Dear Management, I would like to share a concern about my recent experiences at the Oyster Bar at Durango Casino. My boyfriend and I truly enjoy dining here because the food is consistently excellent. That's why we continue coming back. However, we've noticed an ongoing issue with the seating process that has become increasingly frustrating. There is a sign clearly stating that your entire party must be present before being seated. Unfortunately, this rule does not appear to be enforced consistently. On multiple occasions, we've seen servers seat parties when only part of their group has arrived, while other guests who have been waiting patiently and following the rules continue standing in line. This is not the first time this has happened. In fact, during one previous visit, the situation became so chaotic that security had to get involved because guests were upset about people being seated out of order. Many customers had already been waiting for over an hour, only to watch others bypass the posted policy. It creates confusion, frustration, and the impression that the rules only apply to some guests. If the restaurant has a policy requiring the entire party to be present, it should be applied fairly and consistently to everyone. Otherwise, the sign should be removed to avoid misleading customers. We genuinely enjoy the food and want to continue supporting your restaurant. My intention is not to complain for the sake of complaining, but to bring attention to an issue that affects many loyal customers. My friends and I came to the Durango location to avoid the longer lines at Palace Station but still had to wait a bit over an hour at 10 PM before we were seated. As the name implies, it's a bar so seating is minimal. I would avoid coming here with a large group because it's likely that you will be seated at very different times. We ordered: 1. House oysters (5/10) -- these were just ok and too large without much flavor 2. Shrimp scampi (7.5/10) -- delicious but nothing out of the ordinary 3. Alaskan clam chowder, dirty style (9.5/10) -- SO GOOD and full of seafood, maybe even my favorite clam chowder of all time? 4. Durango pan roast (8/10) -- this was the last item so maybe I would have rated it higher if it came first, but this was still delicious and full of seafood, chicken, and sausage Our server had forgotten to input our 3 pan roasts and we had waited so long that we digested and were full before we realized they had forgotten. We arrived on Saturday at 5:24pm, and we were seated at 5:48pm. There was about 8 people (4 groups of two) in front of us. We were pleasantly surprised that it was only a 24 minute wait on a Saturday. We immediately sat and were greeted with warm bread and butter. We ordered a Kirin bottle, and a Golden Road Mango Cart Wheat draft. Then I ordered some oysters, the Durango Pan Roast, and my partner got the bouillabaisse. There was a small mix up because I had originally ordered half a dozen oysters on the half shell and when I was ordering I quickly switched to a dozen, then inquired about the Chef's featured oysters and ultimately decided on the dozen of oysters on the half shell. When the food arrived, I received half a dozen and I asked "didn't I order a dozen?" The waitress said no I ordered the half, and then wanted the Chef's then I went back to the half. However, my partner also heard me order the full dozen. At the end of the day, our waitress asked if we wanted to switch to a full dozen and we said no it was okay. I personally just would have approached it differently and would have said "maybe I heard you wrong" rather than just accusing me of being wrong, but to each their own. Additionally, I did not find the oysters to be that tasty. Both my partner and I agreed that the oysters tasted like water (not buttery, salty, or really anything). We will skip on this next time. Another gripe I had, was the place probably seats about 15-20 people, so you're packed in there like sardines. I did see there was a 2 entree limit per person, and I'm guessing this is why. I felt pretty confined, but I think it's just part of the experience. However, the reason I'm still giving this place five stars, regardless of the above paragraphs is because the pan roast tasted like a warm hug. It was very comforting, and flavorful. I would go back just for the pan roast. I personally got a spice level of 2 and it was perfect. After tasting the first spoonful, the roast was still bubbling as it was just poured from the pan. I had to add Chef Brian's "Lava Sauce". But I added some into my pan roast which brought more heat and elevated my pan roast to the next level. You can also choose the spice level of your Lava Sauce. But with a name like Lava Sauce, you know you have to bring the heat! Chef Brian was fantastic. Yes, it's off the Strip, but Durango is one of my favorite off strip locals' casino. The chefs are very good at making their kettle bows for patrons. They constantly make sure the tables are very clean and presentable. We've never had a bad experience dining at Durango's Oyster Bar. Recently, I had the Durango Pan Roast and my wife loves the Gumbo. I got mine at level 4 since I don't wanna pay for it later with too much spice. Lol. The food is always nicely presented and the bowl of creamy goodness always pops with its vibrant color. I try my best to save the pan roast for later because it's one of my favorite dishes of ALL TIME! The way Oyster Bar makes these Pan Roasts is different from the rest. All dishes are made to order and prepared right in front of all the guests. When you order a main dish here, you can choose your spice levels. 1-3 is "Amateur", 4-7 is "We're Impressed", and 8-10 is "We Dare You". The level of spice I usually get is level 2. It has the right amount of heat where I can still enjoy the dish. The Gumbo is my favorite because of its rich Creole flavor. They are generous with the protein portions. The House Gumbo has shrimp, crab, and lobster all mixed together. Each kettle order comes with a side of white rice and complimentary bread and butter. The service is always excellent. Seating is known to be limited & wait times can be long but I'd say it's worth it if you get in line not that hungry yet or you can grab yourself a $1.99 margarita while waiting. Went on a weeknight for dinner & actually waited about 25min & another 20min for food to arrive, which wasn't bad at all. While waiting for our food we were given bread and butter. I was super hungry at this point so ate it right away but it might be nice to save some for when your food arrives. I ordered the pan roast Durango style (shrimp, chicken, sausage) in mild spice 3, which came with rice. This was SO good. Flavor was rich in spices & so hearty. My husband got the dirty Alaskan clam chowder, which we also really enjoyed. All the seafood tasted fresh. We couldn't finish everything since it can be quite heavy so we took the rest home. 5 stars for how big the oysters were, and absolutely delicious! The bar isn't very big-- maybe 15 seats. There's was a constant line and the wait was about 45 min on a Thurs night but it was well worth it. We also ordered the shrimp cocktail and each had a pan roast. We've been going to the Oyster Bar at Palace Station for the last 20 years , but as of last year we found a New "Pearl" Oyster Bar at Durango Casino Hotel Resort. The Restaurant is Bright and Clean with a seating capacity of 20 with 10 steamers and the service and wait times are a fraction of PS Casino. The "gem" of the bar is Ms Vee , who has a big smile, quick wit and is on point with the House Gumbo! The flavors enhance the crab, shrimp and lobster along with the andouille sausage and spices! The food was delicious! We had the peel and eat shrimp, half dozen oysters, clam chowder, gumbo and the pot roast. Every single dish was so tasty and fresh. First time here after a suggestion from a friend. We had the Durango with added lobster, pan roast combination and friend had jambalaya. Our Spice level ranged from 5-6 but no kick I would have increased the spice to 7-8 . Bobby was the chef , was very engaging and I love the cook in front of you idea . Luisa was working the whole bar , and did her best . There were 2 other women who I felt should have helped a little more but I'm not sure if there role .
