I am neither vegetarian nor gluten free but this place is phenomenal. The vital cobb was probably the best salad bowl I have tried, not to mention very generously sized. Between the candied dates, smoked almond, rice paper bacon, sundried tomatos, mung beans and tangy creamy dressing, this bowl could not possibly contain any more flavour. If you asked me to choose one thing to eat for the rest of my life, it would be this. Vital root is a casual gluten green, vegetarian (98% vegan) restaurant where you order at the counter but they bring the food to your table when ready. Service was fast and friendly. They have seating indoor and an almost outdoor seating area with heating. It's a fantastic place to grab lunch and can't wait to come back for more. Had a great experience dining here my first night in Denver. It's order at the counter and they bring it to you. The staff is wonderful and super friendly. I got the Sambar bowl and my friend and I split the Yucca fries. Everything was extremely flavorful and innovative. My bowl included lemongrass tofu, cauliflower and a flavorful mint yogurt sauce. I like that Vital Root has a lot of vegetarian dishes that are good being what they are - vegetables turned into flavorful dishes. This is a great place to go when you feel like you need a detox, or you have someone coming to town from a big city with a ton of solid veg spots. We came here on a Friday night. It was busy but there is a lot of seating. We ordered at the bar, got our number, and had a seat. We sat along the bar that opens onto a window on the sidewalk. They offered samples of their desserts, I tried the cookie dough which was exceptional It is a great spot for people watching. I'm still thinking about the banh mi tacos and sweet potato fries. So far I have loved all restaurants owned by the Edible Beats group - this one included! They have so many creative and delicious options and every restaurant is designed to be interesting but also simple and relaxing. We tried to go to Vital Root multiple times and always tried on Mondays - update they ARENT open on Monday! Once we finally got to go it was well worth the wait. We ordered a whole spread of food including sweet potato fries, Korean BBQ veggie wings, pad Thai, a noodle bowl (which may have changed on the menu), and beet brownies. We also ordered a beer and the Beet Down cocktail which was a treat. Overall everything was incredible. I'd say my least favorite dish was the veggie wings which I thought could've used a bit more crunch, but they were still delicious. I'd go back for 15 more beet brownies - I highly recommend those as your dessert! They tasted almost just like a chocolate brownie just not as rich, which is ideal - and you can pretend you're being healthy. Everything we had at Vital Root was something I'd order again. I also enjoyed the format of ordering at the counter and then going to your table to wait. It cut the wait time that often occurs when waiting for busy waiters and allowed you to pick where you sat. I was excited to try this place for its all vegetarian menu, but there are non-vegetarian brunch places that have better vegetarian options. Their drink selection is extremely limited-- for instance if you wanted a fresh-pressed juice, your only option was a bottle from a fridge or a can of kombucha. I ordered the breakfast sandwich and added avocado which was $2 extra. Without the avocado the sandwich would have been too salty and thick, difficult to digest. The pickled veggies on the sandwich were a nice touch though! I was impressed by the fake bacon-- while I don't really remember what real bacon tastes like, it was crispy and added texture to the sandwich. My friend's Cobb salad was HUGE and she enjoyed it, but ultimately said it was "okay." We also got the falafel wrap-- the falafel was nice and crisp on the outside. The wrap itself seemed kind of dry and stale. There wasn't anything special or unique about the wrap, so there isn't really an incentive to come back and eat it again especially when I could get a much better tasting meal at an actual Mediterranean restaurant. It's on the pricey side but for me it's definitely worth it because it's always so good. The sunflower risotto is our go-to and this time around we got the chik'n & waffle (which is more savory than sweet). Portions are just right for us- we never take anything home. Sustainability is key here so if you want silverware and napkins and water you'll need to grab them yourself and also bus your items. Everything is well labeled so it's easy to know what's compost (which is mostly everything) and where to put your dishes and silverware. The space is perfect to enjoy the CO weather. Very few spots where you can't catch a breeze or see the patrons of Tennyson walking by. Lots of fully outdoor spots too. Highly recommend! read more

The fact that it survived in am uber ride from Denver to Arvada is also impressive! Now to the bowl - I luvvv me some Indian but I always end up in a food coma because of a typically oil heavy base. This particular bowl captures the yummy Indian cuisine essence without the heaviness. And they do a pretty good job with the dosa that accompanies it. I also ordered yucca fries which were decent. Couple of things i wasn't crazy about were their cauliflower wings. Dripping in oil. And the Dippin sauces weren't my favorite. All in all a solid place. Most vegan places with high reviews are just vegans supporting the business. That is not this. I had the sunflower risotto and the korean bbq wings. The risotto was varied in textures and flavors, with impressive layering reminiscent of fine dining. And the wings were the best non meat wings I've had, hands down. Usually they get mushy or are soy based fake meat. These were firm and crispy and delicious. The ambiance is worth noting. Covid friendly, on a late summer afternoon it's a great place to relax, hear some low key music, feel the warm breeze blow through, and enjoy good food and unobtrusive service. Easy 5 stars. My friend and I had plans to visit Tatarian right down the street before the governor closed all bars that didn't serve food. I really enjoyed this cafe! It's so great to see a vegetarian restaurant do so well. I loved their chopped salad (with extra dressing on side- truly necessary since it's really not dressed enough) with added "chicken" - so good!!! We also got the fried artichokes - SO DELICIOUS and it comes with their hummus to dip it in! I also tried their falafel wrap and didn't care for it. It was dry and the wrap was funky tasting. Next time, I need to try their Cobb salad, it's about $17 but it is a large size (maybe make into two meals?) so that makes the price a little better. I also tried their hemp cookie but didn't care for that as well. It was healthy so that might be part of the reason why it didn't taste like a normal cookie.
