If you are looking for "Italian classics" like pasta with Alfredo sauce and chicken Parmesan, do yourself a favor and check out some other "Italian" restaurants instead. Parma is one of my favorite restaurants in Fresno because this is where you can get truly authentic Italian food. Elena makes all the pasta fresh everyday and it is obvious that the menu ingredients are high quality and carefully sourced. My husband and I dined in last night and had superb service provided by Sam, who was an attentive, efficient, and polite server. The mixed grill entree is our favorite, and comes with more than enough for two people to split. On this evening we skipped the pasta, but my usual go-to is the tortelli di zucca. This was our first time ordering the tagliere di Parma- those meats were amazing (and so thinly sliced). Although, some parmigiano reggiano (or any cheese, for that matter) would have taken that salumi board to the next level. We had a reservation and we asked for outdoor seating and were seated right away. The hosts were very attentive and friendly and made good recommendations. The garden in the patio is very beautiful. The food was delicious; we ordered caprese and minestrone soup as appetizer and tortelli di zucca and malfatti agli asparagi for main course. Minestrone soup was my favorite. We had a wonderful lunch here today! My prix fixe meal began with an appetizer plate (s platter, really!) that included caprese, a small bruschetta, some yummy beans, a bit of green salad, and more. The main was a selection of 3 pastas, all house made, all excellent. Dessert was a light berry mousse. My wife and our friend also loved their meals too ( the chicken breast looked great!) Prices ranged from $14 to $18--really a bargain for the quality and quantity IMO. Nice wine selection as well. Service was first rate...attentive but not obtrusive. Made reservations 2 weeks in advance, arrived and they had not record of it. Acted like they weren't going to honor the reservation. The driest, no cheese, no flavor lasagna made with hamburger meat. Duck was cold. Bruschetta didn't have and cheese, no vinegar, no basil. Had chopped tomatoes and stale bread for high price. Worst waiter ever! Absolutely amazing... so far the best piece of Italy in Fresno. A big plus for me is they stay open until 10:30. This is almost unheard of for a restaurant here in Fresno. The ambiance is casual elegant.. the outdoor lights and wisteria covered patio made the al fresco dining feel like home. The tables are separated enough so that there is privacy and no need to speak over surrounding conversations. Service was exceptional and meeting Elena was an added treat. We did desert to sample the place and the deserts did not disappoint. The Crespella al Frutti de Bosca - Crepe generously filled with citrus mascarpone smothered on a warm berry sauce was perfect. The Zabaglione was served chilled and makes sense for Fresno weather. With all the amazing dinner dishes being served around us with the savory scents that lingered behind this will definitely be one of my next and no doubt favorite places in town. read more

We have Italy right here in Fresno!!! 1st time here and mad at myself that I waited so long. The food is so fresh and authentic, the wait staff was excellent and the owner is a joy. I started with the spinach salad it was a great start and the pears were heavenly. I did the chefs choice which included pasta, a main course and dessert for $45. The pumpkin ravioli was Amazing!!! Choose steak for my entree which was tasty and tender. Lastly lemon cheesecake which was flavorful and not overpowering on the lemon. My mother had the chicken which was out of this world. She ended her meal with the prosciutto and cantaloupe which seemed to be at everyone's table. It is an interesting combination which pairs well together. One word...Elena! The owner of this great restaurant is Elena. What a true delight. Great looking restaurant and wonderful food. We had the courtesy bites of fresh parma to start and then the capresse (big enough for two) followed by a combo of pastas so we could try some fun choices (Elena's response when we asked..."of course!") I loved the Bolognese and the Risotto Guiseppe Verde. Try this baby. Unreal flavor. But the scene stealer was these little Italian cookies she brought at the end. I have no idea what they are or how they make them....but I'm craving them already. Service is very Italian and that means a tad on the slow side. I absolutely love Parma. My favorite item on the menu is the lasagna, it's different and not red saucey. I'm not a huge red sauce person unless it's home made and spectacular. We had the appetizer platter for two, it's huge lol and really a lot of food if you're going to have a full meal but it was a good try of many of the lighter things on the menu. We also tried the filet which is served with a great sauce over it. Their customer service is always stellar, the owner is always on site, friendly and attentive. I don't know why this isn't a more popular joint but I'm not complaining since the waits are always short. read more

Lasagna - texture is like Taco Bell taco meat in a soggy noodle. Came over cooked and each mouthful was a cheese laden mushy mess. Hard to distinguish flavor beyond texture problems. Beat and Gorgonzola Ravioli - so undercooked the noodles break. They are terrible. The beat is delicate and tender and flavorful. Price = $$$ Ambiance = loud Service = poor. Wonderful Food! Everything is homemade and delicately put together. I believe everything on the menu is created by the owner herself with the help of her kitchen crew. So If you don't know what to order she's always there to suggest and delight you! Had the smoked duck breast tonight, it was wonderful! Elena the owner is a very gracious and warm hostess and made our party of 10 feel very welcome and well attended. Everyone in our party was happy with the food and the service. The pace was slow which to me is a plus. Most of us Americans seem to love a dinning experience where one course is thrown on your table on top of another like you are some ravenous hog and the staff cannot wait to get you out the door. I do not, I like space between courses where you can visit and actually enjoy the food and conversation. From start to finish our dinner was 2 hours long. I lived in Italy for 10 years and, yes I know this is not Italy, however this place has a reputation for homemade, authentic Italian food so we thought to give it a try. We dressed up as we heard it was upscale. We were sadly reminded that dressing up in Fresno is not LA dressing up, but we are from LA and trying to find a place in Fresno which gives us a sense of home. We were seated immediately, however it took about 10 minutes for someone to come over and obtain our drink order. We saw our waiter 3 times: drink order, dinner order, and check. Other than that it was random people we would summon over to our table if we needed anything. Bread was small and somewhat hard. At upscale Italian restaurants you typically get olive oil/balsamic. They also provided packaged, thin bread sticks? Pasta was descent, good flavor, but not at all filling. The bill was pretty jaw dropping for said reason. For a couple it came out to approximately $105 for wine, one appetizer and 2 entrees... especially if you leave hungry. Basically $50 a plate. I don't at all mind spending money on a special meal, but this is not worth it. Save your hard earned money and go elsewhere. read more

Had heard great things about this little gem, so tried it with friends. They loved all their choices. I wasn't happy with mine, so I will go again and have what they had. The gnocchi was delicious with the Gorgonzola sauce. The Filet Mignon wrapped in Parma ham with balsamic reduction sauce was cooked perfectly. The duchess potatoes were absolutely delicious. The vegetables looked a bit overcooked and mushy. I ordered the Tortelli filled with ricotta cheese and Swiss chard. It was similar to ravioli and the ratio of pasta to filling was way off. It also did not have any sauce with it. Sat in a layer of butter. It was very good, just not what I was expecting. The desserts were okay, I tried the trio, (which by the way were full servings of 3 desserts.) Next time I will try the lemon mascarpone cheesecake. Service was beyond exceptional. I've heard good things about Parma and unfortunately decided to come here for my birthday. To start, not one person came to check on our table. Had they, they would have heard that our lasagna piece was audibly crunchy as if sitting there for hours and thrown in the microwave. The "medium-rare" steak was also completely raw, even after nuking it in the microwave at home for a minute wasn't enough. This is the most we've ever spent on a flavorless meal that we absolutely did not enjoy. Do NOT recommend (except maybe the Gorgonzola gnocchi...I have to admit they were very soft and delicious although still needing salt) Ps I have had my share of poor meals but this is the first time I've felt strongly enough that I felt the need to post, just very disappointed in the entire experience. read more
