This is my go to coffee place right now. I love Vietnamese coffee, but I hate how jittery it makes me feel sometimes, which is why I enjoy phinology's house coffee. It's like a less strong vietnamese coffee which is perfect for me. I've never tried their vietnamese coffee base, but I imagine it's the same as the house coffee, but stronger. We've tried the ube foam coffee and the marble coffee. The marble coffee is a little on the sweeter side and the coffee is more mellow (not as strong) as the house coffee. The marble coffee base has a lot of condensed milk which is where the sweetness probably comes from. The ube foam coffee is delicious. The ube flavor in the foam is strong and mixes will with the house coffee base. I've also tried their double matcha and hated it. Their matcha is not strong at all, it felt like I was drinking milk with a sprinkle of matcha powder in it. Definitely do not recommend their matcha at all, but their coffee is bomb. I loved the color of the matcha because they use ceremonial grade. The cream on top is thick and difficult to sip on. I do wish the cream on top was more creamy and smooth. This spot replaced Chakaa. I went during soft opening, and they were doing a 20% discount. I had pretty high expectations for the matcha coming in because people on tiktok were saying they use paru matcha. I'm not sure if it's because I went during soft opening, but my double matcha tasted really milky :( The faint matcha flavor also tasted a little grainy. The cream top also wasn't that strong in matcha flavor at all. I did get 0% sugar, but not sure if that's the reason. I heard it got better though, so I am looking forward to trying it again! This was our first time trying Phinology Coffee, and it ended up being one of the best coffee stops from our San Diego visit. We found it through Yelp while looking for coffee and decided to take a chance based on the great reviews. We ordered the Banana Foam Coffee and Biscoff Foam Coffee, and both were excellent. The coffee was bold and strong but still smooth, creamy, and perfectly sweet. My daughter enjoyed hers so much she finished it almost immediately. The Banana Foam Coffee was especially good. The banana flavor was balanced and noticeable without tasting artificial or overpowering. I've tried banana coffee at other places, and this one is definitely one of the better versions. I also liked that you can choose between house coffee and Vietnamese coffee. My daughter and I went with the house coffee, while my husband chose the Vietnamese coffee for a stronger, bolder flavor. Both options worked really well with the foam drinks. Service was fast and friendly. The shop is cute but small, and it was very busy when we visited. Every seat was taken, and it can get loud with people constantly coming and going, so we took our drinks to go. They're located in a plaza with plenty of parking, although finding a spot may be harder during peak hours because there are several other popular restaurants nearby. After having lunch next door, I was surprised to see the line extend outside the entrance for Phinology Coffee. I guess the demand for a Vietnamese coffee shop in the Convoy District was high as these businesses have been popping up in other neighborhoods around the city. Phinology Coffee replaced a boba tea shop that closed because it unfortunately went head-to-head with a newer adjacent neighbor in an internal corner suite of the Convoy Village Shopping Center. The interior was refurbished with modern wood tones. All of the dozen or so tables were completely occupied. A self-service tablet to place an order was stationed near the entrance which was why the queue went outside the doorway. Nine types of phin drip coffee and seven kinds of matcha drinks made up the menu offerings. Screens showing their serving size and respective prices were hanging behind the service counter. The Mango Matcha was sold out so I picked a different matcha flavor, Banana Cloud. Stone ground PARU matcha was used and whisked with oat milk to make the various blends. Most places offer a choice of milk, but no substitutions were allowed here. They also indicated that less ice would mean less liquid in the cup to maintain the recipe integrity. My 16 oz serving with a banana flavored foam cost eight dollars. The matcha flavor was prominent as expected for such a premium source. I originally came for their matcha drinks but saw that there was a Banana Foam Coffee and had to get it! You can choose either the house or Viet Coffee and I went with the latter for a stronger and sweeter drink. I have a pretty low caffeine tolerance so by the time I finished a third of it, I was wired! I couldn't really mix the foam (it's thick) into the drink so I didn't get that much of a banana flavor but as a Viet Coffee, it's pretty good. I came early to also study a bit and was able to snag a table. There are a lot of tables and outlets along the wall and cushioned seats. By 10AM Saturday, the line was already out of the door but most people left once they got their drinks. I didn't really notice anyone prowling for a table the entire time so I don't think this place is really known to be a study or hangout spot. There's free WiFi but it's limited to two hours to match the complimentary 2 hour parking in the lot. One thing I didn't like about Phinology as a study spot was the lighting. It seemed pretty dim and that's even with the natural light coming through the windows. Will definitely be back to try their matcha drinks. It's an open concept seating so it looks spacious when it isn't crowded. There's a kiosk in the front close to the register so that's where I placed my order. I got the double matcha less ice and sweetness. Drink didn't take long to receive after placing the order. In the back of the counter you can see a lot of phin's doing its thang dripping the fresh brews. The double matcha was okay, I should've got the coffee instead. However, I know how strong Vietnamese coffee's can be so I preferred to just get the matcha. I would say for the price and size, the 20% made it seem worth it...the matcha just taste like any other ceremonial matcha. However, for it's reg. price $8, I can get a bigger cup elsewhere. I was excited to try this hot new matcha shop in Convoy. Located right next to the popular Yun Tea, Phinology sits in a prime spot in the heart of Convoy. We tried the matcha einspanner and the strawberry matcha latte. Both were very good. The ceremonial-grade matcha is high quality. The einspanner drink was a touch grainy, but still enjoyable. The strawberry matcha had a really nice sweet balance. The shop itself is nicely set up with a good amount of seating and tasteful finishes but it was packed with nearly every table occupied. The drinks are quite small for the price point. For $8, I expect a larger drink, the cups are tiny. Additionally, I saw several customers order less ice or no ice, and it looked like their drinks were only filled halfway in already very small cups. My only downside is getting it less sweet since I do like my drinks more on the sweeter side and I thought the biscoff would've made my drink really sweet but I think normal sweet would've been perfect. Glad there are more matcha and coffee shops opening up around Convoy and Clairemont area! I heard a lot of great things about Phinology, and finally got the chance to come check it out for myself. I can see why it gets the praise that it does. I've tried their banana cloud matcha and matcha einspanner so far, and both had good flavor and no grittiness at all. They have a good amount of seating compared to similar matcha spots, and the interior is clean and modern. There's a tablet that you can order at, but when the line gets backed up, they open up the register too to move things along. I've noticed that my drink typically comes out pretty quickly, even when there is a line of people. Overall, a great spot to grab your morning matcha. I've heard great things about their coffee as well, so I'll have to come back to try that too. I can see this being my go-to matcha spot for now, unless one of the more newly opened shops makes a bigger impression on me. read more
