This is our third time coming to Red Bo (the best pho spot!), and we always love the food. We drove down from LA on a rainy day thinking it would be perfect pho weather and apparently everyone else thought the same. We arrived around 9:20 and the place was PACKED with a huge party. I'm a pho lab addict but they happened to be closed one day so we decided to try Pho Redbo. What I loved was being able to order the thick Pho noodles which isn't always offered everywhere. The meat is tender and good quality, the only downside is the ratio of meat to noodles is off. There was a ton of noodles and a few pieces of meat. For me, I thought the broth was flavorful and close to authentic minus how incredibly oily it was. In a pinch, maybe I'd go back but I still think Pho Lab is better. This is the best pho spot in Orange County. I absolutely loved their sliced beef. The beef pieces were tender and melt in your mouth. I got a regular bowl of pho with wide flat noodles. It came with a lot of rare beef slices. The broth was so flavorful. It was fatty. There was no msg and I didn't feel any side effects from the broth. I also got a plate of sliced a5 wagyu. I dipped in my pho broth and it was so good. I also got the sliders. The sliders were big and came with white and yellow cheeses. The sliders were made for sharing. Tried this place today for the first time. Pho was good in terms of broth but the meat was normal, nothing special even though they defined themselves as "wagyu". The regular bowl is so small. I left hungry still. I guess I'll have to opt to get the large bowl. But then again the prices overall were much higher than normal pho places that I can get closer to home or in little Saigon area. With a bill +tip at $24.85 & leaving hungry, I'd rather go somewhere else for that price. I think this place is definitely great for a one-time try for its novelty. I'm a bit of a traditionalist with pho, but we did come here to try the wagyu pho. While it was very delicious and the wagyu was indeed A5, I'm not sure if I would see this as an experience I would do often, if not ever again. I did however really enjoy the wagyu carpaccio was is an interesting dish! I also felt like the quality of food didn't match the ambiance of the restaurant. The restaurant is clean but the ambiance itself isn't anything memorable- then you're served this $50 bowl of pho but I mean hey worth a try!
