    Interesting but just missed on a few dishes. One of the Michelin starred restaurants here in San Diego. It's located in a hotel right on the water in Oceanside. Mexican themed, it features an 8 or so course menu. Service is good. Seating is comfortable and the ambience elegant but chill. The food, was inventive but for me a number of dishes missed. The highlight was the Wagyu tacos. The Wagyu was perfect. The tortillas were almost superfluous. The carrot flan dish really missed. The desserts were really solid. Quantity of food was pretty good. I was definitely full. Overall it was an interesting meal. Some dishes hit some missed.

    What a fantastic dining experience. The chef did a phenomenal job each course somehow outshined the last. Absolutely no regrets. We started with the tableside jamón, which was the perfect way to awaken our palate before the rest of the dishes arrived. Even with a two-hour drive, we would happily make the trip again. Truly a magical experience for your taste buds

    First visit to this GEM in Oceanside! Part of The Seabird Hyatt. I came across this restaurant in my online search. Their specialty, aside from everything, is the Tasting Menu. We opted for the 1st Come 1st Serve bar seating. So where do I begin.....I am drawn to restaurants that provide an Experience. Food is a big part, Staff is the other big part. Connecting with staff and staff connecting with their customer is my number one thing and I can tell you this. Many restaurants fail at this. I have a handful of favorites in SoCal: The Ranch, The Lanterns Edge at Laguna Cliffs, Mimmos in Palm Desert, several others and have added Valle to this list. First time and on first name basis with this extraordinary staff. Let's start with Jeff at the bar. The craft cocktails (in my case mocktail) but man, does he have one of the most organized bars I have ever seen. He was training Candi at the time we went, Two Rockstars behind the bar. I bumped into Mel as I was roaming about and checking out the decor. Knocked the tradition of indigenous Mexico cooking out of the park. Don't expect chips and salsa. Get ready to arouse your palette with the flavors from Mexico home cooking. We loved it. From the details in design to the exquisite details in the presentation of the menu items. Thank you. PS. We were so hungry, I didn't take dinner pics only dessert. For the record, the hummus, Cheese smash burger and the QuesaTaco are amazing!

    Great Michelin food experience. Miguel and his supporting staff were amazing and made the very good mostly food and experience a time to remember. The Mexican hummus and smarty desert were the favorites. The burger good. Not a fan of the cheese. Reminded me of in and out burger cheese, but I only like great cheese on a burger. The tiny piece of wagu was a little bizarre and microscopic. Maybe my taste buds are not fancy enough to appreciate everything perfectly. Will be back for a full tasting experience though. Thank you for treating us so well.

    Amazing dinner! The tacos de lengua was my favorite dish and they paired it nicely with a Malbec from Valle de Guadalupe. Service was excellent, loved the decor and interior. Valle highlights Mexican flavors with heirloom corn masa for chanclas, tortillas, and etixtamal, while also pairing ingredients like ayacote, mole, and chamoy with braised beef tongue, bluefin tuna, and wagyu--definitely recommend!

    This review is long overdue, but dining at Valle was a unique and memorable experience for us! As we were being seated, they also brought a tree out to hang my purse on which was a fun touch. We started with a clarified margarita which was perfectly clear and refreshing. The amuse bouche bites were playful and the deconstructed fish taco bite was my favorite of those. The prix fixe was curated perfectly and very seafood heavy which I loved, highlighting the region's unique ingredients! The staff was warm, inviting, and incredibly attentive- every time I returned to my seat there was a fresh warm towel. They gave us a special dessert and champagne for our anniversary as well. Post meal we got to tour the kitchen and receive a final bite from chef Roberto Alcocer. Thank you Valle!

    Valle delivers a beautifully curated experience, this is not your typical dinner outing. The 8-course tasting menu leans into creative, bite-sized compositions that are more about artistry than quantity. It's definitely on the pricey side (drinks not included), but what you're paying for is the culinary creativity, elevated service, and stunning oceanside setting. If the price was about $50 less per person or if the amount of food got each person very full ~ versus satisfied, this would've hit five stars. The space is clean, modern, and refined; perfectly matched by the exceptional service. The staff is attentive, respectful, and carries a high-end polish that makes the whole evening feel special. This is definitely a "special occasion" kind of spot. If you're celebrating or looking for a unique dining experience, it's worth it. Just don't come expecting a feast, come for the craft, the setting, and a memorable night. We'd absolutely return when we're in the mood for something elevated and thoughtful.

    Incredible! Let me repeat... incredible! We did the Chefs table which was an experience I will NEVER forget. Food was amazing, service was over the top and being at the table in the Chefs kitchen... unforgettable. Btw, the Chef is just a GREAT person. His crew loves him and once you meet him, you'll see why. Truly impressive in every way.

    Valle is a nice experience. Personally for us, it def wasn't 5 stars. If I'm comparing experiences to other Michelin-esque restaurants in the area I liked Jeune et Jolie in Carlsbad over Valle but the location is better at Valle. We opted for the 8 course primavera meal with some drinks. It was our anniversary (we got a couple happy birthdays while there from the staff). You pay for everything ahead of time (tip, meal, etc) and when you leave any add ons are charged also. It's pretty at the bar and in the restaurant. The bathroom is the shared public one outside, which is strange. Service was ok - not friendly. There was a lot of assuming we knew things and then asking us the same things multiple times. We had to ask questions about what things were as well. The food was good and lots of wonderful flavors. My fav was the charred onion which isn't normally my jam but I loved the crust it came in. The item I liked least was the vegetarian oyster snack. Loved the extra dessert they gave us (the tiniest macrons and the cake that looked like a candle). All the wine I had was great. I would come back to try the cheeseburger at the bar that I heard about. Metered Street parking or valet with the Mission Pacific hotel.

    Wonderful experience at Valle. Staff was kind, drinks were great. We started the evening off on the patio and moved inside to finish off the meal.

    The first Michelin Mexican restaurant I've been to, and I believe one of two in SoCal. Focus of menu is Baja/Valle De Guadalupe food, and the food was excellent. The service is what you would expect of a Michelin restaurant. They have a sommelier, and usually one to two waiters that help you with getting plates, and delivering and explaining the food to you. Eight course meal. I decided to get the add on waygu which was perfectly tender. Aside from that entree, my other favorite was the black cod. I've really become a fan of black cod, and the expazote was a great add on for flavor. Ambiance is somewhat dimly lit, and I loved that aspect. Truly amazing experience here. They did a great job of creating balance with the menu with a variety of proteins (cod, lobster, lamb, and beef). Valle deserves a their star!

    This place is awesome and the ambiance is totally chic romantic. I've been here several times at this point and haven't really experienced a bad dish. The menu is creative, the wine paring is amazing, albeit expensive... The service is near perfection... The tour of the kitchen afterwards is a nice touch and oh yeah, Don't sleep on the cocktails either, enjoy!

    The food is so good you will want to dress nice to enjoy it. No need for a sport coat but don’t wear flip flops.

    They do accommodate kids, I would not bring kids there though. It's an adult dining experience by far.

The entire interaction felt dismissive and almost hostile and condescending (insinuating I can't understand because of my ethnicity and that he was actively trying to make me leave rather than provide basic service or information) It was especially disappointing on a holiday when hospitality standards should be at their best. No amount of busyness excuses such rude, impatient, and condescending behavior toward a guest who was simply trying to ask a reasonable question. The hostesses were extremely nice and explained to me the difference between cabana, restaurant, and the pool seating for hotel guests vs non guests. I am giving this restaurant 3 stars, because their food is still AMAZING and their staff is super nice and I believe deep down inside that they just had a REALLY OFF night. We had reservations for a party of 9 last night. The table was set up nicely and accommodated a few extra if needed, which I thought was cool. We started with some adult beverages: an Old Fashion, some Hotel Nacionals, a Fashionably Late, and a couple of beers. Everything started great. Dennis, our server was very cool and friendly and gave great suggestions. We ordered the mac and cheese sides and they were delicious with huge pieces of savory bacon in them. We also ordered the brussel sprouts which we never received and didn't even realize it until the very end when we received the bill because of all the other issues we had... but we'll get to that in a moment. But let's talk about what did go well... the delicious food we did get. We ordered the Pig burger which was sooo good and came with crispy fries. The fish for the fish and chips were 2 huge pieces and were delicious, came with yummy seasoned waffle fries and the tiniest tartar sauce and malt vinegar. I had to request 4 more for that amount of fish, but no big deal. Dennis brought out as much as we needed. Their ranch sauce is really good too. Don't judge just because it's a little peachy'ish and looks thousand island'ish. lt's still some very good ranch. My son said he really tasted the bitterness of beer in the fish batter but maybe it was just in that piece he had; I could not taste it in the piece of fish I ate. The short rib was really tender and delicious... the sauce was just a tad salty for my taste, but the mashed potatoes it sat on sort of balanced it out a little. The fried chicken thighs were really cooked well, juicy, crispy and seasoned perfectly. We ordered two Teres Major steaks. One rare with mashed potaoes, one medium rare with grits. The rare one came out medium and without any mushrooms, took FOREVEEERR to remake (the rest of the table was almost done with our meals...& not sure why it took so long since the restaurant wasn't that busy and it's a RARE steak). The one with grits came with mashed potatoes instead of grits. Dennis was super nice and apologetic and corrected both mistakes when we let him know. He then brought us a big bowl of grits. The manager (blonde gal) came over and apologized for the mistakes tonight, letting us know that usually does not happen, and let us know she'd be comping one of our steaks and would be bringing a dessert on them. We thought that was very nice of them. However, as nice a gesture. we never did receive that dessert. My husband handed Dennis his credit card before the bill arrived (before our friends could try to pay the bill) and not sure why but our bill never came, and we never saw Dennis again either after he boxed up our leftovers and took the card. We had to ask another server for our bill because we had been waiting for quite a while... and needed to head out as we were already late to meet friends at a lounge. The other server came back with my husband's credit card, the bill (that's when I finally noticed the brussel sprouts sides we never got but were charged), and let the server know. He immediately apologized and took it off the bill. So I'm not sure what happened last night at Flying Pig...missing and charged brussel sprouts, steak overcooked, missing mushrooms, mashed potatoes instead of grits, then a comped dessert promised but never delivered. WOW. I had to apologize to my friends. I was totally hyping up this place and it underdelivered. They automatically got their 20% gratuity for our party of 9 but anyone that knows me knows how much I absolutely love great service combined with exceptional food and that could have easily been a 30-35% tip had they been on their A game! We only come to Oceanside once a year. Maybe we will try again next year. Maybe not. This trip was about trying out a bunch of different restaurants and giving honest reviews on dishes/businesses we haven't tried before, or in a long time. Do better guys.
