Wagyu Factory has been on my list for a while, and after finally visiting, I left feeling pretty conflicted. We waited nearly two hours to get in, which naturally set high expectations, especially with the $50 per person weekend price. The meats were excellent and easily the highlight of the experience. Well marbled, flavorful, and exactly what you hope for when coming to a place centered around premium beef. My only criticism is that half of the meats were not labeled, so I wasn't sure what cut of beef I was trying. At one point I was pretty certain I had grabbed lamb, something I do not like - which I would not have known until I tasted it. Unfortunately, much of the rest of the food did not match that same level. The side dishes were just average overall. The wagyu fried rice sounded promising but lacked seasoning and depth. The dim sum selections were disappointing and did not taste particularly fresh. The sushi bar was the biggest letdown. The quality felt comparable to what you might find at a lower tier buffet, with sushi that tasted like it had been sitting out for too long rather than being freshly prepared. It was surprising given the reputation of Chubby Group's other concepts. The wagyu curry also missed the mark. It was noticeably watery and lacked the rich, layered flavor found at their Mikiya or Chubby Cattle locations. For a restaurant at this price point, consistency across dishes felt lacking. On top of that, the restaurant becomes extremely crowded, making it difficult to access food stations comfortably at times. Between the long wait, uneven food quality, and premium pricing, the overall experience did not quite justify the cost. Make sure you come before 7:30 because they did start closing the waitlist, the waitlist does get pretty long.(maybe because it's soft opening) The restaurant was nice, well kept clean and they kept the line of food pretty stocked up/ full. The meats are probably above average for AYCE and the best deal is coming for Monday lunch pricing, which lasts until 5pm. They also include unlimited non-alcoholic beverages. However, the overall experience just didn't impress me. One big difference is that it's essentially all self serve. You constantly need to grab everything yourself and you start asking why you pay 20% tip to servers that take away trays maybe twice and do just one grill change. Another big negative is that I didn't like any non-raw meat options. All of the fried options, noodles, rice, burger, steamed dumplings, egg tart were quite terrible. The sushi was ok, but there was too much cold rice. The food isn't consistently stocked and their A5 slices this time were like 60%+ fat so there is inconsistency in their meat. Plus although some cuts have nice marbling, the flavor isn't on par so the quality isn't there which is understandable since it's a buffet and they would go out of business on good quality. For those who one to try this out, I recommend sharing and piling the meat on individual plates so you know what you are eating and find the cuts that you like the most. But for me it just left me unsatisfied because of the constant self serving (getting things for the family, refilling drinks, making sauces, setting things up for the kids etc.) and lack of other non meat highlights (like desserts, side dishes) to make the experience complete. I'd probably lean towards KBBQ or sushi focused AYCE spots overall. I haven't tried the other Chubby branches but I'm pretty sure this is their lowest tier for quality and service, and I'd absolutely wouldn't sign up for membership for the Wagyu Factory. read more

We actually made a reservation to go to Wagyu Factory in Tustin but we ended up in Brea due to our car's tire situation. That's when I found out they were having their soft opening here, so we moved our plans to this location! Luckily there was still a Wagyu Factory in the area. Coming without a reservation for this one, we quickly went in line right before it opened and there was a crowd already forming. When you hear the name "Wagyu Factory", I thought it was gonna be a huge restaurant, but it's actually smaller and tighter than I thought. At least from what I heard, this location used to be Gyu-kaku? Anyways we were immediately seated and they were only doing bbq, so no hot pot even though it was advertised outside on their banner. Everything was very clean, organized, but it does get crowded when everyone starts going to the meat selection when everything is self-service. Especially since there's not a whole lot of room in that aisle, it does get pretty tight walking through. Starting off with our meal, well the entire meal was very slow due to our grill. The grill would be "on", but it wouldn't have that satisfying sizzle when you place the meat on it. We started off with the short rib, which is one of the fattier ones, and it was actually very slow to cook. It basically just felt like a warmer. After just a plate, our grill was simply not cooking. We had to flag down our server, Thomas, to help us multiple times and asked for other servers for help too. Thomas really tried had best and kept an optimistic attitude, then we eventually had the manager come through to help. He suggested to start off the grill with fattier meats to get the heat ignite, so he got a plate of pork belly. We honestly didn't want to eat just fatty meats all the time, so it kinda sucks that we have to eat it in order to get the fire going... It only helped a little and we were able to slowly continue going through the first round of meats we collected. Honestly, just us waiting and staring out the meat to grill left us feeling not that hungry anymore since we had some of the sushi and snack foods prior to the actual meat. Even when the meat was cooking for a long time (and barely getting to medium rare), the meat was very tough. The best meat they had to offer here was the Wagyu Brisket that we received from the manager. It was very fatty, but that one actually tasted pretty good. Normally we don't even take up the whole 90 min dining for bbq, but we really spent a long time just because of the lower-powered grill. Thankfully, the service here was very kind to honor us dining longer, or offering us another table, and trying their best to make our experience better. Aside from the whole grill issue, the meat selection here wasn't as good as I would have expected compared to Chubby Cattle. Especially since everything is Chubby Cattle is "wagyu", I remembered every meat we selected would just melt in your mouth. I'm not sure if it was the grill experience, but all the meat here were tough af. Only the Wagyu Brisket that we received from the manager, and the rib finger was actually good here. I did ask if Thomas if these were the same meat cuts from Chubby Cattle, but he said it was from Chubby Skewer (which makes more sense). Everything else, sushi and fried food were all pretty decent. I'm most surprised with the lobster roll bc that was pretty good for a bbq place. The corn cheese however was absolutely the worst I had though. It doesn't taste like corn cheese at all, and the corn inside just tasted like it was from frozen corn. The flavor tasted like a fruit??? It tasted like something if you were to use a knife with garlic, and you used the same knife to cut an apple. The apple will taste like garlic. It reminded me of something like that, which it's really a HARD PASS. Anyways, the service here was really nice. Thomas was an optimistic server and really tried to help us enjoy our Wagyu Factory experience. He repeatedly kept checking on us and apologized for our grill experience, which is all understandable since this is their soft opening. I know their prices are cheaper than Chubby Cattle but if I were to pick between the two, I rather just to got Chubby Cattle since they have better meat quality and a lot more variety than here. Came here for the soft opening and was pleasantly surprised - this spot will be BBQ only! Everything is self serve, which works great because there is no wait for the kitchen to bring you anything, and if you just want one more piece of something, you can simply just grab that instead of an entire tray of food! They have an assortment of pre cooked items and I sooo enjoyed the udon noodles and the fried calamari, I went back for seconds of both! They also have an assortment of nigiri, rolls and inari. Mt favorite was the seared salmon with spicy mayo nigiri and the salmon inari with caviar on top- I hope it stays! If can get a little crowded towards the end of the hot foot as it is right next to the kitchen doors. We went through the meal without any incidents though! My favorite cuts were the Japanese wagyu short rib, delicious rich and fatty and their sesame bone in short ribs, the sauce is light and not too sweet or salty. For dessert we opted to grill the pineapples till they were nice and juicy and enjoyed them with the self serve ice cream (chocolate, vanilla or swirl of both). Our server, Cici, was great! Ambiance was pretty chill and music volume wasn't overpowering conversation or anything 6 like at some other restaurants. Food was okay, but there were definitely far more marinated meats than my party was expecting. Also, the location will only be barbecue. They have signage saying barbecue and hot pot, but decided to just do barbecue before opening. They have a soft serve ice cream machine at this location. Hopefully they keep it because I thoroughly enjoyed the soft serve. It was a little softer than normal, but I like that consistency when I'm eating soft serve. Back at another Chubby Group affiliate location. My algorithm started serving me posts recently, so why not make a trip. I will say that I tempered my expectations due to the concept and location size. Unfortunately this concept missed the mark in most categories. We arrived at opening and the servers were staggering intake to allow better customer flow. Service was as expected, which was great for me. I let Thomas know that I have been to a few concepts and he let me do own thing. He was sure to give pointers and suggestions based on customer trends. That really suited this concept imo. Food across the board was average to below average. I was expecting average due to the grab and go nature, but I was left mostly disappointed. Meats were noticeably lower quality than what I would consider acceptable. More than a step down from the other chubby group locations lowest tier offerings. This was the first time I've turned off a grill mid meal. Dim sum and sushi were also a let down. I didn't know dim sum could taste stale. Sushi grade was roughly lower than a small plaza sushi joint. We got lucky and grabbed the last unagi which was great, but doesn't count because unagi is unagi. Did not see a single restock of that for our entire meal. The rest of the rice was tough and I was shocked as she held a roll above the burner to warm it up. Veggies and cold offerings were standard. As were the fried offerings. Unfortunately I did not partake. Ironically here we hit the star of the show with an accompanying miss. My favorite offering was the mini wagyu burger. They put out a few at a time and it seemed like every customer was on the hunt for one. I would rate it a 3 out of 5 and it felt like the most cohesive product on offer. The miss? We saw no lobster rolls the entire time. We held out hope right up until they brought out our bill. As for desserts, I was happy to see ice cream again. Unfortunately it was a far cry from my beloved sea salt at Chubby Cattle. (They removed the machine sometime before my last visit so RIP sea salt.). Sub par vanilla and acceptable chocolate soft serve available. Wagyu Factory seems like it's still trying to dial in the correct tooling. If all the branding was removed, I would assume it was my local plaza AYCE with a $20 lunch special. I hate to say this because I'm a huge fan of the group and concepts. The staff was great, but the concept around them was lacking. If the lunch price was $30-35 ($35 being the original non-member price advertised by the influencers.), I would be more understanding of the lunch quality allocation. However; for the current lunch price of $40 and regular $50 price tag, I have higher standards. I would hit up any other concepts silver tier offerings before considering Factory in the future. read more

A lot of the fried foods were sitting out long enough that they were drying out a little bit and hard when taking a bite. I wish we knew ahead of time that they aren't doing hotpot either. I've visited several restaurants under the Chubby Group, and Wagyu Factory in Brea certainly lived up to the reputation. My daughter and I came in for dinner during the busy weekend rush, and despite the crowd, the service was seamless and the staff stayed incredibly friendly and welcoming. Our waiter, Tri, truly made the night special. He is clearly passionate about his craft and very professional. He steered us toward the "must-eat" cuts and even taught us a great trick: dipping the meat into a bit of salt and wasabi to really bring out the flavor. He was always nearby when we needed something but gave us space to enjoy our meal. The food quality is top-notch. If you're a fan of high-quality Wagyu, I highly recommend getting the membership.
