We ordered the Totchos and we had to fish for the promised tri-tip in the sea of nacho sauce topped with real, cold cheese. We also waited at least 45 minutes to receive our fish and chicken tacos that were bland, and well, okay. The dressing was good, fresh and savory, but we're still confused to what took so long. Update: Went here again with a different experience. Calamari was super weird and gross. All kinds of weird little bits - not really sure what we were eating. We did order the phõ and it was good, I'd go back for that. Also got the fusion baller bowl - next time I'd get the salad instead. Yes yes yes. Finally good food! We got the calamari which tasted fresh and came with great sauce. I got the fusion salad with tri tip which tasted so fresh and the dressing was on point. This was a fun place. It's a little loud, but it makes for a private conversation right?? Fusion is more of a bar atmosphere so you might not expect the food to be much. I am here to tell you the food I had tonight was top notch. I had pho and my wife had the seared ahi. Her tuna was flavorful and moist. There were several sauces on the plate that went very well with the dish. My pho has chicken beef pork and shrimp in it. The broth was super and there were just the right amount of rice noodles. I have to admit, I did not have high expectations for this place. How do you combine a bar atmosphere with pho, calamari, ahi tuna, burgers, hot dogs, tacos, and breakfast burritos and execute any one of those things well? And in the middle of Redding of all places? Well, somehow these guys figured it out! We stopped in as we were passing through on our way to Portland. This is a no-frills bar set up close to the highway, with plenty of televisions and a pool table for added entertainment. I ordered the pho, which normally comes with multiple different proteins, but was able to customize it to my liking. It had a rich beef broth with a nice flavor and perfectly cooked rice noodles. My husband ordered the calamari, which he really enjoyed with the seasonings it included. The kitchen got a little slammed so we waited for our food for a bit, but the manager kindly took off one of our drinks for the inconvenience. Very kind and unexpected gesture. Went to fusion tonight for a unexpected visit because they were having a DJ and a few drinks. We regularly attend Fusion for food and events. However, tonight we waited for 30 minutes just to order a few drinks and were ignored by essentially 4 bartenders. They seemed to be serving people they knew well only first. A complaint was made and one of the owners stated that they only cater to people they know really well and feel will do well for their business. They have lost my patronage and anyone else I know.
