I first tried the chicken broth and it was quite delicious - the broth is usually indicative of what's to come in this place did not disappoint. Ordered the combo and I think the fried version seems to be better, I think I am used to the ginger scallion sauce that is commonly served with Hainan chicken. That was what I was looking for. We went to A Ma Chicken Rice in Redmond Town center for lunch on a very hot Sunday afternoon and found A Ma was still having its slow opening. It was obviously doing a good job as there was a long wait and the restaurant was packed. We got on the waitlist at number 20 on the list and waited about 40 minutes for a table. People were continuing to come and many joined the wait. It was worth the wait. The staff were pleasant and help us understand how to use the wait list screen and how to choose from the menu. Offerings were generally limited to chicken or noodles. I chose noodles and my partner chose chicken. The noodles were Cambodian style with great flavors and offered dry or soupy. The dry noodles had a pitcher of soup to add and bean sprout on the side. Several sauces were offered on the table. The noodles included different meats and shrimp. The chicken was standard Hainan style served on rice with small soup and sauces. The flavors were good but the rice was a little hard. Several people had crispy chicken the was fried and looked good. Each dish was good value at $16.50 each plate. We had ice water to drink as Thai Tea was not available. We will come back to try the dishes again or maybe crispy chicken. The slow opening forced the staff to move quickly but service was excellent and we had a nice meal. The restaurant is new and attractive and decorated with nice murals and other art work. The air conditioning was working well, and we were very comfortable. The slow opening is going well and everything worked. Hopefully the crowd will shrink a little to shorten the wait. They are open from 11 to 4 and the staff said there was a line when they opened. If the food and service stays as good as today A Ma will be successful. We plan to return. read more
