The noodle is not too soft , the special sausages " cha" also special and tasty . What we liked most about the BBH here is the shrimp paste condiments and fresh peppers that is available for us to add to the broth for those of us who like the broth to be more full bodied . At other places it's the salty shrimp paste condiments right out of the jar . Here , the paste is cooked and added something else to make the broth aromatic when the consumer add it to taste . Most of all , the jars of condiments are clean and look like they are replaced daily . Herbs and alfalfa sprouts that go with the noodles are also not a wilted bunch veggies . The bun bo hue broth was clean but a little lackluster upon first sip though :( I usually prefer that my bbh broths have a stronger and more aromatic flavor.
