After trying close to every noodle place, OK Noodle does have the chewiest noodles you can find in the south bay. Shandong still wins overall in the bay area but that's a different kind of affair. Here you can get hot chili oil noodles that are covered in spiced diced meat. If you dine in they also provide white pepper, black vinegar, and extra hot chili oil to customize your bowl even further. I thoroughly enjoyed the noodles but do wish there was more mala spice overall. Also ordered a plate of spicy chicken and although it was tender, it was a bit annoying to eat because of the tiny hidden bones in it. Have been supporting this business ever since COVID in 2020 and cannot be more ashamed than I am right now. Owner adds more tip to the total when you are finish tipping and I have finally have proof. Another review also mentioned that the owner increased the tip right in front of them. I remember topping $3.48 to round it up to an even $80 and what I suspect that happened was he filled in the 3 to make it look like an 8, therefore charging me $85 in total. Contrary to the name, OK Noodle is definitely more than just OK - specializing in Xian cuisine, they have all the classics here including hand pulled noodles and my personal favorite: liang pi. Don't sleep on their lamb ribs either - these are perfectly tender and not too gamey! I like how bouncy their liangpi are and they make sure not to drown it in sesame sauce. The absolute most delicious chili oil noodles ever - trust me. I was so upset when OK Noodle closed in Fremont, but was ecstatic to find out that they reopened in Milpitas! Although a much further drive from home, OK Noodle's chili oil noodles are absolutely worth it. The noodles are hand pulled (I believe) and are always perfectly cooked, soft, but with a nice chew to it. The chili oil sauce coats the noodles really well and the addition of the pork, which is packed with flavor, and the side of bok choy (for freshness) make this dish a 10/10 in my eyes. In terms of spiciness level, I would put it at a mild. While eating the noodles, there is the slightest bit of kick - nothing that can't be handled. The tomato and egg noodles used the same noodles as the chili oil noodles, but the noodles were soaked in a tomato and egg broth. The broth tasted like a freshly watered down tomato soup, which although doesn't sound too appetizing, was actually jam packed with flavor and left me wanting more. So many other place's beef noodle soups just feel like there's something missing to the broth, but this place is perfectly salty n beefy n brothy! Really delicious, but spicier/a different spice from QQ Noodle if you compared the two. The noodles were soft and slightly chewy.
