We've dined there dozens of times - the food is consistently good, the portions are generous and the service is always warm and friendly. This is my favorite restaurant in Castle Rock! The El Mayor margarita, is the best margarita I've had my whole life! They also have amazing food! Had to wait until the next morning to write my review because HOLY MARGARITAS!!! Had two and was TOASTED. Be careful! LOL this place was kick ass. We moved to Denver not long ago from phoenix and have been struggling to find a place with good salsa and beans. This place had BOTH. The "first salsa" was so spicy, we didn't ask for "the other salsa". YUM. The beans were so delicious, I ended up ordering an extra side. It was really close to closing, so that may be why, but they brought me out an entire plate of refried beans. Guys, I was in heaven. BONUS: they have queso dip (usually impossible for this midwestern girl to find out here in the west). This place is the bomb diggity! I eat here at least 2 to 3 times a month. My favorite dish is the all beef Mojlcahete not sure if it's spelled right. A friend of mine lives in Pueblo and I live in Boulder, so Castle Rock is pretty central for us to get together. We were going to see a movie at AMC and gave ourselves about 1:15 to eat (AMC Castle Rock is only 7 minutes from this restaurant, so a great pre-movie dinner spot). They had our drinks, food and check paid for in a very timely manner, so we easily made our movie! It was also Christmas Eve and they were open until 8pm! I got a vegetarian burrito and my friend got a chicken quesadilla. We both LOVED our meals! Heck, even the free chips and salsa were fantastic. We each ordered a Cadillac Margarita and were not disappointed in those either. The prices were great, the service was great, the food was great. I highly recommend this place. read more

The food is great, but we come here for Alonzo ("Al") and his daughter. They are great servers. Al even brought out a taster of about 3-4 sauces so I could see what I wanted. I would love to give it all stars for its great customer service, we had a very friendly gentleman who was our waiter and provided exceptional service. I just wasn't too keen on the food, it was a little bit mediocre for me but I'm used to California style Mexican food and love authentic steak tacos. The chips are great I could use a little bit more spice in the salsa those are provided free when dining in. The shrimp cocktail is good and that's probably the only thing that I really liked. My husband and I met another couple for dinner this past Thursday at Guadalajara. The restaurant was lively at 6:30 and our friends were already seated. Their menu is large with all the items you would expect in a typical Mexican restaurant. Our server took our order as soon as we were ready and our food came out incredibly quickly, given how busy they were. We shared the mixed fajita platter which combines beef, chicken, shrimp and mushrooms. The portion was very large and more than enough for the 2 of us to share. Served with rice, guacamole, lettuce, cheese, sour cream and your choice of tortillas (corn or flour). I believe our entree was $20. While we stayed and visited with friends the restaurant emptied out. By 8:30 it was nearly empty. We felt no pressure to leave which was appreciated. Solid choice if in Castle Rock. read more

This place was surprisingly good. My husband ordered the two-burrito special and I had the chicken enchiladas. One of his burritos came out wrong (chorizo, not beef), but he ate half of it anyway. Still, they brought him a fresh one, correctly prepared, free of charge -- even though we just boxed it for later. I mean of course. That's just good business. Still, I was happy to see it. Guadalajara's has inviting decor, friendly servers and a huge menu. I would describe the flavors as somewhat Tex-Mex meets homestyle Mexican cuisine. I usually order a combination plate because I can't decide on just one entree! The flavors of the individual items comprising the combination often end up muddled and a little lost in the copious amounts of cheese. On my last visit, the rellenos were overwhelmed by a heavy cheese flavor which drowned out the green chili flavor from the stuffed pepper and green chili sauce. I think I'll try their avocado tostado next visit and avoid all the heavy queso. Four stars for Guadalajara was a bit of a stretch because, IMHO, the flavor of the food is a little lost to cheese and not bold/spicy enough. Not an easy call because many of my friends really love the food here. I feel the peer pressure. :-) Regardless, this is one of the best choices in town for a sit down Mexican meal. I DEFINITELY recommend everyone in Castle Rock give Guadalajara's a try because it is one of the best options on the local scene for Mexican food and their margs and salsas are pretty darn tasty! Very disappointed in the whole experience. This is the first review I have ever written. We were a party of 7 ( 4 adults and 3 kids. 8years, 6 years and 15 months)and were told we had a wait of 30 minutes when we got there. 40 minutes later we asked and they said it would still be a few more minutes. Asked several more times over the next 20 minutes and similar answers were given. After an hour, they tried to move a table against the end of a booth to fit us in. That didnt work because the table had legs that blocked the booth. There was a table open nearby that had 8 seats and we asked if we could just have that one. They said no and after another few minutes we were finally seated in the back at an identical table with 8 seats. This whole time while we were waiting, other parties came and went. Several were about the same size as ours. After seated, It took about 10 minutes for our waiter to greet us. Another 15 minutes before we ordered food. 4 of the 6 meals were wrong when brought to us. A couple of the burritos that were supposed to be different looked the same inside. By this time we had been there about 2 hours and had still not eaten yet. We just asked for the food to go because we were all very frustrated and really not hungry by this point. ( It was now after 8:30pm). They did remake the burritos for us. No apologies were given at any point. Maybe just an off night? Not sure. Will never go there again. We have eaten there maybe 5-6 times over the past 2 years. Always was just an average place. I do hope they look into better flow of getting people in and out of the place and serving better food. read more

This was a just-okay dinner for me. The vibe here is a little weird for LBGTQ members- I definitely got some stares. But, for the food: The chips were cold, the salsa was SPICY, but the fajitas were pretty tasty. And, I didn't mind at all the fact that my partner and I could share 1 dinner so it was an under $10 meal. My water never got below halfway empty and I felt full when I left. I was apprehensive when I pulled in because the outside of the building is a little worn and the surrounding area doesn't seem very nice. But the food and service was overall good so I would come back. Was seated immediately and started off with salsa and chips. The salsa is not your typical thin red salsa, it is darker and much more flavorful. Honestly probably my favorite thing about my lunch. My friend ordered a shrimp cocktail which was interesting. It came out in an oversized glass with plentiful shrimp, cilantro, avocado, and seasoning in a thin, red marina sauce. I tried it with supplied crackers and it was pretty good. For my entree, I opted for a loco burrito. Um this burrito was astoundingly large. Seriously, it was bigger than my forearm. I was a little disappointed with the lack of flavor though. It wasn't bad but just needed something. Plus, the rice and beans were very dry. The service overall was better than average. Drinks refilled, plates cleared, and so on. The service was outstanding and the quality of the food was the closest thing to authentic in Castle Rock and Colorado Springs. Strongly recommend the Chile Relleno Crujiente. The chicken mole verde was exceptional. The pumpkin seeds with Mexican spices were a perfect match. I asked for their sautéed vegetables instead of the beans and rice. Manager was extremely rude! I really didn't think that I'd be charged $12 for a bean and cheese burrito. A crappy burrito at that! The beans were super watery! Because it wasn't a menu item they charged me for a beef burrito combo with added charge for cheese! I've never seen a manager let a customer leave unhappy without any concern whatsoever. I really felt discriminated against. I just don't understand why they were so rude and almost preferred that we didn't return. My wife and my two daughters will not be back and encourage other Castle Rock residents to eat somewhere else! On a side note this is my first yelp review.I always go to the manager first and I think that's how it should be. If the manager than has no concern for the customer, that's when the review happens. My family and I love this place! We are Southern California natives and miss the southwestern style of Mexican food (just say no to Tex-Mex). The carne asada is outstanding, and so are the enchiladas and menudo. The rice is a little dry and fluffy, but that's how my Nana (from Mexico) made it so I am in heaven. The refried beans are and tortillas are also as authentic as I've found in Colorado. The employees are always very friendly and ensure that drinks and chips are refilled before you have to ask for it. The décor is nothing fancy, but that's how a traditional Mexican food place should be. The focus is on hanging out and eating good food, and not on creating a trendy environment where prices are high for basic food staples like rice, beans, and cheese. In all, my family of five can eat well for $40 (2 adult meals, 3 kids meals). This is our favorite restaurant since we moved to Colorado over six years ago. read more

Second visit not nearly as good as the first. Menu says 2 for 1 happy hour on margaritas after 8pm, but this is only on minis, not the one you get when you order the "house margarita." Why the trickery? Margarita just average, nothing special. Food the same. Server said his favorite was the burrito Loco so I ordered it. It certainly wasn't "smothered" with green chili and cheese as the menu stated. The green chili was virtually nonexistent and had no heat what so ever. Disappointed. The size was good and chicken was quality. A healthy dish in my opinion, if you eat half. Ruce, beans, chicken, cheese, lettuce, traces of tomato, guac, and sour cream. (Chipotle better). My husband had duo of cheese enchiladas and soft relleno. Relleno I didn't prefer, too much egg taste and no heat. Enchiladas Divorce ( divorced enchiladas) were terrible. Drowning in sauces so you can't even find the actual enchilada. The cream sauce on an enchilada filled with white cheese was just gross. White on white was a gross combo. Not sure what mystery meat was in the one they were calling "ground beef". Looked like hash? Shredded chicken could have been better if it wasn't drowning in green sauce that looked like baby vomit. Staff is friendly but a bit disorganized. We ordered from the lunch menu: bean tostado and beef enchilada plate; beef tostado and beef enchilada plate and a taco al carbon off the side menu. Our food arrived quickly, but instead of a bean tostada they made a bean enchilada. Huh? Too weird for school. Then they made me a beef tostada instead of the bean tostada. Okay. Kitchen mix-up fer sure.The whole plate, filled with bland refrieds, a tangy and sour coleslaw and even-more-bland rice was a predictable pile of mess. Too bland for my liking. Such a great staple in the Castle Rock area. It's cycled through a few renditions before becoming Guadalajara's but this is mid-range priced Mexican food that is solid, consistent and great for when you need a fix. The salsa and chips are accompanied by a mushroom ceviche that is absolutely to die for - be sure to ask for it. Fresh, full of lime fungus cilantro goodness, I could eat this with a spoon and be perfectly content. The main entrees aren't cutting edge but the ingredients are fresh and the menu is ENORMOUS. My go to is the Chicken Mole Enchiladas - again, nothing cutting edge but tasty and consistent.
