If you want something dry then you can go for the Salgado shaken fries (preferably the rib eye to the filet because it has a bit more chew to it). Service is fast and attentive. LIFE SAVER!!!!! This pho was much needed after a night out. The pho broth hit the spot and they don't skimp out on the meat for the ox tail and rib meat. Best part was that the rib came out perfectly medium rare and the broth was so hot that it cooked the meat perfectly! The customer service was above and beyond as they were patient with our many requests since it was our first time here on top of being hung over. My friend asked for raw onions on the side and they offered both raw and vinegar onions to provide options. They came back to check in on us and made sure everything was to our liking. They even turned on the A/C when we mentioned we were feeling hot on top of so generously giving us hot tea to-go to help with our hang over. We love this place so much! I had never worked this hard while eating a bowl of pho. The types of meat that are traditionally used in pho are typically thinly sliced or in the form of meat balls, but the Pho Lab is truly experimental. The two large bones that outsized even the bowl necessitated a plan of attack before engaging with them, and my insistence on arming myself with only chopsticks and a spoon made it even more interesting. But the spoil of war was genuinely satisfying. I suspect the broth the pho was served was the very same that stewed the bones, and its very bony essence infused the broth with a certain soulful quality. It's not salty at all, yet it was very rich. The basil leaves came pre-picked, which was odd because they were always served attached to the stem at other pho restaurants. Some of the leaves didn't look as fresh, which could be one explanation that they were served individually. When we finished eating, no one came with the check. Even when I walked to the counter, no one acknowledged my waiting. A staff noticed me, but instead of coming to the counter to ring up the bill, he kept hollering at the others in the back to help me. After a long awkward moment, someone finally came up and took my money. Another interesting thing about the place was the bathroom. Everything was gold (colored), which gave me the impression of a decadent cheap place. If you dine here, make sure you check out the bathroom, even if you don't need to use the facility. read more

The place was pretty busy even at 10:30 PM. That's a good sign and the place lived up to the height. It was great ambience. The people that work. There are very friendly strike up conversation and the food is brought out quickly. I ordered the house combo vermicelli which came with grilled pork, grilled shrimp and a crispy egg roll over vermicelli and salad with sliced cucumber and bean sprouts. The food tasted incredible. Let me paint a picture - Sat down around 10:40PM and ordered immediately with the female wait staff, and then waited...waited...and waited while watching other tables who came in AFTER receive their orders Then, she comes over to "confirm" my order because "there was a mix up with the orders." I knew there was no mix up with the orders, she completely forgot to put it in. Then waited some more, and finally after yet another table (again, a table that walked in after) received their order I flagged down a different wait staff and asked where the order was. It was 11:06 at this point. He then goes to check on the order with the chef and comes back with our ticket. Says the chef said because it's chicken pho it takes longer, and then actually shows the ticket placed where it was TIMESTAMPED 10:56. I pointed out that I was seated way before 10:56 and basically the other wait staff forgot our order. I think it suddenly clicked then (at least I hope it did). While I did get an apology and an offer to pick any drink from the menu (didn't go for it because it felt like I was trying to score something for free, when I was not), I just didn't like how there was no acknowledgement from the female wait staff that she simply forgot the order. I mean, if she just acknowledged she forgot it instead of trying to blame a "mix up" I wouldn't have been peeved. She even avoided the table when she was going around refilling waters, so I didn't even get a water refill (haha). Also got the eggrolls and springrolls. The pho came out first and was piping hot. They really brought out bare minimum for sauce and sides. There was 4 people, but they only brought out utensils for one person? Like really? I had to ask for extra utensils, and they only give you one napkin. The pho and rolls were nothing spectacular. However, I would say that the rib bone had a decent amount of meat on the bone and tasted great. Note: The bathroom was decked out in gold and so out of place with the rest of the restaurant.
