We had to ask the waitress to customize our noodles because it wasn't available in scanning menu. The beef shank spicy was decent. Standard fare. The spicy chicken is ultra good. Spicy, light crisp, onion flavor is good. A little on saltier side but I liked it like that. The noodles qq is very good. We got extra noods and it filled us both, we couldn't finish. I was excited to come here because I had fond memories of the one that was in Newark. I would always be satisfied getting the spicy beef noodle soup. Their staff was great so it pains me to say, this visit was more than disappointing. I ordered, Spicy beef noodle soup - 1/5 stars Watered down soup would be an understatement. It taste like hot water and a dollop of chilly oil. The beef was okay but this soup required a lot of effort to salvage. 2 table spoons of soy sauce, a teaspoon of salt, and 2 table spoons of chilli oil and I still didn't want to finish it. Order this if you have high blood pressure. Wontons - 2.5/5 Honestly same story here but it doesn't rely on soup. Easier to salvage with soy sauce and chili oil Potstickers- 3/5 Again, same as wontons but they're fried with cornstarch so a slight bump. Special oil beef noodle - 4/5 Honestly this is probably the best item on their menu. It's the dry style version with wide noodles. This was season nicely and saved the whole experience for us. Hand pulled noodles for the win!! The noodles were so bouncy and this felt like such a comforting dish. Super homey and felt like we were family! Things I ordered: Big plate lamb noodles: the noodles were this super wide and flat noodle. The sauce was tangy spicy and there were potatoes, green bell peppers and onions all throughout. All three of these dishes were genuinely amazing--the flavor, chew of the noodles, and the meat to noodle ratio was perfect! Very much a mom and pop shop! The lamb noodles were ratioed perfectly with the lamb being tender and extremely flavorful. The chili noodles were my favorite! The meat was super tender as well and flavorful--I don't think it was spicy, so I loved adding extra chili oil on top. I do wish there was more bop choy, but that's just a personal preference. First time here. Didn't know there is a hand pulled noodle restaurant in this area. Some of the best hand pulled noodle I have ever had, had closed during pandemic. Glad to see more coming back now. We ordered tomato egg noodle, chili oil noodle and cucumber salad. The cucumber salad is garlicky and very sour (heavier vinegar based) than what you usually get from most other restaurants. Apparently it's the northwest China "xinjiang" style. According to the owner, the intent is for the first bite to immediately taste of the sourness before it hit sweetness and crunchiness. He also said to request for less vinegar next time. The noodles were fantastic! We tried both the wide and round version and they both had the elasticity I expect from a good hand pulled noodle. I particularly enjoy the round noodle. Don't think I have ever tasted one as chewy and smooth as the round noodle they have here. Now moving on to the sauce, for the tomato egg I felt the sauce was a little too watery for my liking. I prefer the thicker gravy texture you get from some restaurants (Din Ding). My husband prefers wide noodles and I would highly recommend requesting the wide noodles if you love the chewy bouncier noodle. The spice wasn't too crazy but you can definitely add more chili oil from your table condiments. This was my husband's favorite dish and he actually said it would probably be even better with pork rather than subbing for beef! It was a hot day so we got two bowls of dry noodles: sour and spicy noodle with pork, and tomato noodle with lamb. The tomato lamb noodle came with a lot of sauce that almost looked like a noodle soup. The lamb had a very strong lamb taste, so I'd not recommend for anyone who doesn't like lamb.
