We've found our new go-to Mexican restaurant with Pancho's! The food is flavorful and what you'd expect with traditional choices. The portions are very generous and their chips and salsa is delicious. When walking into Pancho's I felt as though I stepped into an outdoor courtyard, with having a bright and vibrant atmosphere. The abundance of plants set the scene of a welcoming, calming, and fresh establishment. The employees are all friendly and helpful. Most importantly, Pancho's pride in the best ingredients is explained in their menu. I would recommend the artichoke mushroom quesadilla with chicken - my personal favorite. Really wanted to love this place since the interior is so gorgeous. Hacienda style interior with antiques and plants everywhere. We came on a night where there was a very large high school private party so maybe it was an off night. We all collectively agreed that the food was not it. Not authentic and not very tasty either. Perhaps it would've been ok at a lower price point, but for $20-40 for an entree, we expected more elevated and genuinely flavorful fare. The saving grace was their cocktails & chips. Cocktails were all pretty good and fun! They gave us about four bowls of chips and salsa, and probably would've kept refilling. Food: enchiladas suizas (no cheese, no sour cream), chile verde I was hoping that the enchiladas would be more like verdes, but it was just brushed and didn't have much sauce. It was a bit bland. Hubby liked the chile verde and would order it again. Maybe I would try something else next time. I love that they give free chips and salsa and they were super generous with it too (3 cups and two basket of chips for the 6 of us). Great happy hour in the cantina! We started with the complimentary chips & salsa, then had the Botanas Especiales, which is basically a sampler with chicken flautas, shredded beef taquitos, cheese quesadilla, fried chicken drumsticks; comes with sour cream and guacamole. We enjoyed the house margaritas, too, and our total bill including tip was under $50. We left with full bellies and leftovers. I came here expecting to enjoy my meal in peace, but this turned into a frustrating and unacceptable experience. I specifically ordered a shredded chicken chimichanga, and instead I was served pork. I do not eat pork, and by the time I realized the mistake, I had already eaten a few bites. What makes this worse is that I was still charged the full amount, as if nothing was wrong. That is completely unacceptable. When they finally brought the correct dish, it was still incomplete--there were no utensils, and it was missing guacamole and sour cream. I then had to wait nearly 10 minutes before another server came by to fix it. This is not the level of service I expected. Honestly, this is the kind of service you would never receive at a decent restaurant. The manager, Gustavo, handled the situation poorly and showed no accountability--based on this experience, he is clearly not fit for the role. He also didn't seem to care about customer feedback at all. I told him I would be leaving a poor review, and he told me to go ahead--which says everything about how little he cares about customers. read more

The restaurant itself is beautiful and the people working the host stand were friendly. Those are the only positive things I can say. Service is extremely slow, to the point of actually feeling intentionally ignored. Our server took our orders and we didn't see him again until we had to flag him down to ask for boxes and the check. No refills on water or soda the entire time we were sitting there. No one came to check on us at all after the food was dropped off. We had to tell the waiter we wanted the appetizers before the meal, after he told us he just put everything in together. That's not how appetizers and entrees work. The food finally comes out and it's so unbelievably bland. I don't know how they managed to make el pastor flavorless. Husband ordered the burrito Del Mar and found not one piece of crab in the entire thing. It was mostly beans and rice. The ambiance is vibrant, colorful with a loud energized cantina bar room contrasted with a vibrant relaxed atmosphere of the main dining area. The wine glass had measurement lines etched into it (I've never seen a wine glass with that feature). The chips were okay. The salsa with a bit too spicy hot. I asked about a milder salsa and the waitress brought us a mild salsa, which was basically the tomato base used for the salsa recipe. Using about a 1:1 ratio of the two made for a better option for me. The happy hour menu items were okay. None of the items were to our liking, so we ordered from the main menu. The ensalada de salmon presentation was very nice. Great sear on the salmon. It was good. I'm not a fan of raw onions so I removed them. Olives in this salad recipe seemed odd, but I like olives and ate them. Very good customer service. They were very busy, but the staff kept things moving at a good pace. They were attentive and personable. The women's restroom was an exciting visual experience of tile work that I can appreciate. It's a nice restaurant for the area. read more

We tried their Manhattan beach location when we used to live in MDR. And was our favorite spot to stop in between our beach bike ride! great memories! when I learned they had a location here in Las Vegas we had to give it a shot! Went out to dinner with my coworkers and we decided to go here! Have never been here before but my coworkers have. I will say if you com here be prepared to stay for 2 hours, it can take awhile for food and orders to be taken because it is soooo busy! It is nice though if you want to yap and talk in between however, it can get very loud so be prepared to talk very loud to hear your table. THE FOOD. So good. I honestly had no expectations when ordering. I ordered the sopas as I was not really that hungry after the chips and queso. It was so good. Just like homemade sopas. I was hyped to visit this place because there ain't to many Mexican restaurants in Vegas . The theme of the restaurant is nice and greet you right away . We sat down and ordered our food that's when it all went down hill . I had to ask multiple times for refills the food I ordered was shrimp within red sauce . I literally got 6 shrimp in canned sauce with some vegetables and rice . Who served vegetables with sauces shrimp?? . For $33 dollars I could. Not justify the price . My friend ordered carnitas and Lott was 4 small cubes of meat with some rice and beans . Our server hardly checked on us . Restaurant wasn't really busy . If i could leave a 10,000 zero stars i will do it, my wife and i we went yesterday to try this place, we saw it online, pictures and menu looked great. Once we were in there, we got nasty attitude by the staff, manager never say hi, bartender it looks she was so mad and tired for making pre made margaritas! This place is great for the ambiance. It is truly a beautifully designed restaurant. I arrived about a hour before they closed to an empty hostess stand but from there the experience was delightful. Our server was very friendly and checked in on us several times during our meal. They give you chips which need a tad bit of salt and salsa that definitely has a kick to it. In terms of the food, I got the sopas, which were well filled. The meat was well-seasoned and the sopas were nice and crispy. I look forward to returning to try their margs and dessert. read more

Our family loves to get dinner at Pancho's. They have a large menu so there's something for everyone. I like the traditional combo's, but sometimes I splurge and get shrimp fajitas. Pancho's in Summerlin on Lavender Hill Dr. One of many go to places in Summerlin Pkwy close to Red Rock Casino. This restaurant has plenty of seating and a seperate bar area with seating as well. We went during lunchtime around noon on Friday, wasn't very busy yet. We ordered 2 crunchy shredded beef tacos with rice and beans and also Trios Los Pancho's, which is Beef, Chicken and Cheese enchilada's with beans. We started off with the usual chips and salsa. The chips had the right consistency, not thick and not thin-in the middle. It came out to us like it was just made, crunchy-just perfect. The salsa had a good amount of heat, but not overly spicy. We cooled it off with their Guacamole, both of which had good flavors! The 2 crunchy tacos had a good amount of shredded beef, lettuce and cheese ratio. Although it looked good, I had 1 bite, it fell apart on me. It became a taco salad. The flavors were a bit bland to me also, It did not have any of the Mexican spices I was looking for. We come to Poncho's every now and then. This was the 1st time I actually didn't like what came out. I wish I could tell you about the 3 enchiladas, but the person who ordered it, who isn't a big enchilada fan and picky to boot, actually ordered it to my surprise, said He really liked it. Called ahead of time asked if there was a long wait or if I needed reservations. The lady who answered the phone said there was no wait or reservations needed. We come in 20 mins later, the hostesses now says there's a 30-45 min wait for a table of 5. 45 mins later, checked in again and said there wasn't a table ready. Waited over an hour for a table on Father's Day. The hostesses kept saying they were "waiting for more tables" when they finally brought us back for a table. There were empty tables EVERYWHERE. Time to update my review. Any changes? NO! It hasn't changed as I wish I could give 10 stars. My husband and I love, love, love this restaurant. It is a lovely restaurant in Downtown Summerlin. While we have tried various menu items throughout the years, we have yet to find anything that wasn't absolutely delicious. It's a million degrees in Las Vegas and I wasn't feeling a heavy meal so opted for a chicken Caesar salad. Who does that at a Mexican restaurant? Oh, my heck, it was the BEST Caesar salad I have ever had. The romaine lettuce was fresh, crisp and green! Many restaurants fill the salad with the white leaves but not Pancho's. Green lettuce that was not overly dressed and topped with a generous chicken breast. The pumpkins seeds are an excellent addition along with tortilla strips. It's my next go-to entree when I can't decide what I want. The portion was huge, enough for another meal. Hubby loves the pollo asado. The chicken is wonderfully spiced and comes with rice, beans, a cheese enchilada and the usual condiments of sour cream and avocado. Absolutely fantastic and again, enough for dinner. The restaurant is well-staffed, so drink refills are never an issue. A Sunday brunch menu is offered, too, but get there early or prepare of a wait.
