Of all the Vietnamese sour soups we've had, this place was the best. It is like a savory version of a lemonade, where the sourness and sweetness is extremely intense, but perfectly balanced. I've tasted all sort items from this restaurant, from quail, to frogs, to snails, to cat fish, and everything has been executed to maximize the taste of the ingredient and sauce. Fish dishes would first be soft, flakely, moist, buttery, and then after the textures, you get hit with the intensities of the sauces. In French cuisine, sauce is king, and Vietnamese food is often times a blend of native and French techniques. This place's food quality punches well beyond it's patronage.
