My bf and I were in the SF area for a few days and decided to check out the mall where Uncle Tetsu is. I've seen this place on IG so I thought why not give it a try. I got the original cheesecake and 4 cheese tarts. I'm not sure if they had an off day but the cheesecake, which I understand isn't really cheesecake, barely had any flavor. The texture was like that of a sponge cake, which is fine, but this cake just didn't have much flavor at all. Same with the cheese tarts. There was a lot of commotion at one corner of the hillsdale shopping center food court and we decided to check out what was causing it - it was Uncle Tetsu! They have cheese tarts, cheesecakes and a variant called basque cheesecake. We wanted to try a couple of cheesetarts as they had just come out of the oven and looked fresh/warm. However we were told that we couldn't buy only 1 or 2 of them and had to commit to buying a box of 4. Then we decided to get a slice of cheesecake and we were told that it's not sold in slices and that we'd have to buy the whole thing. We were hesitant to spend $12 on getting a whole cake given that we weren't that hungry and just wanted to try a slice but we finally gave in to the hype and bought the whole thing in Matcha flavor. The cake was mostly flavorless (I usually enjoy that most Asian dessert places have very light sweetness but this one was almost too light and you can't really taste anything). It was almost like they added flavorless green coloring and called it matcha. I guess we should have gone with the original flavor to start with. If only they sold it in slices, we'd have loved to have tried a few different flavors instead of being stuck with a whole matcha cake that we don't enjoy at all! read more

So when I sometimes visit, I try checking in new places first. Uncle Tetsu is one special bakery shop recognized for its signature full blown soufflé/sponge cake. The size big enough to fit into the square tile box can serve at least 4 people, namely me and my whole family. And indeed; it's better to take it home while the Japanese cheesecake stays fresh for one to two days straight. Each picture of a full blown cheesecake straight from the nifty machinery, kawaii! I chose the Very Berry since it's a special flavor. At home when I have a first bite, it's light and fluffy. With Very Berry flavor, it's sweet enough. I want to choose matcha green tea flavor, but my brother didn't like that flavor. Hopefully, it'll be my brother's turn to order Japanese cheesecake with the flavor of his choice, if he's in a mood. Uncle Tetsu specializes in Japanese style cheesecakes, which is quite unlike American cheesecakes. They have become very popular lately with stores opening in San Mateo, San Francisco (Stonestown), and now Daly City (Serramonte). This location of Uncle Tetsu is inside the Stonestown Mall, on the second floor, where the long-standing Mrs. Field's Cookies use to be (right next to the food court). The mall was actually quite busy and there was a short line for Uncle Tetsu. There are five standard cheesecake flavors that Uncle Tetsu makes - Original, Strawberry, Matcha, Chocolate, and Ube. When I went in February 2021, they had a seasonal flavor of Oreo. There is only one size (maybe approx 8" round) and there is only one price for all - $11.80. Uncle Tetsu also sells Burnt Basque Cakes (looks burnt on top), which is more of a European style cheesecake, for $21.80. They offered two flavors when I went - Original and Oreo. I chose the Oreo cheesecake, since I love the Oreo cheesecake at (TCF) and wanted to try the original. The Oreo cheesecake is basically the original cheesecake with Oreos added throughout. It was brought out boxed and ready to go. Upon eating, I realized the cheesecake was light and fluffy, not thick or dense. It reminded me of an Asian sponge cake. I also noticed that this cheesecake is not very sweet like American cheesecakes. The sweetness is very subtle and the Oreo flavor isn't too strong. This type of cheesecake would have been good with a nice cup of tea. I wasn't absolutely blown away, but I did enjoy the cheesecake. Overall, it was nice to try a different style of cheesecake and see what all the buzz was about. I would probably try a different flavor next time. Uncle Tetsu's popular Japanese cheesecakes I had my first taste of a Japanese cheesecake and it is far cry from American cheesecakes. This Uncle Tetsu is the latest addition to the Stonestown Galleria in San Francisco. It is located on the upper level of the shopping center just around the corner from the food court. We were able to walk up and make our purchase. No wait! Customers can also place orders online for next day pick-up. These Japanese cheesecakes are fluffy with texture like a sponge cake and they're not as sweet so I guess that's good because it has fewer calories than the standard cheesecake. LoL! yet they still have that rich, creamy goodness. These cheesecakes were made from scratch in-house and they come in many flavors including strawberry and burnt basque. I purchased one each of the Ube, chocolate and original. The young employees were friendly, helpful and nice as I watched the process from when they took the cheesecake out of the bain-marie, hot stamping each cheesecake with the Uncle Tetsu caricature logo, and packaging them. They are fast! The cheesecakes are 6" in size and are $11.80 each, including tax is $12.80. Apparently these cheesecakes are very popular here in the Bay Area. M Y O R D E R I've tried their Japanese Soufflé Cheesecakes a handful of times (like a cheesy sponge cake) so this time, I wanted to try their Burnt Basque Cheesecake. These crustless cheesecakes are cooked at a high heat producing an crackly, burnt exterior but with a rich yet light custardy center. In theory, at least. Basuku started the Burnt Basque Cheesecake craze in the Bay Area. But, if you've been stalking their page, than you know their cheesecakes sell out within seconds online. No joke. For the price ($14 less than Basuku), Uncle Tetsu's rendition is decent. Even tempering it for an hour, it's not nearly as creamy and custardy in the center as Basuku's. But, it does the job and is much easier to get your hands on. Compared to their Soufflé cheesecake, it's closer to the texture of an NY cheesecake (heavier and cheesier) if that's what you're looking for. You can eat it straight from the fridge which has a denser texture or at room temperature for a softer texture. These cheesecakes are AZN sweet (my preference) so if you have a major sweet tooth, you may not find it sweet enough. But hey, they're healthier! Wrap up the uneaten portion in saran wrap to keep it moist and store it in the fridge. Enjoy within 72 hours. I'm glad I tried Uncle Tetsu's Burnt Basque Cheesecake once but I'll stick with their Japanese Soufflé Cheesecakes going forward. Overall, Uncle Tetsu is another welcome addition to the Stonestown food court. With the holidays coming up, their cheesecakes are a great gift idea for friends and fam. The ube flavor was not too strong at all. I saw there was a card included with my cake that tells you how the temperature affects the cake from when it's hot out of the oven, room temp, cold in the fridge, and frozen. I've never had an Uncle Tetsu-styled cheesecake until now. I've always had this distinct idea of what a cheesecake is -- sort of like a custard-like texture. I am glad there is finally an Uncle Tetsu nearby! I don't usually go to San Mateo so the drive there is out of the way. I got an original cheesecake and it tastes just like the one in San Mateo. I do think it should be baked a bit longer because the top wasn't exactly browned. If you pre-order online, the wait is non-existent. I've been to the Hillsdale location before and this is the first time I've seen Ube flavor on the menu so I jumped right on that and bought one. The ube flavor did not come through. Uncle Tetsu is finally open at Stonestown! They have QR codes posted in front of the store, in the case that you want to order ahead and have a set pick up time, but only for the next day. Otherwise, you'd have to wait in line and pick up what's available, which I ended up doing. I love how light and fluffy the cheesecakes are! Does not really jiggle, but is pretty nonetheless. If you're not careful, you could end up eating the whole thing by yourself! It's a steep price for a small cheesecake, but definitely worth it. They also have a seasonal flavor which is the Wild Berry cheesecake that consists of raspberry puree and something else I don't remember when I inquired what was in it. I decided maybe that will be too tart or sour so I went with the strawberry cheesecake. The cheesecake was very soft and melt in your mouth feel. Of course it is not the creamy US kind but more of a soft spongy texture. I was able to eat this while recovering from jaw surgery and unable to chew. So it was a very satisfying treat for myself.
