Although the restaurant doesn't take reservations, the on- duty manager, Allison, warmly invited me to show up before 11:50 AM with my large group to insure a table. When 17 of us came in a week later, our designated server, Amanda, greeted us warmly, pushed tables together into a long rectangle, and quickly brought out water and took our beverage orders. With just a bit of staff support, Amanda took command of our table with finesse. Some of us ordered pizza, some of us ordered appetizers, and some of us ordered salads and sandwiches. Food came out in an impressively reasonable time. Everyone was pleased with their orders and we loved Amanda's easy going, friendly, and efficient service. She was great about asking to refill drinks and checking on our satisfaction with our orders. I loved my very fresh and healthy Amalfi side salad of arugula greens, grapefruit, apples, shaved Parmesan, and citrus dressing. It went well with my mushroom pizza. The vegetarians in our group liked the zucchini fries , Bruschetta, and Brussels sprouts. We were especially impressed that they took separate checks and didn't blink an eye at our mixed payments: cash, credit card. I love Pupatella. I've been going to the one in Arlington area. While the pizza is always delicious, the service in this location is pure garbage. They are not understaffed. I would say they are over staffed to the point that everyone is too busy doing something other than attending the customers. Saw other customers, and I also experienced it myself the inconsistency of the service. Regardless of who comes first, your pizza will come whenever they bring it. No order whatsoever. This evening I went to Pupatella and bought 3 pizzas for takeout. Being half Italian myself, and having worked and lived near Napoli for 20 years, I should warn you that Pupatella's pizza has got nothing to do with the real Neapolitan pizza. The dough was heavy and not properly hydrated (low on water). It was small not well raised at the time of the stretching (which I have filmed). The pizzaiolo was slapping and over stretching the underdeveloped hard dough like there's no tomorrow, resulting in a compressed non airy crust without bubbles and no crunch as it should be. I wonder how the owner found the courage to claim that this is real Neapolitan pizza! Last night we ordered two pizzas at Pupatella in Springfield at 6:15 and received a receipt indicating that the pizzas would be ready for pickup at 7PM. When we arrived at 7 we were told that it would be another 7-8 minutes. At 7:20 and 7:30 we were told that it would be another 10 minutes. Meanwhile, customers that were dining in who had arrived while we were waiting were being served their pizzas. We finally cancelled our order at 7:40 and left hungry, frustrated, and disappointed. First time at this pizzeria and have been a meaning to stop here for a long time. I ordered an eggplant and red pepper pizza with red tomato sauce. It's was $15.50 plus tax, for the 11" pie. Since they were not busy was told it would take 5 minutes. It took 15 minutes but that's not bad. One of the staff told me I came at a right time since about an hour before it was 45+ minutes per pizza. Took the pizza home and it was really great. This pizza was made with a smoked cheese and lightly scattered Parmesan. It smelled fantastic and tasted really great. They sliced it into fourths so at home I cut each piece in a half. The slices will droop unlike NY style or thicker dough pizzas so it's easier to start eating there immediately. The dough is nice and chewy and was perfectly done and complemented the toppings well. Well friends who live near other locations had me really looking forward. I usually wait a few months to let the shake out. That said, we tried them on Wednesday. We got 2 salads and 2 pizzas. The salads were good although I think the salads needed cheese or something. If they were the only items, I might have done a 4. The pizzas though sank this review. The ingredients were good but the pizza was soggy. It was not crisp at all. None of the ingredients had any crispness. Watching them, they seemed to have only one oven in use which may have contributed to it. read more

Yes, I am a pizza snob (I'm originally from NYC), but friends had raved about the relatively new Pupatella on Old Keene Mill Road in Springfield (in the shopping center where Whole Foods is, Old Keene Mill & Rolling Road). I've been to pizza parlors in DC, Virginia and Maryland and while they don't stack up to NY pizza or even Northeast pizza, most of them top Pupatella or at least this Pupatella. Granted they hadn't been open too long (this is a delayed review from early October), and kinks with wait and kitchen staff might have been worked out, but I wasn't impressed. Our order was wrong, but when we pointed it out they fixed it. But then they delivered the correct pizza and then 10 minutes later, another correct pizza. The crust want too good and I didn't care for the taste. Will I be back in 2023 ? Maybe, maybe not. Part of me wants to give them a second shot, and part of me says no thanks, there are other places in the local area that work for me (I just went to Johnny's Pizza last week and that reminded me of this unfinished review). I'm going to caveat this review by saying I am a Pupatella fan and that my 3 stars is based on the hopes that what we experienced were growing pains for a new location. Because the restaurant just opened 3 weeks ago their are no online or phone orders. You have to order in person. My wife did so and on this particular Friday night it resulted in a 1 hour wait. We order 4 different pies and unfortunately all of the were soggy and doughy with very little char, no crisp, and not much flavor. The topping to crust ratio were also off as the impossibly thin, soft, soggy crust could not hold up. I've had Pupatella when it's good and when it's good it's a solid 4-5 star establishment. Hoping this location works out the kinks because it's walking distance from our house. read more

Perfectly executed 2nd day of the soft opening, at least from my perspective. Food came out hot and fast. Door greeter, cashier, bartender and servers were all friendly and attentive. Despite walking into the dinner rush, all the busy employees seemed to communicate and work well together like a well-oiled machine. Pupatella is a nice addition to the Whole Foods shopping center. I was a little overwhelmed by the sheer number of employees inside the restaurant but it makes sense since they are super busy.
