Spicy Miso Ramen, Miso Ramen, New Tokyo Style Shoyu Ramen

Our group got a day-of reservation on a Saturday, which was shocking because of how busy the place was when we arrived. It's a dimly lit restaurant that works for smaller, intimate meals, as well as larger tables in the back and bar seating. I ordered the spicy miso, which was delicious! Not super spicy, and the broth was warm and flavorful, but not salty. The highlight for me was the noodles, which were so chewy.

You know something is a bit wrong if a restaurant still has open Resys in the next two hours on a weekend night. Given the reviews, we booked a reservation for 8PM and arrived a few minutes early and were seated. The restaurant itself at night is quite dim-in the dining area, the bathroom-maybe that's the vibe but if your eyesight isn't that good or you like brighter spots just keep this detail in mind. We ordered: 2x New Tokyo Style Shoyu Ramen with thick flour noodles TaKaRa CHU HI Fuji Apple TaKaRa CHU HI Lemon They are accommodating with substitutions, but truly skimp on toppings. When our bowls arrived, I was a bit taken aback as to how simple yet bare the ramen was-only around 1-2 pieces of each topping i.e. bamboo shoot, tofu. The highballs were yummy and not that strong until the latter sips, however I later realized that they're not made in house and poured from a can. From what I've read on Reddit, the portion sizes at their LES store are a bit more generous, so I'd maybe check them out however don't think I'd stop by here anytime soon unless I was craving ramen very badly.

Can't beat a bowl of hot and savory ramen on a cold winter day! Came here on a Saturday late afternoon and was seated immediately without wait/reservation. I ordered the shoyu ramen and really loved how delicious everything was -- the refreshing and savory soup, chewy ramen noodles, pork slices, eggs, bamboo and light garnishing. I was extremely full after! It was about $20-25 for a bowl which is pretty standard nowadays. The inside was very spacious, clean and organized. Additionally, the staff was friendly and attentive to whatever we needed. Recommend if you're looking for a casual meal :)

Stopped here for lunch while in town. Had a reservation for 1:30 and checked in about 1:25pm. Not the biggest place but a variety of seating options and maybe? an upstairs seating area? We were asked if sitting at the bar would be fine (it shouldn't be if I have a reservation) but I played ball to get to eating. We shared pork buns and crab and corn croquettes to start. The buns were standard - somewhat on a smaller side but very flavorful. Would love to have about 12 of these. The croquettes had ZERO flavor. Was just a mush flavorless warm thick gravy inside. I ordered the shoyu signature ramen which was very good - thinner noodles served with chashu pork and a half an egg. Good broth I liked it a lot. Overall it was good - staff was friendly and attentive to a fault.

5.0 / 5.0 This soy sauce ramen restaurant is the best! They have two locations in Manhattan, but the Chelsea location is spacious and has plenty of seating. There are tables and counter seats, and high chairs too.The restrooms are clean, too! The staff are also friendly. The most popular dish is the New Tokyo Style Shoyu, which has a truffle-flavored soy sauce base that goes perfectly with the Chinese noodles. I also love that it comes with a boiled egg as a topping. It's light but packed with flavor. It's so delicious I could eat the whole bowl in one go! The Classic Shio is also apparently popular with ramen lovers. I'd like to try it again next time!

This really hit the spot after a long cold day. I got a miso ramen and it was good! The noodles were springy and the broth was flavorful. While the presentation of the bowls was pretty with the neatly folded noodles, I was surprised at the lack of toppings. A single piece of bokchoy was shocking. Still, it was a cozy little spot and a solid bowl of ramen!

The Shoyu Ramen here is a must-try. The broth is the star: light yet incredibly flavorful and deep--not heavy or oily at all. The service was great--fast and friendly. My only critiques are that the portion size is a bit small, making it feel a little expensive for what you get. Overall: Fantastic ramen, just wish the bowl was bigger!

i don't really like super heavy ramen broths, so this ramen was perfect for me since it was very light! the noodles were perfectly cooked and the broth was super comforting. unfortunately they only give 2 measly slices of meat in this dish, one of which wasn't even pork, so it's probably not super worth it for the price. the place itself was cozy and cute and the service was decent.

All the ramen we tried is really good and refreshing! Perfect for winter weather like this. We have chicken karage, shishito peppers, and takoyaki as appetizers. We really love the Takoyaki. It's crispy outside and tender inside. The waiters also really friendly!

This is the best ramen I've had (so far) in NY. As a baseline, I prefer lighter broths over the thicker, tonkatsu broth, so when I heard about this spot, I was excited to try it. It's a clean, elegant spot, giving an elevated feel to the place. I debated between the shoyu and shio ramen but went with the shoyu as that is their main ramen. I also got the cucumber and chashu rice. Everything came out pretty quick and at the same time. Starting with the ramen, the broth is complex and heartier than a typical chicken shoyu broth. I was worried the truffle would overpower the broth but they put just enough to add enough umami without overpowering it all. I liked the thin, Tokyo-style noodles that were cooked to perfection. The chicken slice was juicy and had a slightly smoky flavor while the pork chashu was tender with the charred outside offering a nice textural contrast. The only downside is they only give you half an egg and one piece each of the chashu and chicken. Same complaint about the chashu rice. Barely any rice which is disappointing but the chashu was delicious. The cucumber was a nice refreshing contrast with a hint of sesame oil and salt adding just enough flavor. This place would get 5 stars if they gave more food. Otherwise, for now, it's the best spot I've found in NY for ramen.

Delicious!!! The classic shoyu is light and refreshing while remaining everything you want in a ramen bowl. We also got the tsukemen, which I liked (but thought shoyu ramen was better!) Also got the shishito peppers, the karaage and takoyaki. Everything was good.

Just had a lovely experience here tonight with friends! We waltzed in at around 7:00-ish on a Sunday. Asked up front if we had a reservation, which we didn't, but were still seated immediately at their "bar seating" which was really quite cozy and perfect for our group of 3. The aesthetic here is clean and minimalistic, which I loved, right down to the menu itself. Normally my go-to is tonkatsu ramen, but this isn't the place for that, so we all opted for the New Tokyo Style Shoyu. I loved that you get both chicken and chashu slices together. This ramen was simplicity done well, clean flavor, and I even polished off the broth. It was also somehow my friend's first time having real authentic Japanese ramen in a restaurant (and not grabbed from the package in the bodega) and now he may have a new addiction. Also, if you come here, GET THE PORK BUNS. I have not experienced pork buns this delicious since my first time having Ippudo's. After the first bite, we ALL knew they were worth every penny. My first-time-ramen-eating friend ordered THREE sets. Once again, these buns were simplicity PACKED with flavor: pillowy soft dough clouds of wonder folded over juicy, tender EXTREMELY well-seasoned pork strips in a heavenly sauce and two extremely thin cucumber slices (which I pulled off). No extra lettuce or whatever they normally put on pork buns. Even the waitress had to comment "Your friend loves the pork buns". His face held a look of ecstasy with each bite. I warned him that he will encounter a ton of Japanese restaurants sporting pork buns on the menu: they will not be this good. The Karaage Chicken Rice also deserves an honorable mention. Perfectly crispy outside juicy inside bite-sized chicken pieces atop a small bed of fluffy white rice with some kind of spicy mayo drizzle and a tiny sprinkle of scallions. Smaller portion than expected, but a tiny bowl of happiness. Waitstaff was overattentive almost, but friendly. Only adding plum wine to the menu could elevate the experience here. DEFINITELY recommend you drop in if you're thinking about it.

New Tokyo Style Shoyu, Japanese style potato salad, karaage
    Yvonne T.

Starting off positive, the Japanese style potato was very good and I would recommend. It was soft with pieces of potato, corn, and carrots. The Karaage was not bad but I've had better. For ramen, I ordered the New Tokyo Style Shoyu and it was quite disappointing and mediocre. It literally had one sliver of pork and a tiny slice of chicken. I really didn't like the truffle flavor as it's way too strong. While I enjoyed the appetizer, I feel like the ramen was nice to look at but that was it.

Some of the staff has been here for a while, which tells me it is a well managed operation. Quality is still the focus at TONCHIN. Table comfort is still not. I love to bring my children when not crazy crowded so they can also enjoy one of the best ramen restaurants in the world. Maybe I'm exaggerating, but I haven't found better yet. Summer soupless ramen with perfectly chewy noodles and slightly spicy sauce is a great addition. The vegan ban ban kinoko as well as its chicken version are great also during summer. The maguro is delicious but I don't find it as satisfying as the noodles. Mind spiciness level for the younglings. In the winter, the spicy tantan or Tokyo ramen always hit the spot. Fish bun has been improved slightly over the years but thank ramen-sama, it is always as messy to eat as the first time I tried it 7 years ago. Desserts are surprisingly delicious. Typically Japanese ramen restaurants lack in that domain but not here. The Tokyo banana is perfectly crafted: creamy crunchy tasty. The shaved ice are great and super fun to eat. To many more years of happy reviews, and good fortune.

We started with the pork belly appetizer which was recommended and stated on the menu indicating it's their featured dish. It was the biggest disappointment as it was extremely fatty with large chunks of fat, while the lean portions were dry. It didn't look very appetizing. The dumplings were just okay--they had decent flavor but I was hoping for a crispier texture. I ordered the Zebra Ramen. The noodles were cooked perfectly al dente, but the broth was much saltier than I would have preferred. The pat of butter felt unnecessary and made the broth overly rich without adding much depth. The chashu was on the small side and also quite fatty and I assume it's the same as the appetizer but was sliced instead of in large chunks. The marinated egg had good flavor, although the yolk was a little more cooked than I typically like. Another thing is the pork belly appetizer came with an egg. I wish the server would tell us so we didn't have to add it to our ramen with an extra charge. The nori was also completely soggy by the time it reached our table. Overall, the noodles were the only highlight of the meal and the rest were very underwhelming. It's definitely not a place I would recommend.

This spot delivers the kind of authentic paitan that reminds you why people used to line up on cold sidewalks just for a bowl. I ordered the Paitan Ramen Deluxe, and it genuinely lives up to the name. The broth is silky, rich, and comforting without being overly salty which is exactly what a proper paitan should be. The bowl comes loaded: tender shredded chicken, seared chashu, marinated soft-boiled eggs, fresh scallions, bamboo shoots, and a sheet of nori that ties everything together. Every topping tastes intentional, not just filler. The texture balance is what really stands out fatty chashu that melts, shredded chicken with real flavor, and noodles that hold up beautifully in the broth. You can taste the care in the soup base; it has depth, not just heat or salt. If you loved Totto Ramen back in the day, this feels like its modern successor same spirit, new precision.
