There are things about Salem that are just odd. I can't even put my finger on it. It has a vibe. It is not hipster like Portland, not Stepfordy like Bethany where I live, not hippie like Eugene, not folksy like Corvallis. It is not cool like Bend...I don't know. It is kind of a Grimm thing. Like there are vesen lurking around corners. And it seems stuck in another decade. The 70's maybe. My ex and I were in Salem with time to kill having dropped the teens off at an anime con. It was in Keizer. Everything close by was a chain. Meh. Sushi? I said. Naw, he said. (* note: if you love sushi make for damn sure the person you marry and have progeny or even share pets with does too. I epically failed at this.) We ultimately settled on barbecue. And then we looked on yelp and drove into the boonies for a few miles This BBQ place is open part time ( Thursday- Sunday, each day until they run out) in a building that is more like a grange or Elks lodge or something of that ilk. There is a sign that says "BBQ" with an arrow out front. There is a small parking lot in front of the nondescript brown building. Headed into the nondescript building the ex was doubtful. Are you sure? he asked. Really? Then we smelled it. That BBQ meat smell. Ok then. Inside there is a small restaurant type space. It has long tables with attached benches or metal chairs. There are rolls of paper towels and baskets of plastic utensils. You order at the counter and the food comes out on paper on a plastic tray. They have made some effort to make it cute. We ordered two pulled pork sandwiches. They come on a big roll with two crispy tempura onion rings and a side. We chose baked beans and cheesey hash brown casserole. ( it was a special). We could have split a sandwich, but since we didn't expect it to be enormous we each took half home. The hash browns were ok, kinda salty, the beans were delicious. The onion rings were deemed too greasy by the ex, I liked them. I wished the sandwiches had slaw on them but the pork was smoky, tender, with a good bark and not too mushy, stringy, or fatty which sometimes ruins pulled pork. It was good. Nice smoke. It did not need sauce but their sauce is good. Not too sweet. Not too spicy. Tasty. A weird but decent Salem BBQ experience. ( BTW the brisket, ribs, chicken, and burgers looked good too). P.S. I ordered "The Boss" with chicken and brisket to go. Fries and baked beans as my sides. The fries were uncooked and cold on the inside. The fries appeared to come from a frozen bag of fries you'd get in a store and were awful. Tasted like they had been sitting for quite awhile. The beans were hot and tasty ( the best part of the meal). The chicken was cold and so dry you have to drink fluids to keep from chocking. Okay. Simply the best Barbecue I've had in this state. Simple. Roger barbecues old school with an oak smoker that he starts on one day and empties on the next day. This is my favorite BBQ that I've found in Oregon. Possibly a tie with Pete's meats in Oregon city brewing. I live in Central Oregon but any time I'm coming through Salem I make sure to stop here and try to time it around lunch. I love that it's always a little smoky in the dining room. The place just smells delicious. The brisket and ribs are always perfect. I've never eaten anything here that wasn't outstanding. I wish central Oregon had a decent BBQ but it's all pretty much a joke. I often make motorcycle rides to Salem just to have lunch here in the summer. It's that good! Ribs were amazing! They have definitely upgraded those. Mac and cheese was still gross, onion rings WTF super bland and disgusting.

The service was... Questionable? They were talking about someone who had the same name as me. When I gave my name, one of the younger guys said "what a coincidence. Sometimes the name (name) doesn't make sense." Maybe I'm overreacting, but in my opinion and work experience, that's very unprofessional and you don't say that when a customer, who just said their name, is present. I recently returned from Lockhart, Texas, having made the meat-lovers pilgrimage to the heart and soul of Texas Hill Country Barbecue. We dined at Black's Barbecue, Kreuz Market, Smitty's Market ... all the iconic BBQ places you see on food shows every week. And in all honesty, they have nothing on Roger That BBQ. Roger has exceptional Pork Ribs, more than exceptional Beef Brisket, and very good Pulled Pork. My mother-in-law's favorite are Roger's Tacos (three for $8), with your choice of brisket, chicken and pulled pork ... just delicious. The sides are pretty good ... the BBQ Beans are exceptional, the Mac-N-Cheese is very good (spicy), the Fried Pickles very good, the Slaw and Kicked Up Corn (spicy) is good, and the Potato Salad could use a little oomph. The sweet, red BBQ sauce is to die for. I have eaten at Roger That BBQ more than 33-times now, and it is killing me, because I love to try new restaurants, and every time I ask the family "where to today?," they sing the "Roger That BBQ meat, meat and more meat song." It is just that GOOD. Talk about long hours, every time I have been there, Roger and his wife have been in the kitchen, making sure the food they served met their high standards. Quite possibly the best BBQ in the Willamette Valley evverrrrrrr! What do I love about Roger that BBQ? Uh, meat, meat, and more meat?! The more appropriate question is: what is there NOT to love? Not only am I too lazy to ever be vegetarian, but why would I do that to myself when pork (in all its forms) is on my Top 10 list of the most perfect foods in existence!? And don't judge me for also wanting a pet pig. (Pigs are rad in any form you can enjoy them in). Hubby and I went on a trip to Tennessee a few years back and basically ate our way around the state, so needless to say, when we moved to Oregon, Roger That was immediately on my radar. And their BBQ style did not disappoint. With a focus on smoked pork and brisket, Roger That gracefully sidesteps the gross sugary sauces that define Carolina BBQ and instead lets the gorgeous flavors of the meat shine through. Though of course, you have access to some perfectly balanced and zesty sauces if you'd like them. Give me some heat and vinegar with my smoked meats any day! Pair a tasty pile of flesh with a large sweet tea, some creamy coleslaw and a pile of their $1-a-piece wimpy burgers, and you have yourself a fine meal that will transport you to the land of the Great Smokies in no time. My only sadness is that they're only open until they run out of meat (but hey, that's how you know it's fresh and made that day!) so I get a little antsy thinking of other eager patrons whisking my meat away before I can eat it. This is probably the best BBQ in Salem. Friendly people run it. We have lived in Kansas City and visit Memphis often, though, and this doesn't compare. We ordered the Pitmaster which includes brisket, ribs, sausage and pulled pork. The meat was falling off the bone for the ribs. I thought the meat was dry, though, but didn't say anything. Shortly after, my husband said the ribs were dry. The pulled pork was okay. The sausage was good. Brisket was tender with a smoke ring. When we walked into this place a 1pm we were third in line at the counter. After us there were a few more people but since there's been no line at all. We ended up waiting 48 minutes for one plate of food that my wife and I split. That was pretty disappointing. We had the brisket and pulled pork plate with veggies and their corn side. The brisket was good but half of it was fat. The pork was good but also fatty. The corn was my choice and super bland. I thought it was going to be like elote but instead it just tasted like corn in cream. The veggies were green beans with bacon chunks and were good. The plate with a soda was $30. read more

So disappointed! I've been craving bbq chicken for quite some time. I can't bbq at home so it's a special treat for this "lady on a tight budget". Went in yesterday @ 3pm (open noon to 5pm) and ordered the combo to go; bbq chicken breast, fries and slaw. I didn't even leave the parking lot...the fries portion was small, cold and not all were cooked through. The bbq chicken was dry; maybe I should know better because it's a breast? Slaw was small and "so so" in taste. Luckily I added bbq sauce to my chicken before I left the restaurant, it helped a little w/the dryness. We love, love, love this place. Stopped in for 4 pulled pork sandwiches (two with coleslaw, 1 with fries, and 1 with cajun tots) and an order of chicken tenders for one of the kids. The pulled pork sandwiches came with a mix of bark and center meat (I lucked out and had lots of bark - too much bark is not in my vocabulary) and some fantastic sauce. The sauce was a thin molassesey, tomatoey deliciousness that still stuck to the meat. I will admit, fries and tots may also have been dipped in the sauce. Driving back to Portland from the coast and found this BBQ goldmine on Yelp! As first timers we had our eyes way bigger than our appetite, but man did this place not disappoint. Even though we navigated and could smell the delicious BBQ, the location throws you off, makes you think you arrived at a church. The sweet Smokey smell helped us power through the fear of bursting into flames and we walked in! The inside immediately lets you know you followed your nose to the right spot! The people were awesome, treated you well, and served up some generous portions. We got Ribs, Beef Brisket, and tacos! tacos??? Yeah! Never had street style tacos with BBQ, but they blended the flavors right. Roger that has some really incredible food. My family's favorite is their brisket, and ribs. And for sides we love their bbq beans(has good chunks of meat), garlic bacon green beans, and the kicked up corn(has some spice). The brisket is truly the highlight every time. It's so tender and flavorful. We've come about a half dozen times now and also ordered a couple pounds for a party and every time it's been fantastic. Like most places, the quality can vary and sometimes by a significant amount. I've been back here a couple of times and while it's a well run machine that moves people through quickly, the quality has suffered these last couple of times (dryer and tougher beef). I think it's a great place to go, it's lively and the folks (staff and customers) are uniformly happy and talkative. It seems to be much more of a family vibe than most places. While I've never had food that I couldn't eat, there are times that it's more exciting to eat than others. I don't know if it's a matter of when you arrive that drives the quality of the food or if it's something else. The portions are well sized, the side orders are more uniformly good and it's always a fun outing. It may not be the place if you want to dash in and grab some food. You'll be waiting a bit. wow! I'm not sure how this place has such good reviews. It's a glorified hotdog stand with extremely poor food. I should've known when I saw that there were only teenagers behind the counter like it was a McDonald's. The barbecue chicken didn't have any barbecue sauce on it, and resembled a baked potato, in fact, we thought that's what it was when they handed it over to us. The french fries were probably frozen bag from winco, at least that's what they looked like. The food was lukewarm ! if we weren't absolutely starving we would've asked for a refund and left. First off I would like to say we have been going to Rodger That many times , and it's usually amazing but this time it was just okay which was surprising. We ordered our usual Whimpy burgers that are always good, cheesy bread which was also good.... Then we ordered a half rack of ribs which seemed skimpy for the price.. the worst thing we got was brisket tacos that seemed to have a lot of fat. In fact, it was mostly fat. Hardly any brisket. I would probably weed the fat out before I made tacos loaded with fat. Won't be ordering those again.
