TL;DR - The pho was good. The wagyu beef stew (bo kho) was fire. Looking forward to their wagyu fried rice next! I wasn't sure how much better pho and beef stew would taste if wagyu was used compared to the usual cuts of beef but I was pleasantly surprised! The pho tasted really good and the meat was really tender. The broth was nicely made as well (and it tastes different from the baby pho they give you). Oh if you have kids under 5 years of age then they get a free baby pho! And by baby pho, it's still a decent amount of noodles. I had to finish it for my kid lol. The highlight of the meal was their wagyu beef stew (bo kho). I love this dish. I typically can't find it as easily in areas outside of Orange County where there is a much larger presence of Vietnamese restaurants. When I am able to order it at other places in the South Bay or LA, I'm usually pretty 'meh' about the flavor. But they do it SO WELL here! My thoughts after my first bite was "oh hell yeah!". The meat was delicious and tender. The broth was the highlight. The spices were perfect and it was thick enough that it soaked into the bread that comes with it! I got the oxtail pho, which was tasty but the oxtail meat was kinda stuck on the bone lol I think it's worth a try but you will need to get into the bone with your teeth to get all the meat off ... then end up with meat pieces in your teeth. Wasn't expecting to have pho next to an ice rink but honestly it works! They took over an old Ruby's, keeping the diner look and decorated it to be very classy. Tried their Pho combo which has 4 different meats (rare steak, tender rib cubes, well done brisket, and meatballs), beef stew, and the crispy egg rolls. This is definitely an elevated pho experience so do not expect your typical pho. With that being said, DELICIOUS! The meat quality is very good. My favorite meat in the pho combo was the rare steak and the tender rib cubes. For the beef stew, it was rich in flavor and we had the option of choosing rice, noodles, or bread. Our server (Julie) recommended the bread and it did in fact pair well. Crispy egg rolls were yummy too. This used to be a diner (never been) but my kid and husband has and they both said it still looks like the old diner (especially in the bathroom, they crossed out the old name). So i guess they aren't finished with the reno...? The food was very good but compared to other pho places, it's pricey for their portion ratio. I'm so glad Pho Redbo opened up in PV, I used to love their OC locations. They are located in the PV promenade, on the first floor, adjacent to the ice rink (where the old Rubys diner used to be). Plenty of parking for the mall, and ample seating inside. We ordered their pho bowl, one with well done brisket and one without, and their Wagyu fried rice. The pho was rich, flavorful, and refreshing; I love the vegetables they add on the side (bean sprouts, basil, mint) and their sauces are a must; I really enjoyed their house made chili sauce and hoisin sauce. The meat itself was tender and flavorful too. This is a great place to stop by for a quick bite that'll leave you satisfied. I also appreciate that they offer many halal options! There is a new pho place on the hill, and we decided to try it. It is located in Promenade Mall and it replaced the old Ruby's. The restaurant is quite spacious with seating for 100+ people. The attentive server guided us to the table and brought the menu and water right away. We ordered the following items: Pho Combo: The broth was quite savory with a rich umami-like flavor, the beef slices were tender, and the meatballs had very nice texture and consistency. The wide rice noodles were on the soft side. Pho Sandwich: The fresh bread's crumb and crust were softer than the traditional banhmi style baguette. The sautéed/grilled meat was savory, tender, and drizzled with slightly spicy dressing. The mixture of dressing, beef and its fat on the bread crumb created a quite flavorful pairing. We're always on the lookout for pho since it's usually a crowd-pleaser for our fam. We were staying at a hotel in the area and wanted something not prepared by pool boys. It's pricey (what isn't now?!), but serviceable. The broth was flavorful and the service was super accommodating to our indecisiveness. I ALWAYS think there's not enough meat in my pho, and this was just about par with other places. My son ranked it as the second best pho he's had so take that for what it's worth. Also, the restaurant is situated next to an ice rink so it was cool to spectate the hockey game that was happening. Full disclosure - perhaps it would have been better if we had sprung for the Wagyu (at 2.5x the price), but I feel like the last couple times I've tried an upgrade like that at other places I've been underwhelmed, so we skipped it. read more

This Pho Redbo took over the old Ruby's restaurant that used to be here for decades. It's right next to the ice skating rink, so you can't miss it. They took all the booth seating out and replaced them with tables that seat four. Because they haven't been open for long, and there weren't any other customers, the server advised that I could sit wherever I wanted. I ordered the regular size combination pho which includes all four different meats and an iced coffee. Coffee was served first. It was really good; tasted like liquid candy. The small plate of fresh bean sprouts, lime, jalapeño, and basil were also delivered to the table at the same time. Side condiments are already at each table. I really enjoyed my pho. It's a tasty broth. The meat was tender and delicious. You can order your pho with thin or thick noodles. I ordered thin, as recommended by the server. The server was friendly and efficient. Regarding parking, there's plenty of free, covered mall parking. There's also free street parking in front. This my Go-to Favorite Pho Place. I always get the Large Rear Pho with a side of extra meat on the side. Their BunMi is amazing and the beef is just perfect and succulent with each bite it's enough to share for 2-people. The fried Rice is on the oily side that tasted really good but you will get super full if you eat it with Pho, The egg rolls is just okay and not a fan, and to drink with Vietnamese Iced Coffee is the best thing ever with each bite and sip. read more

Pho Redbo is a great addition to restaurant culture on the hill. It really offers some excellent Vietnamese-influenced food. For those of you who know the area, Redbo took over the space that was occupied for decades by Ruby's. If you've been inside the space, you know it is a very large area. As the interior has been newly redesigned, this restaurant offers tons of tables and really nice redone bench seating along the walls. It's really a totally different experience than what was housed in this facility before. When I first tried this restaurant, I went during the soft opening, which is still going on today. Meaning, their hours are a little bit in flux. So, it might be a good idea to call before you go, if you're actually traveling to this restaurant, because they may or may not be opened. This is just something to keep in mind Once inside, you'll find a staff that is very friendly and very professional. They can help you with anything you need or any choices you need to make. In terms of their food, it is all very well prepared, with great ingredients. It's really good! So, if you want some pho, some freshly prepared at your table wagyu, other Vietnamese-influenced dishes, or some Vietnamese iced coffee, this is a great place to go. The environment is open, it's spacious, it's airy, and there's plenty of room between table so you don't feel cramped sitting next to somebody you don't know. The good: Kids pho is free for any kid 5 and under. It's a bowl of the wide noodle pho with broth. I liked how noodle bowls included culantro (the long herb with zig zag edges). I got the shaken beef and enjoyed the flavor and texture. I also liked how the rice was cooked. I've been awaiting for this place to open since trying their sample from the Halloween event last fall. The broth was tasty and sweet. The noodles were soft and tender. They didn't charge extra for the fresh noodles (the wide noodles). The menu is simple. My super picky Vietnamese mom said the beef was tasty and that the pho was to her liking. The bad: They said they'd ooen in April but they opened later. We had to ask for napkins, chopsticks and spoons because the waiter didn't give us any. We got our food but didn't have utensils for them. The interesting: Each dish is around $20. You can watch ice skaters from here because the restaurant is located inside the ice skating rink area. They had a pho sandwich on the menu. The former restaurant was Ruby's Diner so the restaurant still has that 50s diner-look to it. They have an "outdoor" seating area (that's still inside the skating rink). I was excited to finally try @phoredbo_official in the Peninsula Center next to the Ice skating rink. Upon walking in was a spacious area with charming decor. The staff were friendly and very accommodating and were very informative with their dishes which made it easier to choose from the menu. This was definitely a level up when it came to the A5 certified Wagyu Pho and their passion for the craft shows. Here's what we got below: 1. Wagyu Sliders - Three sliders made with Wagyu beef patties, cheese , secret sauce in a soft mini bun. 2. Golden Truffle fries had a dash of sea salt and premium truffle oil. 3. Crispy Eggrolls - total of 4 egrolls with lettuce wrap and house dipping nouc mam sauce giving a sweet and umami taste. 4. Pho with A5 Wagyu - Comes with their overnight broth containing herbs and seasonings in a heated in a stone bowl. Fresh herbs like basil, culantro, blanched bean sprouts *, basil and japlapenos. Rice noodles (thin or flat) topped with onions , cilantro, green onions and white onions. And a side of thinly sliced A5 Wagyu to cook in the broth, rendering the fat into the broth 5. I came here to try pho for the very first time, and honestly I wasn't really sure what to expect going in, but the entire experience ended up being great. On top of that, they have a ton of halal options, which made it even better for us. We started with the appetizers and ordered the flaming wagyu, sliders, and truffle fries. The flaming wagyu immediately stood out. It reminded me of Korean BBQ. They bring it out on a hot stone and torch it right in front of you, which makes the whole experience feel exciting before you even take a bite. The flavor and texture were both amazing. The sliders were the biggest surprise of the night. When they first came out, they looked pretty simple and understated, so I wasn't expecting much. But after the first bite, I completely changed my mind. They were unbelievably good.... juicy, flavorful, and really well balanced. Nothing overpowered the burger, and it didn't rely on excessive sauce or gimmicks to taste good. Everything just worked together perfectly. Honestly, they were some of the better burgers I've had in a long time and I will definitely be getting them again. The only thing I probably wouldn't order again were the truffle fries. They were still decent, but they mostly just tasted like regular fries and didn't really have the truffle flavor I was expecting. For the mains, we got the steak pho with thin noodles and the shaken beef with rice, and both dishes were fantastic. The pho was comforting and well balanced, while the shaken beef was packed with flavour. By the end of the meal, we were already talking about what we wanted to come back and try next. The pho sandwich and the brisket pho are definitely at the top of the list. This was such a great first pho experience, and I'll absolutely be back. read more

Just days after their soft open, I had the pleasure of checking this place out. In the former Ruby's Diner location, this brand has expanded from OC to LA here in South Bay. You can't miss that this location used to be a diner, but with the redesign, it feels a little like a submarine. Important to note, this place is essentially a fishbowl inside of the hockey rink so do with that information what you'd like. The food was delicious as expected and service was friendly and fast. If you're a fan of pho, obviously there are options. I tried the combo but I'd recommend sticking to one kind of meat since I found it a little bit like a mystery as I explored the bowl. My partner had the fried rice which I stole and ate as soon as we got home. It was stunning and fresh. It was also refreshing that we didn't have to worry about any dairy products during our meal. They do cook with beef tallow though. I loved it. I guess some don't. I have two small suggestions for this place to enhance the dining experience. I know it's still a fairly new restaurant in this location so I expect there to be a lot of changes coming up. For now, I would suggest that they dim the lighting. I know this might be challenging but without much in the way of decoration, the bright lighting wasn't the best vibe. Perhaps like in other restaurants, dimming the lights for the dinner shift would help the ambiance. Secondly, I'd recommend that servers walk through the sauces provided at the table. I confused the chili for garlic and.. well let's just say it's a good thing I love spice. Still caught me by surprise. The others are just sriracha and hoisin. All in all a nice experience. I've been here a couple times and it's a little nostalgic since it's in the same spot that Ruby's used to be right next to the ice rink. Service is good, but sometimes they get swamped and it takes a bit to get the food. Usually they are pretty quick though if it's not too crowded. Food: - crispy egg rolls - The egg rolls here are super hot and crispy. It's a little different since its beef + shrimp instead of pork, but they are packed with meat and flavorful. They serve them with lettuce and fish sauce to dip. It's a great appetizer to share! - pho combo - I usually go for the regular pho combo with thin noodles, but the thick noodles are the homemade ones. It's a good portion with a lot of meat. I like the broth as well. I am not a fan of the usual tripe and other stuff, so this combo is overall pretty tame in comparison - just sliced meat, meat cubes, and beef balls. - beef stew - The beef stew here is super flavorful and delicious. You can choose noodles or bread, but the baguettes here are very fresh and hot out of the oven. It's great to dip into the stew and eat. It's a tomato-based beef stew with tender chunks of meat. - shaken beef rice - A classic vietnamese dish and solid if you're not feeling like soup. It's a decent portion, but I think it could be a little more flavorful. It's pretty tender and balanced overall though. I've never thought of combining wagyu with pho, but after having it at Pho Redbo--I totally get it. The meat was so tender and the breadth of flavor in the soup was top notch! My husband isn't the biggest fan of pho, but he kept stealing my bowl and taking big spoonfuls of noodles and soup. I appreciate that children get a free small sized pho, because it was the perfect amount for my son. We also got an order of regular fries which I may have enjoyed more than him! Although the bowls are a tad more expensive than most other pho restaurants in the area, you get what you pay for at Pho Redbo. The quality is there. Oh, and there's tons of parking in the structure to the plaza. Either way, Pho Redbo does pho the right way and add their own spin on things with wagyu and truffle options. Gone are the classic red booths of old, and it has more of a black and white modern, industrial look now. My friend and I came here for lunch on a weekday and got seated right away. There are plenty of tables in here. The place is very spacious with lots of seats. It's a good place for groups! We got the egg rolls which were crispy and delicious. I enjoyed the egg rolls more than the actual pho. I got the pho with rare steak which was just okayyy. I don't know if we came on an off day but the pho broth was too sweet for our liking. It didn't taste balanced. I like the broth better at Pho Hue Oi. The meat was very tasty and good quality though! The cilantro, bean sprouts, limes, and Thai basil leaves were also all fresh. The workers were all busy when I was ready to order and promised they'd come back to me soon. Shortly after, a man approached my table and asked what I wanted to order. I was slightly taken back at first before I realized he was either a manager or the owner (aka worker as opposed to random stranger haha). The food came out fast and the pho I ordered was soooo delicious... really packed with flavor. During my meal, I overheard the couple next to me raving about the soup as well. Pho Redbo also allows children 5 and under to get a "baby bowl" which is soup and noodles for free! My niece devoured her bowl and the same man who helped with our order even brought out another baby bowl of pho for her. The food was ok, but missing some of the veggies that are served with pho, like cilantro and green onion. The stew was generous and flavorful. It seemed like a few standard Vietnamese menu options were missing, like fresh spring rolls, the thin omelet or chicken skewers seemed like a missed opportunity. Service was personable and attentive. But the ambiance is definitely a repurposed Ruby's. We aren't sure about the location either. The party we met got lost in the mall and couldn't figure out how to get into the ice rink area. I grew up in the San Gabriel Valley eating at all kinds of Vietnamese restaurants so I was a bit skeptical that the premium cuts of meat would make much of a difference, but it really does!
