craft Sashimis with all the sauces were all tasty and very fresh. Would definitely return.

We walked into a space centered around sitting at the bar and watching the chefs prepare each hand roll in front of us, which gave the meal a more personal feel compared to a traditional sushi restaurant. The setup is smaller and more intimate, making the experience feel closer to a sushi bar rather than a casual meal spot. The biggest highlight is the quality of the fish and the hand rolls themselves. The seafood tastes fresh, clean, and carefully prepared, with options like salmon belly, otoro, kanpachi, and crab hand rolls standing out. We ordered a few different rolls and found each one well executed, with the fish having a clean, bright flavor that did not rely on heavy sauces or toppings. Each roll is made individually, so the nori stays crisp and the textures come through better than pre-made sushi. The menu has a good balance of classic choices and more creative combinations, making it easy to try different flavors throughout the meal. The chef interaction adds another layer to the visit. Since everything is prepared right in front of you, we could see the attention put into each piece, from assembling the ingredients to serving it at the right moment. The chefs were precise in their movements and took the time to explain the different fish and flavor profiles, which made the meal feel more like an experience rather than just ordering sushi off a menu. One thing to plan for is the wait. Hatsuyuki does not take reservations, and the popularity means there can be a significant line during busy hours. We arrived earlier and found it helped us avoid a longer wait. Seating is limited, but that also helps maintain the quality and atmosphere of the restaurant. The intimate size of the bar means the service stays focused and the pacing remains personal, even when the restaurant is full. Hatsuyuki Handroll Bar is one of the stronger sushi experiences in the area for anyone who enjoys fresh seafood and a more curated dining style. The wait can be a downside, but the quality of the fish, chef preparation, and overall atmosphere make it worth visiting, especially if you are looking for something beyond standard sushi rolls. The focus on craftsmanship and the personal interaction with the chefs elevate the meal into something more memorable than a typical sushi stop.
