Simply amazing food. We got to sit at the sushi bar and watch all the sushi being made, which made us want to try it all. The quality of fish was next level and I've honestly never seen that deep of a color on the tuna. I love sushi and I've had it at Michelin star restaurants. I was pleasantly surprised on just how good everything was. The crispy taquitos were delicious, light, with just the right amount of citrus. We got the spicy tuna and samba Vegas rolls. Our favorite was the Samba Vega. The tuna was amazing and the crispy rice just made it unique and added the perfect texture. Lastly, was the moqueca mista which was super delicious. I've never heard of or tried this dish before so this was a treat. My friend has been to Brazil and said that this was close to what he's had there. This is a Japanese-Peruvian fusion place that offers some very unique dishes, but ultimately the appeal of the concept and the amazing selection on the menu didn't translate to incredible flavors stimulating my taste buds. This isn't the place for you if you're looking for authentic Japanese sushi, don't let the name fool you. They have an extensive sushi/sashimi/nigiri menu here, but it's a bit different. The rice in particular on the sushi stands out in that respect, it's quite mushed together and sticks to your teeth, yet pairs well with their rolls. My favorite dish was the Asevichado Roll, I should have ordered two. The sweet potato topping surprisingly brings out so much flavor in that roll, and the leche de tigre gives it a true asevichado taste while still keeping it a sushi roll. By contrast, my least favorite dish was one of their most popular ones - the Sea Bass Miso Robata. The fish was cooked very nicely but the sauce was way too sweet, and for 27 dollars it took like a minute to eat. Another thing that was too sweet was the Japanese A5 Wagyu Gyoza, which is not something I thought I'd ever say about gyoza. The overwhelming sweet potato sauce hid the taste of the meat, which is supposed to be the star of a $35 dish like that. I found their famous Yellowtail Crispy Taquitos to be good but ultimately falling short of the high expectations. It ate like a generic poke taco that didn't have any flavors that really stood out to me. The Toro Sashimi Tiradito was a flat out mistake ordering at the hefty $42 price tag. The presentation was absolutely beautiful - Michelin star level, but the taste was nothing special at all and the plate was absolutely tiny. At real Peruvian places the slices of fish in the tiradito is cut quite thickly, but here the toro was rolled into these extremely tiny slices. Horrible value there. Their cocktail menu is extensive and tempting, but wasn't anything special at the end of the day. The wasabi margarita, their most intriguing cocktail to me, did have hints of wasabi in it, but was way too sweet (continuing a "too sweet" theme here). The Tom Yam was my favorite, it had a strong cilantro taste and was very balanced and refreshing. The Nashi was also good, delightfully fruity but also very sweet. So, this tapas-style lunch/dinner place in the center of the strip is solid overall but incredibly hit-or-miss at a hefty price tag. The inside and outside of the restaurant is beautiful and the service is great, and while the food is decent I found myself underwhelmed with the flavors most of the time. There are definitely much better tapas restaurants on the strip. read more

I dined at Sushisamba on a recent trip to Las Vegas. We had a reservation and were seated pretty promptly. It was a convenient location as we had just been to The Sphere and were staying at Wynn/Encore. I love to eat out and try new restaurants. After reading the menu here there was nothing I wanted and I asked our server if I could order the A5 Wagyu Sliders on the Kid's Menu? Since there was a kid at our table she allowed me to do so. There were two sliders on little buns and an order of fries in a 2 tier sushi boat. I enjoyed this as much as I would have enjoyed anything. Got a last minute spot after open table failed to tell us our other reservation at a different sushi spot was cancelled because the restaurant CLOSED, permanently. What luck for us, really. From start to finish we loved Sushisamba. The service was just superb- Jarret( I hope that's right) for the win. Really helped us with the menu, didn't steer us wrong, ever. We ate at the Sushi bar, which is always our preference anyway. Have I mentioned the service? A+++. Started with vegetable tempura. Fresh , light and delicious. Not even sure what all the veggies were- but all delicious. Next was the hanger steak with chimichiri. Cooked perfectly and our server came back after every course to check on us. Next was the sushi - tuna , salmon, and yellowtail. So fresh, it was swimming. It's been a while since we had fish this good. Next we reordered with the beef gyoza. Fantastic. Had a wonderful pre-show dinner at Sushisamba. What separates this sushi spot from others is that there are a lot of South American and Brazilian influences on the menu, which was a nice surprise. We started with the rock shrimp tempura, which had a nice spice to it and the black truffle dressing was delicious. It was also a very generous portion size. We also shared the asevichado roll. This really reminded me of a Peruvian ceviche in sushi form, complete with crispy cancha, sweet potato, and leche de tigre. Finally, we shared the moqueta mista and I was blown away by how flavorful (and huge) this dish was. At $48, this dish came with shrimp, squid, sea bass, mussels, and clams and was so big, we couldn't finish it despite how delicious it was. Service was attentive and quick, which was appreciated as we had a show to get to, and the ambiance was moody and cozy. We ate here for restaurant week which entailed 4 courses for $100 per person. I loved this because all of the portions were big/normal size for each course in comparison to a tasting menu size. We were able to order different options to share with each other. The Japanese A5 Kobe Gyoza came in 5 pieces and were the BEST starters- I would have loved another plate. The Rock Shrimp Tempura were small, crispy shrimps & the bowl is filled to the top- easily can get shared with the whole table (or a group of 4). The sushi assortment came with 3 crispy rice & 3 sushi pieces with different fish. The sushi was fresh and delicious, but I really loved the crispy rice ones. The chicken teriyaki- I loved the purple potato mash & the crispy onions, but the chicken came out a little dry on the inside. The Hanger Steak was beautiful in presentation & in taste. The Pork Ribs were so soft the meat just came off- the pineapple salsa & soy glaze were a great flavor combo with it. For dessert the dessert options were chocolate banana cake & passionfruit brûlée. The passionfruit brûlée was a work of art when it arrived to the table & the tart fruit flavor was strong. The chocolate banana cake... I can definitely see why this is a favorite. I walked in today, Diamond tier status in hand and a healthy appetite, and walked out wondering if I had accidentally slipped into a different dimension where "service" is a forgotten relic of the past. I've spent over 30 years in the service industry. I have worked every station, trained every position, and lived the "guest first" mantra for three decades. I know exactly what it takes to run a floor, and I also know the cardinal sin of hospitality: ignoring a human being. I wasn't in a suit today. I was dressed comfortably to watch some sports and enjoy a $200 solo lunch. Apparently, at SushiSamba, if you aren't peacocking in business attire, you don't exist. I sat there for several minutes--scanned the menu, picked out my meal, and waited. And waited. Greeting? None. Water? Not a drop. Appetizer inquiry? Don't be ridiculous. I am a man who has fought through a cancer battle and now navigates a metabolic condition that makes protein and vitamins a daily necessity, not a luxury. I didn't go there to be "catered to"--I went there to eat, to fuel my body, and to spend the credits I earned. Instead, I was treated to a masterclass in elitist neglect. It's truly impressive that a restaurant in the Palazzo can be so selective about who they deem "worthy" of a glass of water. Whether I'm paying with cash, comps, or points is irrelevant--every guest deserves the same baseline of respect. To be ignored as if you are invisible while you're literally trying to ward off starvation is a level of rudeness I haven't encountered in my entire professional life. I'm taking my dining credit and throwing it in the trash. It's worth more as scrap paper than it is at a place that clearly doesn't value people unless they come in with a large party or start shouting at the host stand. Bottom line: If you value being treated like a person, just say no to SushiSamba. Service matters, people matter, and this place failed miserably at both. read more

I ordered the rock shrimp tempera and the spicy tuna sushi roll this time. Portions are not bad (unlike the 2 pieces of raw sushi you get for $9). Both dishes were exceptional. I was quite surprised. The rock shrimp tempura was crispy, spicy, & creamy! The green peas in the dish works quite well with the shrimp. The spicy tuna roll was also a hit. Boy was this an incredible sushi experience. It's so nice to have beautiful dark Maguro rather than that other AYCE type Tuna that's been gassed with Carbon monoxide, a treatment used to cease the oxidation process. I digress, Sushisamba has all the most wonderful sushi/sashimi works of art one could imagine and we really enjoyed this feast for the eyes as well as for our tummy's. Wonderful experience at this restaurant. There was a wait for a table but we were able to get seated at the bar immediately. First off, I can't remember our waitresses name but she was amazing!! Gave us such good recommendations for food and drinks and that really made this a great experience as everything she recommended was DELICIOUS. Can't speak highly enough about each dish. Would recommend all of them but our favorites were definitely the yellowtail crispy taquitos, and the gyozas. The drink I would 100% recommend! Usually my drinks are either too strong and not tasty or tasty but feels like juice. This drink was actually soo good but definitely had a good amount of liquor in it.
