Ate at this "steakhouse" while spending the night at the Hilton within which the establishment sits; like literally within - the restaurant is in the lobby of the hotel, and is INCREDIBLY loud. Menu at first glance indicated this was a decent place to eat l, with standard hotel-restaurant inflated pricing. As I was eating alone, I decided to forego the more lavish choices, and opt for the $21 burger. Ordered it medium-rare with added avocado. The burger came out within 10 minutes, and was ready to go - avocado stem and all! I cut into it, and it was bone dry; cooked so heavily well done, not a speck of juice could be seen. I would have raised this concern to my waiter, except he was too busy chatting up guests at other tables, to even be bothered to stop by and see how the food he had just brought out was. Captive audience and they know it. Spencer's for Steaks and Chops is inside the Hilton Seattle Airport & Conference Center, and for my experience, is overpriced and under portioned, among other difficulties. I started in the appetizer section, ordering 'bread with herb butter'. In most places a warm loaf of bread with softened or whipped butter is complimentary, but not at Spencer's, it's what they call an Appetizer. I should have read that and left, but as I said, hotel guests are a captive audience for them. What I received was a good if not room temperature, a small sliced loaf of bread with a heavy, (read knock the room down with your breath) heavy, heavy, garlic butter. It was more like, "Would you like some butter to go with your mouthful of garlic cloves sir?" I called an attendant over and asked for butter or olive oil or something else - unfortunately what he brought was just out of the fridge and hard as nearby Mt. Rainier block of butter. But all was not lost. When the manager stopped by at the end of the meal I mentioned that 'herb butter' usually means herbs - she said, "Yes, greens," (I interjected, "Like parsley.") "I know, but ours is garlic." she continued. Exactly. Maybe Hilton can school their kitchen on the difference between an herb and cloves of garlic? That's too logical, lol. I had also ordered the French Onion soup, which was served promptly and was delicious. Not a strong flavor in the soup other than the lightly smoked flavor to the cheese, but it was delicate and flavorful with the cheese melted and lightly browned under the broiler. Average taste I thought overall because I like a bullion based soup and this wasn't strongly flavored as that, but it was good and things were looking up. I'd barely finished the soup and my Steak Diane came. It was advertised as a 6 ounce filet, 'exotic mushrooms', and mashed potatoes. As it turned out, the potatoes were French fries served with ketchup in one of those little stainless steel cups Red Robin or similar burger places use. If you know Steak Diane you'll recall it is a (Dijon style) mustard based sauce, yellow in color. What I got was a dark brown sauce void of mustard and heavy with peppercorns. The "6 ounce filet" was in fact 2 little balls of filet, totaling maybe, maybe if I put my finger on the scale, 3 ounces total. This was not Steak Diane. Nor was it worth $38.50. It did come with some 'exotic mushrooms', which for some reason had a total of 3 twigs about 2 inches in length what I think were twigs of thyme included. These had to be picked out lest I be either speared in the back of my throat or accused of using some ancient toothpick twig sticking out of my mouth like Gomer Pyle on Mayberry. The only other thing on the plate was half a baked tomato - tomato, yes. But it was sweet and complimented the meal. Steak Diane is also usually a flat steak cooked on a flat top, no flame...but as long as you're totally messing up a classic why do that when you can serve 2 little round flame broiled filets instead? The manager just happened to stop by asking how everything tasted, and I asked for a menu thinking the waitress had misunderstood my order and mistakenly given me a peppercorn sauce steak. I could only have wished that were true, for "No" the manager exclaimed, "That is Steak Diane, but I've never had it." I quickly asked Siri for a picture of Steak Diane, and up popped a picture of a flat steak with a yellow sauce - the classic Steak Diane - the manager didn't recognize it, "Oh" she meekly said. The manager continued, "But ours is a peppercorn steak and sauce", stating the obvious. I drove home my point, "Yes, but Steak Diane is not a Peppercorn Steak." "Let me buy you a dessert, I'm sorry for the trouble." she tried to build a bridge to no where. (I politely declined with a smile on my face, but thinking not to have dessert lest I order the mocha chocolate creme brûlée and get served a NY style Cheesecake and have to explain those differences to the already challenged and confused kitchen staff.) So the night consisted of a room temperature bread and 'herb butter' that turned out to be an ambush of make-your-toes-curl garlic butter. Then an average French Onion Soup dependent upon the smoked cheese for flavor, and finished with a Steak Diane that was merely a Peppercorn Steak one might find at any franchise steak place. I did eat about half a dozen fries and they were on par with McDonalds or Wendy's, but even then the manager said 'It is supposed to be mashed potatoes' but I didn't want to further confuse things by telling her I didn't even notice the difference. I think next time I'm staying here and hungry for a good steak, I'll get a meat lovers pizza delivered to my room rather than chancing another spin of the roulette wheel. Spencer's is trying to be a prime Steakhouse in the tradition of Ruth's Chris or Morton's and sells steaks cooked quickly in a super hot or infrared oven, ala carte. Food taste and quality was more 4 star or A- for our group of 4 getting filet mignon. Food was on par with the Keg, but $30-35 per plate higher price because in addition to the higher meat price, you pay plenty for every last thing. I've dropped the rating to 3 stars for the following reasons: 1) The Hilton inexplicably blocked all nearby empty parking spots with cones. We took a risk and parked in a guest parking only spot. Restaurant patrons are supposed to do what? 2) 3/4 of our steaks were prepared as ordered. One had to go back as it was not cooked medium as ordered. This really blows a meal together and yet...no apology. 3) $7 Béarnaise sauce (that's $10 sauce with tax and tip) seemed like a small amount of Knorr package sauce. 4) server brought and charged us for a side of Mac n cheese we had cancelled during our order. I ate here both last night and today and both meals where very good...last night I had the meatballs and hot wings both were delicious. The meatballs so juicy and full of flavor plus the sauce tasted so fresh could've eaten double order they were that good. The chicken wings were ok but weren't too hot just the right amount of spice but overall good. The service last night was ok but had nothing to do with the waitress as she was covering the entire bar area which of you've been here or plan to it's huge. She was super friendly and literally giving it her all and I applaud her for that. She even apologized at the end for not being as attentive as she normally would based her covering this whole area so well done Therese... This morning I ate her for breakfast as well and was sat immediately at a nice table and thank you Hilton Rewards because if you are a gold or diamond member their continental breakfast is on them. They have a great selection but this morning I wanted a something different so it was the West Seattle omelette filled full of Dungeness crab, spinach, mushrooms and gruyere cheese. The gruyere doesn't normally come with it I had to ask to substitute the truffle cheese that normally comes with it. OMG this omelette is so delicious I couldn't resist so I ate every last bite. So flavorful and no skimping on the ingredients either this omelette was packed full of crab in every bite. I decided to go a little more healthy so no hash browns and toast for me instead freshly sliced tomatoes. If you come here for breakfast I am telling you get this omelette or your missing out. What made this extra special was my waiter Sal in an age of finding great help this restaurant has a diamond. Has to be the nicest and kind waiters I have ever come across and based on how much I eat out traveling I think I have a pretty good sense of what great looks like. It's ok. I had a burger and a beer and it was 30 buck plus a tip. That's pretty steep if you ask me. The burger was good, don't get me wrong. Cooked well. Seemed like good meat. Veggies were crisp and the bun deliciously toasted. Fries were steak fries. Not my favorite, never the right consistency for me but ok. They were hot. Pint of beer rounded out my meal. It was a good burger but honestly the value was just not there to me. It was one of he cheapest items on he menu and while tasty it just exceed the price per awesomeness for me. Service was great. I sat at the Bar and there were two very attentive bartenders. It's in the lobby of a hotel, there are not a great many options within walking distance so you are kind of held hostage to their prices. Best item presented was the himalayan salted butter. Ordered the filet medium well after reading multiple reviews about undercooked meat. To the line cooks this translated to dried out, over cooked slice of protein. Good thing the butter was so good, it is what added that sheen to the meat puck in the picture. The mashed potatoes might have been from a tub at Costco. I don't know what to say about the mushrooms other than do not spend 7 dollars on this side. In my travels I have often found Hiltons offer some very good onsite dining. Not in SeaTac. To top off this glorious experience my waiter (and the entire staff for that matter) went MIA just as I wanted the bill so I could leave. When he returned to the table he reeked of cigarette smoke. Ordered rib-eye and hash brown with good glass of red wine. The rib-eye was ordered to be medium rare. It came out medium-well done. If you want to be a steak house, it is to your advantage to hire a chef that can cook a steak! Sorry it was a poor cut and not well prepared. The hash had big pieces of onions in it and was undercooked. The wine was great! Having to pay serious prices for that kind of food is just not a good experience. Okay..... So I am a big Spencer's fan in SLC & Omaha..... But they really need to do something with this location in Seattle (SeaTac). For dinner, steaks, fish, chops, they are great. For Breakfast... not so good. The service is so bad that I almost had to get my own coffee after waiting for 5 minutes before a server even said Hi.... and the breakfast food was below par for my likings (especially the sausage, which they say they make from scratch is all I can say. Again, dinner was great! Fantastic steaks, salmon, sides, full bar.... and great service.... It's strange, it's like they have a breakfast staff that works for the hotel, and another staff that comes in for dinner and changes over to Spencer's standards.... and that's why they still get 4 start.... Apart from having to dine during Covid conditions, we found the food and service quite good. I had the salmon which was served with grilled asparagus and tomato and the salmon was served on top of a bed of faro. I had never had faro before and found it quite delicious. My goodness..... they make the room service for the Hilton hotle and my food was so horrible. I ordered the King Salmon, which includes chef's choice of seasonal vegetable and chef's choice of starch. I got mashed potatos and asparagus. How can you go wrong? The salmon looked deep-fried on the top layer and uncooked througout. It was obviously previously frozen because it seemed still frozen in the middle and was bland and super watery. The mashed potatos were so incredibly greasy and seemed like powder potatos. The asparagus was fine, but was floating in the grease from the fish and mashed potatoes. I couldn't finish the dish and was sick to my stomach afterwards. I dont mind paying $60 for room service. I know its overpriced. But I expect edible food. This was revolting and horrible. I rather skip dinner next time or buy a snack from the gift shop. read more

When you order any dish, you get a complimentary good looking bread plate. Bread was OK, not great. I didn't try any meat dish.. I got white cheddar macaroni which was a side dish on the menu. Simply the best meal near the airport. We had scampi, lettuce wedge, NY strip, onion soup and another salad I can't recall. The onion soup was a real surprise, toasted broth, deep cheese and fabulous flavor. Steak cooked to perfection, tender and flavorful (Wagu). The blue cheese crumbles on salads clearly the real bleu fromage. Service was outstanding with all entrees being brought by 3 servers at exactly the same time. This place has a strange setup for an upscale steak house as it's located in the middle of the hotel lobby. In fact, I was so convinced we weren't in the correct place, so I continued to look all around for the "real" steakhouse before accepting the lobby housed this "fancy" steakhouse. I think my confusion mainly had to do with the fact that I ate breakfast at the exact same locates and what I assumed was the hotel bar just a few hours earlier. Like any typical steakhouse, Spencer's is expensive and most meals have a la carte sides. I started with the artisan bread and the butter/spread was quite delicious. Others had additional apps like calamari and ahi tuna, which I don't care for so I didn't try. I selected the petit filet cooked to MR with a side of the whipped Yukon potatoes. When my meal came out, my filet was tough, which was puzzling. It desperately needed a sauce, but I didn't love the cut and wasn't about to ask to add another $6 - $9 to the bill for sauce. The steak was cooked to a perfect MR and if the cut was better, I would have really enjoyed it. My whipped Yukon's were lukewarm and underwhelming. I had a few bites and left a good deal on my plate. The most appealing aspect of Spencer's is location, especially if you are staying in the hotel or local area already. read more

The location of the restaurant isn't ideal but what do you expect in a hotel. There is absolutely no privacy. The meal started as a disaster. The cocktail shrimp were rubbery, the tuna was gray (sent back and comped by management) and the Caesar dressing tasted like mayo and lemon. But wait... they made up for it. We had ordered 6 ounces of the waygu steak at $24/oz. After the first few items I was, needless to say, very worried about the steak being terrible. Let me tell you, it was delicious! Melt in your mouth with these bit size potato skins. Also got the bone-in NY strip MR and it was a great cut and cooked to perfection. Moral to the story... stick to the steak there. So I have to qualify this review: it's a traveler's stop and should be thought of as that. But get my drift here: everything I have here is very good. Pricy for a "hotel"restaurant? Perhaps but not out of sight when you consider we are an a large destination and this is a major airport hotel. Service is solid and accommodating. The bar is comfy and lots of sports on tv. Solid wine choices including by the glass. Not cheap. But good. The scent of beef is compelling and thus I went with the short rib tips and a side of bread. Nailed it. The tips came soft and succulent surrounded by perfectly sautéed peppers, mushrooms and onions with a demi glacé that screamed really solid kitchen skills. Very tasty and enough when the craft bread does it's part of scooping and soaking. I'm pretty happy. read more

I recommend Spencer's to anyone staying in the Airport area for a great meal. Spencer's for Steaks and Chops is the Official name, located behind the lobby area of the Hilton across from SeaTac Airport. It boasts high windows, beautiful stained glass partitioned, high back booths with a casual vibe. We have been to Spencer's for Breakfast lunch and dinner (about 15 times) and I honestly have never had a bad experience there. They are very consistent and the steaks are cooked perfectly. They also have a nice wine list and beer selection. A while back, they used to have huge baked potatoes, enough for two people to share. Then they would come by with a cart to dress it up with a variety of toppings. I believe that they still do that but the giant potatoes are a thing of the past. I do recommend Valet parking, you can have it validated in the restaurant. Also they accept the "Passport diners card", which is a buy one entrée, get one of equal value free. Yes, service can be a little slow at times here, but I normally don't go to a nice restaurant when I'm in a hurry. If you have the time to relax, this is a great place for a meal. read more

The only bad reviews are based on price, so if you can get over that - it is a very nice steakhouse menu, with very high quality steaks and ingredients - the food is outstanding and the service is on-point. I had the Cheeseburger, with a side Caesar Salad. It was cooked perfectly, excellent fresh ingredients, and the flavor was outstanding. The cheese was melted nicely, the bacon crisp, veggies fresh, and the bun was soft, yet sturdy enough to handle the juicy burger to the last bite. My server was very friendly, prompt, and did a good job taking care of me. I sat in the lounge, which was pleasant and had a laid back atmosphere.
