When we arrived, the parking lot was pretty small and seemed like it could fill up quickly during peak hours. We had to wait about 5 minutes for a table to be cleared before we could be seated. Once we sat down, I immediately noticed how sticky everything was! The table, the menus, and even the soy sauce (or "shoyu" for all my Hawai'i people) were noticeably sticky! The booth seats were also cracked. Luckily I was wearing long jeans so it didn't bother me too much. Normally, I don't mind a little noise, but the restaurant was extremely loud. Everyone around us seemed to be talking at full volume, to the point where we could hear entire conversations from other tables. It definitely took away from the overall dining experience and vibe. As for the service, it was underwhelming. Our drinks were never refilled, not even once, and we had to go without refills for the entire meal. I also noticed some of the staff eating behind the sushi bar while they were still working, which I found a little off-putting and unprofessional. We started with the garlic edamame, which was loaded with garlic, something I personally love. Unfortunately, the edamame itself was mushy and overcooked. We also ordered a shrimp tempura roll, combination fried rice, and a bulgogi bento. The shrimp tempura roll was decent and ended up being the best dish we ordered. The bulgogi bento, was VERY sweet, a little too sweet for my preference. The salad dressing wasn't anything particularly special, and the tempura was just okay. Overall, I really wanted to love this place, especially because I'm always on the hunt for good sushi outside of Hawai'i, but unfortunately, the food and overall atmosphere didn't quite meet my expectations. There were some decent dishes, but I don't think this will be a spot we rush back to.

So when something actually works, it hits different. That's how I stumbled into Sushi on the Fly. Fresh off a less-than-inspiring experience elsewhere, I walked up and immediately spotted two beautiful words: Alaskan Amber. Right next to it? Alaskan White. Now we're talking. It's like being a kid again, eyes lighting up at the candy shelf except this time the candy comes in a pint glass and takes the edge off TSA and delayed departures. And then there's the bartender. Laser-focused. No wandering, no guessing, no existential crisis behind the bar. Just a guy who knows exactly what he's doing. You need another drink? He's already halfway there before you finish the sentence. It's a rare thing in an airport someone with one job, doing it well, and not trying to reinvent the wheel while doing it. The place itself is split into two sections, giving it this low-key, tucked-away feel. Not slammed, not chaotic. Maybe people haven't caught on yet, or maybe this is where you go when you've had enough of the circus and just want a moment of peace before boarding. Either way, it works. Now, I'm not a big sushi guy but if you are, this looks like your playground. Clean presentation, everything looking tight and dialed in. No red flags, no mystery fish vibes. Just a well-run machine humming along in the background while the rest of the terminal fumbles through the basics. And the bar? Fully stocked. We're talking Patrón, Don Julio, and everything you'd expect from a place that actually plans ahead. No "we're out of that" nonsense. No waiting. No stress. Just quick, clean service. Big screen TV, solid drink selection, and a staff that looks like they showed up ready to work not just pass the time. It's not trying to be flashy. It's not pretending to be something it's not. But in a place where so many spots miss the mark, Sushi on the Fly quietly delivers. And sometimes, that's exactly what you need

Service is friendly and efficient, the kimchi portion is generous, and the sashimi, actually, is quite decent. The sushi was, like previous visits, not great. Alaska is known for seafood so I keep coming back here, especially on shorter trips when there isn't time to leave the airport for a proper meal elsewhere, and to that end, they do the job.

For me, coming here in the future my place will be at the bar with appetizers. Bar environment is 5/5 As far as the rest goes I think the food is good, not spectacular. 3/5. In the future I think I'd come for an appetizer and a couple of drinks and that's it. I felt the veal was tough on both ordered plates and potentially I would have preferred chicken. That being said the sauce was great. The grappa sauce had amazing flavor and the Marsala sauce also had great flavor. Plus the funghi appetizer was great with the bread. All of it was enjoyable enough for a return visit. This spot has very friendly staff, they move at a classic Alaska pace. Meant for sitting down and enjoying the company of someone you're eating with but not designed for getting in and out the door quickly. Come with the intention to get things as they come and enjoy the ride.

Both are packed with flavor. Whether ordering in or ordering to go, keep in mind it takes quite a while--almost 10 to 15 mins--for the staff to make your sandwich, so I wouldn't recommend that you stop here in you're in a hurry because you're not going to get it out fast. In this case, call ahead about 30 mins or so if you're picking up. The prices are a little high, but it's worth the price for the quality of the food you're getting, which I can't say for most restaurants in the present era (2020s for those that are reading this in the 2030s and 2040s, if this platform still exists then lol!) Either way, the quality is HIGH and the flavor factor? HIGH! The Classic Piadina is very fresh tasting and comes with greens. It only comes in one size, so it's a little small for me. Still delicious! The Nonni is a pretty large sandwich, if you're getting the full sandwich. The onions combine with the meat enhances the flavors. The building that Originale is in presents itself as a very quaint and relaxed lunch spot with bright colors and large windows. It's a place you can go to sit and talk with friends. I look forward to trying more of their sandwiches.

I went with the "Favorito," and let's just say, it instantly earned its name. The prosciutto cotto was pure-savory-bliss-melt-in-your-mouth good. And the focaccia- fresh, herby, and perfectly balanced in thickness. It hugged the fillings just right without stealing the show. Also, the tomatoes- I did not expect them to be so buttery and delicious. I may have paused mid-bite to appreciate them. Yes, I'm that person. As a die-hard cheese lover, the little bonus cube of cheese on the side felt like a tiny gift--like the sandwich was giving me a wink and saying, "Hey, I see you." Originale, I'll be back. Probably sooner than I should be.
