I mostly in my life have gone to the Kent location of Jang Soo Tofu (not sure how these locations are affiliated, but they do have the same menu). Came here for lunch today with a friend. We went around 2pm so it was pretty empty and got a table right away. We had one server give us tea and let us know our other server would be here to take our order. Our server came and asked what we would like. We both ordered combo A kalbi with tofu soup. He repeated the order but he wasn't looking at us. It was weird. Like we weren't there. We got our food pretty quickly. The banchan was so good. It came with fried fish, potato salad, cucumber, bean sprouts, and kimchi. The potato salad wasn't super creamy but it definitely helped tone down the heat. The cucumber tasted so good. It was salty and sour-well balanced. The bean sprouts were okay. You could taste the sesame oil and the bean sprout was crunchy and soft at the same time. I think it needed a little more salt. The kimchi was so good! It had a good amount of spice. I ordered intestine tofu soup extra spicy. The tofu soup was spicy but it creeped up on you the more you ate. The intestines had a nice texture. The rice was well rice. The kalbi ribs were on the fattier side. The meat was tender and the stuff around the bone was chewy and the flavor was great. Ok all my Seattle-lites know that in order to get your Korean food fix in, you typically have to travel far south or far north. So when Federal away staple, Cho-Dang, opened a second location in the heart of Bellevue, you know I was boutta see what's going down! Second locations can always be hit or miss, but Cho-Dang nailed it: The restaurant has a beautiful and clean interior, that departs from the typical dingy interiors of authentic Asian restaurant, without sacrificing food quality. I also expected the prices to be considerably higher given the real-estate of being in Bellevue, but prices were comparable to its OG location. I loved that there was a bonchon re-fill cart that was always rolling around to ensure you never lacked any bonchon but I was super bummed, their bonchon didn't include any fish cakes, instead there was only kimchi, bean sprouts, potato, and cucumber. I did LOVE that ordering any tofu soup included a fried fish that was delicious! The soup also came with stone pot rice with peas- personally I prefer regular rice but it was a nice change of pace. Of course, the Soondoobu itself is sublime, and is the best I've had in Seattle. Ah man. I honestly was ecstatic that Cho Dang tofu opened on the Eastside - huge fan of the one down in Kent. (update: tldr - don't come here during peak hours of meal time for lunch or dinner if you want to avoid a very long wait) As I type this. I'm still waiting for my food. Now, I do want to say that I empathize the people working right now and they're doing their absolute best with the amount of people they have to try to keep up, but honestly this could be a good case of just reducing the number of people sitting down at tables so you don't get overwhelmed. I'm here on a Friday, came around 7pm. First thing we notice is that it's a pretty full house - 80% of the people had an empty table with their menu in front of them. The waiting line was disorganized, they didn't have a list initially until my partner asked how they're keeping track of who got there and when. Tldr time breakdown - a Lil over 2 hrs 1. To sit down - about 25min 2. To get tea and a menu - about 5min into sitting. 3. To order food - about 35min - they try to stagger the orders they give to the kitchen since they're currently not able to keep up with the backlog of order. 4. To receive sides - about 30min 5. To receive ordered food - about 5 min 5. To eat - 10min In regards to food - recommendations are the tofu soup (obviously - they're known for this :) ) & their Kalbi. To the business - a couple of improvements to consider: 1. Have a waiting list system - even if it's just a pen and paper 2. Consider reducing the number of tables to sit people down at if the kitchen can't keep up with the demand. This will also help reduce the stress on the employees since they're Literally running around - could be a safety hazard. 3. Might need to relook at what your process & flow is from seating customers to getting the food onto the table. There seems to be a bottleneck somewhere. Cho Dang Tofu is a go-to whenever I'm craving soondubu or kimchi jjigae. It can get really busy, so I tend to come for an early dinner whenever possible. If you come during prime dinner hours, there is almost always a long wait. Service is overall decent, the servers are nice, but I think maybe they're understaffed. Expect to be needing to wave them down for any requests after ordering your meal. It can also get loud in the restaurant, so I wouldn't recommend going for a date night All in all, the food here is pretty solid. My one stipulation is that it is a bit on the pricey end for what you get (All entrees are $17+ and combos run for $36). I typically order the kimchi jjigae as I really love the variety of ingredients included, though I noticed the description says cheese and not once have I had cheese included with the dish. The portions are generous and you get a stone pot of rice with your soup. I always end up with leftovers! Another nice feature is the unlimited refills on banchan. Our order: intestine tofu soup and nakdol bibimbap. Influencers on Chinese social media brought us here. I was personally intrigued by the intestine tofu soup and I was content with it. The intestine was well cleaned and provided texture more so than taste. It is a slippery and chewy texture. I got the medium spicy per server recommendation. Their medium spicy is kind of entry level... and not enough for me. Nonetheless, soothing hot bowl that comforted my stomach after a long day of snow and hikes. We were not huge fans of the squid bibimbap... It was definitely overdone. It was served in its signature stoneware which retained over 100C / 212F heat for the duration of our meal, transforming dry and crisp to burnt in matter of minutes. The spice level is nonadjustable (and it was HOT), so if you like spicy burnt bits, this is the dish for you. The highlight for me was the banchan! Servers come around with a cart every so often so it is essentially bottomless. Loved the piping hot and tender fried mini croaker and sweet creamy mashed potato. Busy atmosphere with an industrial interior and patrons of all ages. I have to say Stone in Redmond has better tofu soup as far as flavor, but they stopped doing the stone pot rice so if you want that, Cho Dang is your place. And the service was great with servers coming around frequently with additional banchan. I laughed at the amount I got in the first go round cuz it's literally one bite of stuff, but I love the no waste effort so I like it this way, especially since they are so willing to refill. When we walked in we were welcomed by a delicious aroma and we were not disappointed. Staff were attentive and great at explaining the menu items I was unfamiliar with. My friend is vegetarian and they replaced the soup's standard beef broth with water base. They also checked-in with her when the soup sides were served to make sure she was ok with them. We both ordered the vegetarian dumpling soup, one with beef base and one with water base. Both were really good with rich creamy tofu and hot broth. The soup gets more flavorful with each increase of spice level. If you don't like heat, I recommend adding the kimchi and other sides into the soup for a flavor boost. The fried whole fish and marinaded squid side that came before the soup was perfectly fried and tender. The squid was well balanced with sweet chili flavor. We were here pretty early around open time at 11am. The reason for the 3 stars has nothing to do with food. Hands down food was great. It's just the service that we had today was quite odd. So there's someone before us but forgot to put down their name on the waitlist. I put down our name on the waitlist before them.. but when the server came he asked who was first and basically we said it was them however this lady didn't put the number of people correctly, instead of 4, she accidentally jot down 2.. the server was basically raining down on them for why they wrote down two when they're really four ppl in their party. But in my mind I was thinking there's not really a lot of ppl dining in yet (lots of tables open still) so why even argue and make them feel bad. Anywho, there's that incident. On our side, we were a party of 3..he sat us down even if we were waiting on the third person, so when we wanted to order he didn't really want us to just order first without the third person but we just told him that we already know what to order for that person too. He was rushing us so it was hard to hear him too. We just didn't want our order to get left behind since by 11:30 there were more people now so we wanted to get our orders in. When our orders came, it was supposed to be pork tofu and beef tofu but we didn't notice that it was a different soup when we were eating it since the tofu was pretty dense so hard to tell what's in the soup until after awhile. Apparently there was seafood in our soup which is basically I think the mixed tofu is what they put in the Order so we had to ask the server and let them know that they gave us the wrong soup. The server was kind of arguing with us that he double checked the order and we confirmed that but perhaps maybe it was just a miscommunication coupled with rushing us to get the orders in. At least he was nice enough to take it off the bill which was unexpected since his actions didn't seem like he was gonna do it at first. Regarding the food: We love their Japchae (glass noodles) so if we come back we'll be ordering that. Overall experience is still pretty good I guess it's possibly just one of those days where you get odd service. Also since Bellevue has this mandate about to-go boxes and plastic bags. It might be a surprised but they charged for the togo boxes at 15c each which most restos don't do yet or at least the other restos in bellevue that I've been. Was expecting some tasty Korean food seeing all the 5 star reviews on Yelp, but didn't feel like this place met those expectations. I got the dolsot bibimbap while my friend got the kimchi tofu soup with pork. The taste of the bibimbap was ok, there was a decent amount of veggies and the rice crisped up nicely in the stone pot. However the dolsot bibimbap is supposed to come with beef and there was barely any beef inside, only a few small strips which I found at the very end. My friend's tofu soup also did not have much pork either. The banchan comes in really small portions, there was kimchi, bean sprouts, cucumbers, and potato salad when I went. The servers do come by periodically to ask if you want to refill, but a larger portion size would be nice. To give you an idea of how small we're talking, I got my banchan refilled right before the server left to do something else before coming back to refill my friend's. In that time I finished the portion she'd previously added and was already ready for another refill. The servers here are nice, but the service itself is quite slow. We had to wait maybe ~15-20 mins for our banchan to come out and another ~15-20 for the food to come out afterwards. The convenience of the location is probably the only reason why I'd come here over other Korean restaurants in the area. read more

I could say my favorite part of the meal was leaving and the cucumber ban Chan. The fish was super smelly and upon ordering since me and my partner weren't too hungry we decided to share one and order extra rice- when we ordered the lady looked at us confused and said that it wouldn't be enough food for the both of us and we said it was okay and she kinda just didn't respond at all. It made us feel bad for just ordering one but there was no reason to waste money on two. The food was more than enough for our appetites that night but I left just feeling sick- the tofu soup was pretty mid for what they sell it for and the rice was super soggy. I've enjoyed Cho Dang for many years, so I was excited to see that they were opening in Bellevue. The first time I ordered the mushroom tofu soup, "medium spicy", but the spice was virtually nonexistent. I've had a lot of soft tofu soups in my life, and I've never tasted one so bland and spiceless. I was close to returning it but I thought "maybe this is how they make it." So I endured and just ate it. My friend ordered "spicy" and commented on how she wishes it was still a little spicier, so my conclusion was, "ok, *spicy* will be the perfect level." The next time I visited was just yesterday and I ordered the same mushroom tofu soup, and I ordered it "spicy". I told this particular friend my experience with ordering "medium spicy" and how it was bland and had zero spice, so she ordered "spicy" as well. When we got our food and tasted it, it was almost inedible bc of how spicy it was. We really could not bear the spice level. I don't know why the difference in spice level is so vast between medium spicy and spicy but I really don't know what to order next time. South Gate Garden in Factoria is an equally great option for tofu soup and they are always consistent so I honestly might just opt to go there instead. Even though Cho Dang is closer to me, it's nicer, cleaner, etc, their inconsistency makes for a confusing experience. I will say, to their favor, they are great at frequently refilling their side dishes but they should probably up the portion on that too. It's bite-sized portions. read more

I have been a big fan of Cho dang tofu for more than two decades in LA. So I was super excited when it opened in WA! It's not as good as the one in LA, but is one of the best one so far in Seattle. I don't know why they don't serve salad like others do though. Because I used to love their salad dressing! They also don't crack a raw egg for you before serving. As much as I love Cho Dang Tofu, I'm not sure if this one is worth the money. (About $16 for tofu soup and $35 for combo with meat.) It's a little too pricey for what it is. Nothing too special about it but you can taste they use good tofu since a lot of places use cheap ass tofu where you can't taste that tofu taste. Seafood tofu soup is also good, they give you the right amount of seafood without feeling you got scammed. The non-spicy version is also very good. It has lots of flavors, where as other places if you order non-spicy tofu soup, it comes out as water tofu soup. This place is also one of two places I found in east side that has fish roe tofu soup!!!! Both times, I ordered Togo and the first time, I had to wait 20 extra minutes on top of the estimated time they gave me. The second time I went, it was on time.
