Came here alone after getting my nails done up the block at Tranquility! It is in a shared space with the juicery, Möge Tee. I ordered N4 braised pork rice noodle and W3 wontons in soup. This was a lot of food for one person! The rice noodle soup was filled with pork! The noodles were slippery and fun to slurp! The star anise, and other spices were abundant. The wontons were refreshing, and piping hot throughout my meal. The gentleman serving was not attentive, and slow. The food was taking longer than I expected but he never made rounds to provide an update. He dropped my food off and after he left I realized I didn't have any napkins. The table next to me didn't have any, and I had to track him down to get them. I'm slurping saucy red noodles, napkins should be readily available. My water glass went empty and I had to eye stalk him. I ended up closing out at that time because I already knew by the time I was done and ready to go, I wouldn't be able to find him. Btw this place wasn't busy. There were a lot of tables filled but I came to realize they were all waiting for a drink at Moge Tee! Cross-bridge noodle was so good. So I went two days in a row! Spicy one is making your mouth numb (mala) and cough because of that hot chili oil so be careful! It doesn't get cool down because of the oil, too. It was hot until I finish eating. Tomato soup was mild and has pretty good amount of tomato in it. But I prefer the spicy one better. I've driven by this place nestled in a strip mall so many times and wished I had found it sooner. The Signature brbeef noodle soup was awesome! It has tender chunks of braised beef shank and tendons and the north (get the spicy or the original if you're less inclined to kick it up a notch. We also got the Szechuan spicy noodle with diced pork in a spicy chili oil sauce in a pork bone soup. We also got the spicy chili oil won tons too. I got the original without the extra chilli oil and it was perfect level of spicy and beef soup taste. They gave you a decent amount of braised beef. Not too much but not too little. For $15 in Bellevue is a pretty good price range. I seen noodle place charge more than $18. We also got their new pork tomato with pea leaf noodle soup. It's very good too. It has the cross bridge noodle soup base but the tomato and pea leaf gives it a slight different taste to the soup. My wife and kid were able to share one bowl of noodle. This is a Yunnan/Kunming speciality where a boiling hot cauldron of soup is brought to you, and partially cooked noodles and other raw and under-cooked ingredients are provided for you to cook in the hot soup. The version here is delicious. As good as the best I have ever tasted in China. Now, lumping the various cuisines in China together as "Chinese food" is akin to lumping together pasta and Swedish meatballs. Yunnan cuisine is distinct. The soup has a wonderful sweet, spicy, sour taste that excites every part of your palate at the same time. It's like a rock and roll party in your mouth. The beef Crossing-the-bridge noodles I got came with a plate full of fresh vegetables and quail eggs, and other meats and ingredients were in the hot bowl of soup. It was spicy, unlike the spicy of Sichuan, Hunan or Guizhou. The spicy of Yunan is a very bright, sour spice. The broth is thick and sweetened with pumpkin, sour with tamarind and spicy with pepper. At Pavo, you can also choose the mala-style with Sichuan peppercorns, or very red chillipeppers Guizhou style. And they even have a non-spicy option. As for me, their standard Golden Soup was enough my eyes to tear, my nose to run, and my scalp to sweat. Even if you are in Seattle, it's worth crossing the 520 bridge for these noodles. read more

I was so excited for this place because the food smelled amazing and I love a big bowl of noodles! But unfortunately, it's super oily broth, it's expensive, and you're playing food poisoning roulette because my roommate almost threw up after eating their golden signature noodles. I felt a little queasy afterwards but only because my option was the tomato broth and the acidity helped cut the oil, but that was the only saving grace. The ingredients taste frozen --- especially the shrimp and quail egg. I've never had such a plasticky-tasting noodle bowl, and after letting the broth sit, there is a congealed coin of oil atop the bowl. You'd think you're getting a big bowl of noodles but it's actually quite a small portion. Ten seconds noodle has bigger portion and more flavorful broth. Will never go back tbh. I've been trying to come here for the past couple months after having an amazing experience and meal at Ten Seconds and boy was it so disappointing. I actually thought it was a new restaurant, not just renamed from Pavo. I'm a huge soup fan, so naturally I got the signature crossing the bridge noodles. This came with a massive bowl of hot soup which was actually extremely oily and a little sour (not in a way it should be, but a slightly spoiled kind of sour). The toppings came in a cute little box, but don't let that fool you. They were not fresh at all and the noodles had an awful awful smell to them as well before we added it to the soup. Not only did I feel not good after barely even eating half of the bowl, but I also ended up getting a couple huge bug bites in the restaurant :( Will not be going back, but I do highly highly recommend Ten Seconds if you're craving some good Yunan noodles! read more

I've updated my review for this place to 4 stars from 3 stars because I think I am starting to like it more after visiting it a few times over the last couple of years. The broth isn't as rich as it seemed to me the first time I visited. I'm not sure if I got used to it or it really did light up a little. We liked the presentation of having the ingredients in the side and you put them into the hot stone pot yourself. But for some reason they do not do that anymore. Instead, all ingredients new are already in the pot when they bring the pot to you. Regardless, the taste is still very good. I just came back here recently after reopening as Nan noodles and I was disappointed. The menu is a lot smaller now and there are fewer soup base options for the Crossing the Bridge Noodle Soup. Usually, crossing the bridge noodle soup would come with sliced beef but there was none of that that came with the soup. The soup base was also a little too sour for me.The decor and layout of the ingredients when you get the food is cute and layed out as it should be but the ingredients were not very fresh. TLDR: Really greasy, probably spoiled, go to Ten Seconds Yunnan instead. I came here about 2 weeks after trying 10 Second Yunnan Rice Noodle, which was great. They both serve "Mi Xian", a rice noodle soup dish from the Yunnan province. It's characterized by thick, round rice noodles similar to the kind served in Vietnamese Spicy Beef Noodle Soup (Bun Bo Hue), with the noodles and condiments served on individual bowls/plates to be added into piping hot broth. I tried the most OG rendition of this dish, the crossing-the-bridge noodle or "Guo Qiao Mi Xian". Here, the condiments were fish filet, chicken slices, pork slices, spam, fried chicken, raw quail eggs, shrimp, and chives. They'll cook quickly in the hot soup. The soup is an opaque pork broth, which gets some umph and body from being a bone broth, yet is traditionally incredibly comforting without being heavy or greasy. That wasn't the case here - the soup almost felt like a Japanese tonkatsu ramen broth in its heaviness and was very greasy while having a sour off-taste at the end. It kind of tasted old or on the verge of spoiling. It was a big disappointment since the broth was so delicious at Ten Seconds. Now, I have been exploring some good broth hot pot places with my Chinese friends recommendation. When I arrived at the restaurant, I was welcomed by very friendly and nice waitress who seated me right away. Then she was helpful with my question about the 2 people set. It comes with 2 app, 2 main noodles of your choice, 2 drinks, 2 desserts for 59.99. Of course we were not able to finish the meal, but it was the best way to taste many dishes. I also loved the fact that this set menu did not limit on choices of noodles. It was literally any noodle dish on the menu was part of this set course. We ordered Chilli fries, wings, signature noodle, and braised beef brisket spicy noodles. Coconut custard and the other jelly dessert. All were so delicious, but my favorite was ofcourse main noodles. The signature noodle had amazing depth to the broth. I have to give it to this restaurant. Chinese broth dishes are my favorite above all the soupy dishes in Asian food when it is done right. The spicy beef noodles had so much herbs taste but all blended and hidden. By the way, the waiter was so kind enough to ask us for food allergy to pork or chicken since they are both included in the broth. PAVO (former name of this restaurant) used to be one of my favorite restaurants in Bellevue, but after it closed and reopened, the menu is changed and the new crossing noodle is not as good as before. The menu has a lot fewer options for crossing bridge noodle. Notably, they got rid of the spicy soup for the crossing bridge noodle and they also got rid of the beef options. The taste of the soup is a little odd now. It tastes a little sour and not in a good way. The variety of toppings is also less than before (Prior to the re-opening, the toppings are served in a circular plate; afterwards, it is served in the square box). On the bright side, the spicy potato appetizer is still really good. Previously, I thought Pavo was better than 10 Seconds Yunnan Noodle, but I think 10 Seconds Yunnan Noodle is better now. I hope that the management can restore NaN Noodles to the previous quality. read more

He liked the Wonton skin itself more than the stuffing. I didn't try it, but he finished all the Wontons, so it was probably pretty good. The last time I came, I ordered something else which was really really good. I forgot what I ordered, so this time I just got the Signature Crossing-the-Bridge Noodles. It was okay, but didn't really stand out. The broth also tasted very peppery, probably too much white pepper? The Yunnan Style Small Pot Rice Noodles on the other hand, was really really good. It's a sour and spicy soup base and really grabs your appetite to just devour the whole thing. Two quick comments. First, like some other people have mentioned, there is a very greasy smell in the dining room. I stopped noticing it soon after our food came, not sure if it went away, or my nose just used to it. But the smell sticks onto your cloth. Second, the wait is a bit long to get our food. Not enough staff? Otherwise, a pretty good experience.
