Panxa Cocina fit all of the above and the entire squad left the restaurant raving about their experience. Our crew shared a bit of everything fried squash, queso, ceviche, enchiladas, and their verde chilaquiles with over easy eggs and chicken. Each of these items were delicious, but I'd return for the ceviche and chilaquiles. The ceviche was a delicious mix of sweet and salty. Their tortilla chips are made fresh in-house and paired perfectly with the fresh cut fish. I was also impressed by their cocktails. With family in town, we visited a number of fan-favorite restaurants across the coastline. Panxa stole the show for best mixed drink: the watermelon margarita. Excited to live so close and make this a consistent haunt.

My favorite dish was the birria, with the salmon ceviche as a close second. The mole was great too, but I'd say the other two dishes were more memorable and something I'd return for. I can't recommend the birria enough, as the flavors were reminiscent of what I've had in Mexico, very authentic. The space is small and can feel a bit tight, but sometimes the best food comes from these types of "hole in the wall" places. Ultimately, I'd say give Lola's a try! What's the point of getting the salsa with the meal when we wanted to enjoy it with our chips beforehand? They also used to offer free horchata refills, but apparently that is no longer the case. Unfortunately, they also got our food order wrong. We specifically ordered beef enchiladas, and my husband repeated the order three times, yet we received shrimp enchiladas instead. Overall, the experience just isn't what it used to be. It feels like they are nickel-and-diming customers for everything, even something as simple as salsa or a horchata refill. I understand they are renovating the front of the building, and perhaps the cost of the renovations is contributing to these changes, but the customers shouldn't feel the impact of that. The staff at the front may look nice and presentable, but unfortunately, the overall service doesn't feel as customer-focused as it once did. At this point, I would recommend looking for another restaurant where the service and hospitality are more consistent and where you don't feel like you're being charged for every little thing.
