Ask a native new Yorker to spend $50+ on a pizza pie, I would respond back by laughing in your face, followed by flipping you my middle finger. But ask the same person to have a slice, because someone from your friends group was stupid enough to spend $50+ on it, I'll gladly consider. A friend was DYING to try this place for months. Everytime he tried, everything was sold out. On a slow Wednesday night he decided to give it another go. Tonight night was his night. He was able to pick up a mushroom pie to go. He brought it back to our pot luck party and everyone gave it a try. Everyone from my group had a slice while it was hot. Everyone gave it a solid 9/10. Me on the other hand, I didn't have my slice until 3hrs later. When I finally ate it, the mushroom slice was obviously cold... But man!! It was still crunchy!! Crust was SUPER thin. But holy $shit!!! It was still soooo good! You can tell the pizza masters put time and effort into making their pizzas! Ingredients were fresh and of high quality. I wish had the slice when it was still hot! Ask me again, would I pay $50 for the pie? The answer is an absolute NO. But would I splurge $50 on it... maybe once a year? Absolutely! Friendly counter service. The ambiance gives old school 70 vibes with a few tables and counter space. I tried the mushroom it was incredible. The flavors of the mushroom with crème fraiche, mushroom and onion paired so well together. So delish, lives up to the hype for sure. They don't give any sides like parm etc but it doesn't need help. Arrived at 11:18 to find a line of 13 people ahead of me, 12 minutes before opening. I think they opened closer to 11:35 but hey, stuff happens. I placed my dine-in order at the register at around 11:45 for a 12 PM slot. Ordered the Nduja because I love burrata and balsamic. Picked my seat for 1 on the counters and my fresh pizza got plopped down to me around 12:07. The entire store buzzed with anticipation as customers excitedly awaited their orders. Overheard new and repeat customers talking amongst each other in line and was reminded of the beauty of NYC. Pie is massive. Dough/crust is fabulous and I never usually care for the bread. Crunchy, airy, light, and structurally sound. Nduja's base sauce was great, seems like there's some spice incorporated into it for an additional kick to complement the sausage. Burrata was absolutely creamy and sweet, none of the bitterness. Balsamic was a touch too sweet and overpowered the flavors for me, would've loved a little more acidity but that's a personal preference. You can absolutely feel the care in preparation and quality of the ingredients in each bite. I wouldn't get the Nduja again but would absolutely be back to try the other pies. Seeing a lot of people criticize the price point but I don't think that alone is a relevant critique. It's on par with L'industrie, Rubirosa, etc. and especially for 8 huge slices with quality ingredients? Not unreasonable. Maybe a better critique is their lack of consistency, evident in the polarizing reviews. At this price point and branding as 11 Mad grads, Ceres should be delivering consistent pies every single serving. Also looks like there can be operational improvement in the manual timed-slotting system so hopefully they can figure that out. I was skeptical going in but so glad I tried it and would be back to try more pies. read more

Between the sourdough crust, fresh herbs and the flavor profile this is unlike any pizza I've had before and a different species than Joe's, L'industrie, etc. Highly recommend trying, but suggest coming at an off-hour. Visited Ceres on a Saturday afternoon. There was a line out the door so it took about 25 min to place our order. There was only 2 workers doing it all so it was hard for them to take orders, make pizzas, reheat pizzas, box pizzas, etc. We ordered the tomato pie and added ricotta and peppers and the mushroom slice. The tomato slice was delicious and the tomato had a good tanginess which I enjoyed. I would add ricotta to the slice but can go without the peppers. The best pizza I've ever had in my life no competition. The dough was perfectly crispy and crunchy like a cracker with the cheese evenly melted on top. The sauce was the right balance of savory and sweet with tons of flavor. Crust has the best flavor and crunch. Super nice owners that are friendly and engaging with the customers. Cashier was very kind. Ambiance was open, inviting, and chill with good music. We came right at noon and the line took about 30 minutes to setup reservation for getting pizza at 7:30. Well worth the wait, but you have to make day of it and not come with the expectation of getting the pizza when you first get here and wait in line. Accept that they're super busy and popular. I believe pizza for the most part is personal taste without correct review but I have to give one star for the overall experience including pizza. Charging $40+ for a pie is just absurd to me (and then asking for a tip lol) and how they seem proud of not offering slices. The pick up model and first come first serve I suppose is fair but having tried it the pizza was in no way worth the time, effort and money to eat it. I personally just don't believe in a NYC pizza joint not offering slices. The cheese had no flavor and was so dry with seemingly little tomato sauce. The slice and crust were so thin I was basically eating a cracker. If you really want to try, your best and reliable bet is to just hang out outside and buy a slice from someone since there inevitably will be someone not eating the whole pie. read more

Tried ceres pizza for the first time. Got the cheese pie and spicy tomato pie (alternate to Nduja pie). To be honest, I do not get the hype. Yes it's crispy bottom but that's because there is barely any sauce and cheese. More like toast with a sliver of sauce and cheese. I don't know what Dave portnoy was thinking. I watched these guys hustle kicking out slices and whole pizzas while trying to help customers at the same time. The grind was real watching them trying to make this work. Very very long wait on a Saturday afternoon (like 1 hour) but it really is worth it. The crust is so crispy and cracker thing with very minimal flop because the sourdough is cooked to perfection. It doesn't hold a candle to L'industrie at all or even Chrissy's. Went around 3:30pm with my friend and ordered 3 slices. We wanted to share and asked if we have cutlery, they said "no", or if they cut it in half, one of the owners said "no" and then asked "if we still wanted it". Really rude. Unforgettable. When I was a kid I always came home to a hot and delicious bowl of tomato soup, made by my dad, a military vet. It was simple. Take the can, add water, boil it, break up some saltines, and you're good. He would say "Bon appetite madame" and fold a $99c a bag napkin fancy like. Perhaps even lined my eyes with tears. The first bite.... It was savory, sweet, salty, and crunchy, yet delicate, like a lightly soaked saltine. Loved the pizza here and thought it was worth the wait. We were already in Chinatown on a Sunday and it occurred to us to head over to Ceres around 11:10am to get in line. We ordered at 11:50am and the pizza was ready at 12:35, so we just hung out and ate it fresh out of the oven. We got a tomato pie (stellar) after a group seated ahead of us said they preferred it to both the mushroom and the cheese (they had tried all three). Saw online that we could add ricotta and some pickled peppers to the tomato pie, so we went for it. It was absurdly delicious! The sauce was savory / umami with lots of brightness, the cheese on top was delicious, and the crust was cracker-thin and crispy. We struck up a conversation with the guy next to us and traded for a slice of his plain cheese, which I also loved. We saved the crusts to bring home for later, too. Around 12:55, the cashier called out that she was taking orders for 3:45pm, and the line thinned out around then. If you can plan your day to make the timing work out, it's definitely worth the wait. Cool place with vintage coke napkin dispensers, nice wood accents, plenty of room for in house dining but let's talk about the pizza. These guys are making truly innovative pizza -- light but crunchy, thin but chewy. 0 flop. Tomato pie was tart and funky with grated Parm and some kind of olive oil that was kind of peppery but well rounded. Absolutely delicious. Cheese slice was an interesting take on the classic NY cheese pizza. Sauce was a little more acidic and definitely less sweet than some of the other hyped pizza shops in the city but I love that the flavor had a bit of a bite to it. Also a lot of the reviews on here are critical of the service. When I was in, the line was almost out the door. Two cooks total one prepping orders and one oven man taking orders and cutting and serving the pies. The guy I interacted with (oven man) could not have been nicer. If you look at my photo, you'll see exactly where I think Ceres pizza belongs, in the trash. I find that this place is one of the most ridiculous pizza places I've ever seen, and not in a good way. Yes, sure these guys seem make world class yeast starter & bread. Their ingredients, dedication, execution and processes are as good as it gets perhaps, for baking bread. But in my opinion, they are not pizza guys and this is not pizza. It looks like a poor excuse for pizza. I believe they are using an electric Pizza oven which as far as I know, that brand barely reaches 600°. 500 to 600° is fine for baking bread, I guess, but I grew up working in and eating at Pizzaria's that had gas fueled pizza ovens that easily achieve temperatures over 900° and in some cases were adjusted to eclipse 1000°. Cooking pizza at these temperatures insures among many things- two in particular, 1- a less than 10 minute Cook time and 2 and most importantly - a uniformly crispy pizza. Nowadays these electric ovens like "fast food" pizza ovens that barely get above 500° degrees are just merely baking bread pumping out floppy doughy, soft pizza. I'm not sure if they take longer than 10 minutes to make a pie, but I would suspect even if it takes less time I think there's no way that pizza is coming out crispy. Prove me wrong. For real Pizza lovers like myself it's a sorry excuse for making pizza. I think this is one of the worst pizzas I've ever seen. The price is absolutely extortionate. I don't care what Michelin pedigree employment the owners have, they may know a lot about ingredients, systems and making bread, but seems like in my opinion they don't know enough about Pizza- but perhaps more about making money! and it shows. But hey, Ive hated pizza Una Neapolitana for a decade before they "suddenly" became the best pizza in American I digress, I feel in my opinion there may be reasons why they don't sell pizza by the slice- 1- the nearby competition would be vicious and because 2- if you walked in there and paid five dollars for their slice and walked out, you'd never go back, like Sauce, didn't seem to be able to live up to the hype & (closed). Maybe it's better to get the customer for $50 not $5 before never returning. BUT if the consumer looks at all their advertising on social media and heads over there having waited four hours to pick up your overpriced pizza the wait and the cost could psychologically create a value for people, thinking they got something good- like that bakery I shall not name, that manipulates and manufactures long lines mysteriously "selling out" of the 1 thing they promote on social media people are waiting in line for- forcing them to buy some other low quality baked goods instead. I would sooner head out of Manhattan into ANY outerborough or even New Jersey for just a slice of pizza before ever considering this place again. It's seems like a hole in the wall that they probably spent a fortune bringing back to life, so that's what your $50-$100 is going towards. The pizza is terrible. I think the rules keep changing bc they r trying to figure it out. Went last Friday and this was the protocol: - got in line at 11am. Already 9 ppl ahead of me. - doors open 11:30am - pies only. Ordered a cheese pie at 11:35am. They said come back at 1pm to pick up. They didn't say I could choose my time and I didn't ask. - had an appt at 1 so husband went to get pie at 1. Luckily we live close by. Husband said at 1pm the pick up times were 4:30pm FYI - I did have to heat up my slices on pizza stone in hot oven at home. I had to think about it but I do think this is very good pizza. You have to like a drier pizza though. (Lucali cheese is my number 1, Una cossaca is my number 2) So I do like a drier pizza style. The cheese is very plain but there is a depth of flavor that's unique and I would say a certain je ne sais quoi that is hard to describe. It's a giant pain to get this pizza though and requires hours of effort. Having heard about this place being outstanding by some, while others thought of it as trying to be novel but perhaps coming short, I had to give it a try. First off, the line was incredibly long. Talking to people on it, it was everyone's first time trying it and nobody left despite the wait being over 25 minutes. It shocked me how slowly the line moved. There are just two people working here. The guy at the register was stalling the process by using his hands to rip pieces of pizza apart. Why this establishment cannot afford a sharp slicer, we may never know but these antics will surely not last for more than two years before it gets shut down when people get over the fad of this overpriced pizza shop. A pizza shop, sure, it definitely is, but it not a pizzeria. The slices are "cheese", tomato, white and there's one with sausage. As others have commented, they weren't sure if it's worth paying up to $63 for a pie. But if it's a life changing slice, or even top 5, even if it were similar to L'Industry, Grimaldi's, or Original L&B, but with a slightly different take, like a sprig of basil, I'd say it deserves at least three stars for effort while they work to improve and become more efficient. Basically, I really gave this place a shot, and didn't let the long wait deter me, despite "$5 Coke" shamelessly flaunted on their menu. As I got closer to the checkout counter, the cashier and pizza handler was mumbling loudly as he continued teasing apart slices with his hands, resorting to ripping them apart, bending his knees saying "not good enough, needs to be better." Meanwhile, one of the business partners, who had two pizzas in his hand, came over to request two more, lauding the men for the free dinner. Fortunately, the pizza maker, the second employee working there, clearly knew how to make pizza. He worked relatively expeditiously, added toppings without OCD antics, and even used sourdough starter. It was my turn to order. I ordered the mushroom and "cheese" slices. The mushroom was clearly inspired by the artichoke slice at artichoke, with their creme fraiche, which tasted more like what you'd find on top of a subpar burrito to mask old meat than anything else. The mushrooms were not canned, which would have been acceptable, but they were also shriveled and not fresh. Part of the slice tasted watered down- yes, there was water added to the mushroom topping. The other slice was topped with parmesan reggiano cheese. While these slices have more breadth than $1 pizza, they are in no way remotely special or worth their price tag with or without washing one down with a $5 pepsi or $5 water. The cost to take a cardboard box with you is $1.50. Unfortunately these boxes will not even keep the pizza warm in cool weather, as there are holes in them with the letters "NYC" carved out. You can get a slice of pizza for the cost of a lousy box here. The atmosphere is dull for a restaurant and superficially spry for a pizza place. Quality speakers play subpar music. Faux wood features line the sidings. Overall, expect not to taste any hints of sourdough, any remotely entertaining ingredients, notable cheese or sauce, or fresh ingredients. If you are entertained by long lines formed by to food that looks better than it tastes and antics that slow down the food ordering process, this is the place where you'd go. read more

If you're into pizza, Ceres is a must-try. They usually sell out by around 3pm and only sell full pies, so definitely plan ahead. We went because of the hype and Portnoy's rating, and it absolutely lived up to it. The system they run is smooth--you put your name down, come back about 2 hours later, and your pie is ready.
