I was only impressed by the margarita I had here. The chips and salsa were just like every other Mexican restaurant so no problem there. The entrees were just very under-seasoned (bland) and the melted cheese on top tasted like the stuff that comes out of a can. read more

Came here for dinner! Our waitress was rude and was disrespectful to my mother. When we were asking for clarification on their menu she was non-responsive and when my mom tried to talk to her she cut her off and was dismissive. We had to send 3 meals back for poor taste and not being what the menu described it. When we asked to speak to the manager, he came over and did not say anything about his waitress's behavior toward us. When we told him about the food having poor taste, he asked if we have ever been there and we said yes and he said well it's the same chef and the same food, so there shouldn't be a problem. First time, last time. Filthy carpet, inattentive staff with the exception of the salsa guy. He was the only one making rounds with purpose. No one asked how we were doing after the bland, unseasoned food was delivered. I had the three way fajita combo (beef, chicken, and shrimp). Honestly a complete waste of money. The food was horrible. Let me start off with saying I have NEVER been to a Mexican restaurant that uses store bought tortillas for its dishes. I got a simple chicken quesadilla, and it sucked. They made a cheese quesadilla, then put the meat on top of a tortilla under that. It fell apart, and was so hard to eat. We ordered a bowl of queso. Or just plain ass melted cheese with a scoop of green chilis. The service was super slow. We didn't get silverware till about ten minutes after our entrees. My brother ordered fajitas that were so bland, he only ate one and wasted the rest. Loss of 20 dollars right there on JUST fajitas. Our two quesadilla meals was 45 dollars. I'd avoid this place at all costs. They're sweet, but so slow, and the food was so bad. read more

I had the Caldo de Pollo (chick' n soup). Perfect for adjusting to the altitude here in CO. Came with plenty of fun sides; chopped jalapeño, onion and tomato, rice and cilantro. Huge chunks of chicken breast, zucchini and carrots. Came with a big bag of chips too, don't forget to ask for extra salsa, really good. Went here for lunch - suggested by one of my friends. Do not be put off by being in a busy road and the the outside. It was worth the 45 minute drive and I will be coming back soon to try some other items. There is something for everyone on the massive menu. Great Mexican food especially the mushroom appetizer. Gluten-free and vegan options. However, the last several times I have gone there is an excessive amount of salt. My dining companions enjoyed their steak Jalisco, chicken with cream sauce, tacos, and I had the Siete Mares soup which was delicious (huge portion!) The soup was served with a generous portion of seafood including a set of crab legs to be cracked. The adults enjoyed Ultimate Margaritas, which were served in a cocktail shaker with coupe cocktail glasses. Visiting the Castle Rock area from the Pacific Northwest, there were two things I HAD to do while in Colorado: 1. Get some sun and, 2. Have Mexican food. Guadalajara's was great for fulfilling the second to do on my list and had the added bonus of friendly and fast service! We ordered some extra guacamole to go with the complimentary chips before our meals were served and it seemed nice and fresh. I ordered the Manuel Burrito because I don't like a lot of "extra" stuff on my Mexican food and it was pretty perfect for me -- meat, beans, and rice all in a huge tortilla and smothered in cheese. Out of our party of 4, everyone enjoyed their dishes. They do have a large menu so anyone who goes can probably find something they'd enjoy. If I weren't so stuffed from the burrito, I would have liked to try the sopapillas, but perhaps on another visit... Honestly, if this place were local for me, it would probably be a go-to to fulfill a Mexican-food craving! Oh, and the meal for 4 people was under $40 -- added bonus! read more

Some of the reviews I read made me concerned about trying this place. I can happily say most of the 1 star reviews are bogus. Is the food the greatest ever, no, but is it better than the other Mexican food offerings in Castle Rock? Absolutely. Highly recommend the margaritas and both of the combination plates my wife and I ordered were good. We joined friends for dinner at Guadalajara in Castle Rock on Thursday evening (1/12/17) at 6:30. The parking lot was full and the restaurant was busy (but, no wait.) Our friends arrived before us and were waiting with drinks in hand and chips/salsa on the table. They had the house margaritas which they said were too sweet. Our server greeted us promptly and we ordered our meal within a few minutes of being seated. Equally promptly the meal arrived. Service A+ My wife and I shared fajitas (beef, chicken, shrimp and mushroom) and a single cheese/onion enchilada. The portions were very generous and the "plates are hot" - just like you would expect. All of the meat on the sizzling fajita plate blended together and I couldn't tell a piece of beef from a shrimp. The flavor was decent but everything was overcooked. The associated rice, beans, cheese, guac, lettuce and sour cream was generous and the tortillas were store- bought (boring.) The enchilada was OK but seemed to be lacking in seasoning and onions. Food C- The combo fajita plate was $20 and the single enchilada (no rice and beans) was $4. The price was right for the quantity of food but wrong for the quality. Pricing C- Overall our experience here was average. Conversation with our friends (I know this doesn't count) and the service bumps things up a notch... There is better Mexican food in the area... read more

The food here is not that great but the service was awesome. I had the chimichanga and it was really bland and didn't have much flavor at all. The green chili was also really bland and they barely put any on. The salsa the have here is also fantastic and was spicy and the chips were great as well. Our server was Alonso and he was great. He was very nice and was always checking on us making sure we were doing good. I don't think I will be coming back because everything else we had was bland and wasn't good. read more

Meh is a good summary of the overall experience. The atmosphere is hit and miss: it appears to be clean. They even run a small electric sweeper at 6p.m. while diners are eating...not cool at all noise-wise, but the floor is clean. The decor is strange: there are chairs painted with a colorful Mexican motif and really fabulous metal sculptures outside the entrance, but the booths are upholstered in a fruit or floral tapestry pattern that reminds me of grandma's house...I guess the fabric was on sale someplace. We were seated within 20 feet of the front door, so I didn't see much at all. The service was OK: I was disappointed that we arrived at 5:45 and the server didn't indicate happy hour times. She brought us water, chips and salsa right after we got there, but didn't reappear until 6:04 when happy hour (3-6) was over. At that time when I inquired, she indicated they had a blue margarita special, which I tried. NO!! Very blue, very sweet, no discernible alcohol, and served in a daiquiri glass. I waited until we safely received our food to tell the server that the margarita was a no-go. I ended up getting the house margarita (they had at least 10 to choose from) which was pretty good: on the rocks, with salt in a margarita glass. The food: the chips and salsa were OK. Chips thin like I like, but so was the salsa, which I don't, but it had a nice kick. The entrees were...just no, no, no! I got the pollo (chicken) with poblano sauce (I can't recall the exact name of the dish) and it was barely 3oz of extremely thinly sliced chicken buried in a couple of cups of green sauce with lightly roasted (maybe) sliced strips of poblano peppers, served with a bit of Spanish rice and refried beans. He got the pollo with chipotle sauce, similar to mine...same plating. In my opinion, a very low value for the price. So, the best things about the restaurant are the funky, cool metal statues at the entrance...it goes downhill from there. read more

Not a great atmosphere inside or out. Salsa was bad at the start. Menu is overwhelming and difficult to narrow down with minimal variations on the same item. My wife and I got burritos. Taco Bell's meat is better and that's not the best taco meat. The refried beans and rice looked and tasted the same as anywhere else. My husband got the sirloin stake with shrimp.
