Excellent!! We came to see the lights and wanted to try Chop Shop, it did not disappoint. Pulled pork sandwich was unbelievable. I also tried the cauliflower mac-n-cheese which was creamy and delicious. The kids had the student special which was a sandwich, side, and drink. They chose the tri-tip and said it was very tasty. There is not very much seating at the restaurant but we were able to stand at the counter. The waitress said the restaurant is designed to be an order out concept. This is a great idea unless you are visiting from Boise. We will definitely go back, most likely in the summer when we can sit outside. read more

Excellent BBQ and restaurant. Chop Shop has really upped the game in Caldwell with its Boise style cuisine. The pull pork is moist and flavorful; just excellent...as is the Tri Tip albeit personally I would have liked a deeper smoke flavor/ring to it. Excellent and creative sides such as the butternut squash mac and cheese and the must order, sweet potaoes. Staff is super nice and friendly... It is a rather small place so be prepared to wait during busy evening's but they are planning on a patio for the summer which will be an excellent addition and have more space . They are a farm to table establishment and is a unique and difficult business model but is beneficial to all local businesses. A MUST dining experience while in Caldwell. read more

This place is amazing I wanted to eat and wanted bbq and the closest place was Chop Shop. The service was amazing and the owner was super interactive! The Mac and cheese was delisious and if the kids knew it was healthy they probably won't have eaten it but after one bite they loved it and the chef told them it was the first healthy Mac mad cheese! Some of the family doesn't like veggies so after we figured out that it was butternut squash we could not believe it and we will be definitely going back! read more

What can I say? Caldwell has needed a place like this forever. It is so nice to have a place with great food with no wait. Boise is a zoo for reservations so this is worth the drive IMO. Starts with service friendly and courteous 5 stars there. Food came out fast. I judge a place on the pulled pork. I see it as a cornerstone of a great BBQ place. Sauce was awesome my only gripe is the bread. Some people are into it but the meat is good enough to be pair with a slab of white bread and still be a great sandwich. Of all the BBQ I have ate in Idaho this is by far the worst. I ordered the bits, and the riblets were nearly all fat. I received one wing and two literal spines. The chili cheese fries were beyond mediocre and the pulled pork probably would have tasted better bought frozen. I would be hesitant to even feed this to my dogs. read more

Checked this place out for the first time today. Staff were all super friendly and helpful, decor was simple but effective, and food was good. I had a craft beer suggested by the gal taking our order and it was great! Would like to see a few more side choices, especially maybe some vegetables. Well let's just say first class service and the food was even better. Tasted the lamb, brisket, ribs and yams. Each food bold individual taste. Many times I've been to places where the taste overlaps between the meats. Not here. Loved the yams which is rare for me since I grew up with deep south cooking. When I say service was great, it was. First time here. And what an awesome treat! Had brisket, with potato grenaded, collard greens, and butternut squash Mac and cheese. First...the meat was fantastic. Most BBQ joints have a tendency to smoke their meats for so long, it ruins all the flavor and just makes for a mouth-numbing sloppy mess. These meats are on point! The sauces offered are a Carolina style, and a Kansas City style. Both make their own statement as an original, and not just a copy of someone else's. They are thick, rich, and tangy, and of anything, a little on the sweet side. The collard greens were done well, and to me were good...but needed a little more flavor to achieve greatness. The Mac and cheese was great! Thick and cheesy, with just the right consistency! The butternut squash added a subtle flavor profile that was absolutely complimentary, without taking over the dish! It's great to see a man that truly loves his work, and takes pride in the food he serves. It adds something intangible that makes a meal so much more satisfying than the same-old, same old just being pushed out to pay bills. Not so great the second time. Went in about 9 pm on a Saturday. Five of us for dinner an hour before closing. Not good. Burnt ends were so dry you couldn't eat. The pulled pork was dry as a matter of fact the only thing that wasn't dry was the coke. Service bad I had to ask for everything, salt forks napkins. AMAZING FOOD! We sat at the bar looking in on the line at it is clearly the best seat in the house! We did smoked wings, curry fried cauliflower, a triple decker grilled cheese with brisket and sampled some awesome lamb and beef heart sausage, potato grenades, several sauces and some head cheese to die for. Excellent BBQ from Chef Kristopher at Chop Shop. I had pulled pork that was nicely smoked and perfectly juicy without being mushy. Spouse had tender brisket--again, perfectly done with a nice smoke and crust. We have eaten BBQ at many places including smoking our own meat, and this was most definitely NOT "reheated meat", as one reviewer wrote. We tried both sauces, Chop sauce (North Carolina-vinegary, my favorite) and Cadillac (Texas BBQ sauce, not overly sweet and with good mesquite flavor). For our sides, yummy soft rolls, an interesting and delicious chipotle coleslaw that wasn't too spicy but with just the right kick and crispness, and butternut squash Mac and cheese, which was tasty and like the best comfort food you can have during a pandemic.....but then.....they had a special dessert in the menu this evening: salted caramel bread pudding and wow! I'm so sorry if it's off the menu when you read this--it was truly a perfect end to a really delicious meal! These were all large portions and this was only about $40 for 2 huge meals and dessert! I really wanted to like this place, and the very nice people tried very hard to find us something we would like, by bringing many different sides for free after we said we couldn't eat the coleslaw. Here's the basic problem; this is a BBQ restaurant that tried a bunch of very unusual taste twists and they don't work. The deep fried potato curls were an exception, and they were excellent! They were thicker in the middle with soft, starchy potato flavor and narrowed to a sharp edge that was just the right amount of crispy goodness. The brisket had a good bark that tasted of a simple salt rub, but the brisket was very dry, too tough, and my coat had more smoke on it from being in the restaurant for 30 minutes than the brisket had. Here's the bad news. The citrus coleslaw had a pronounced weird flavor that made it inedible. Based on the color and flavor, maybe they put some of the "Texas" BBQ sauce in the coleslaw. The Texas sauce also was inedible. The beans were ok, but also had a strong off- flavor. (More of the sauce?). The Carolina sauce didn't taste like any sauce I've had in either North or South Carolina, but it was good. The butternut squash Mac n cheese was ok, but not great, and the deep fried curried cauliflower did not go well with BBQ. By the way, the mediocre brisket is $34/lb in Caldwell, ID, and I just got back from eating at the top 6 BBQ restaurants in Austin, TX, (ranked by Texas Monthly), and the highest priced brisket was $25/lb. I realize Caldwell is not Austin, but... Suggest you go here for a beer and a pile of fries, and forget the rest. read more

Horrible experience. Bad prices, for bad food, small portions, limited options. I customer service. They kept blaming it being busy, but it wasn't. Just poorly managed and nobody knew how to work together and efficient. Had to clean off our own table, the trash can was full and invested with flys on the patio. Smoked meats: beef brisket, tri-tip, St. Louis style ribs, pulled pork shoulder, and lamb shoulder. Avant-garde style barbeque, don't expect Texas style barbeque. Meats were smoked well and the pork & lamb were excellent but the brisket was slightly dry. The St. Louis style ribs are too fatty for me, which is typical; I prefer the leaner baby back ribs. There are two styles of sauces; a spicy and sweet (much too sweet) red sauce and a mustard & vinegar red sauce (NOT a Carolina mustard sauce) which was acceptable. The sides/appetizers are different; I had the butternut squash mac & cheese and it was good, and I don't even like butternut squash. Wife didn't like it however. The scoop style fries looked good but we tried the potato grenades which are mashed potatoes deep fried like hush puppies and we did not particularly care for these. The music is loud with classic rock & roll from the 70's with a sports bar type audible atmosphere (there are no TV's). There is very limited seating; the two large tables are shared and some bar stools at the counter and small bar in the front. Not what we are looking for in barbeque but I can see how others would like it. read more

From when I walked in through the doors and the excited greeting we hoped that the food would match. Well it exceeded it. We were Very satisfied with our meals.
