There is a Chinese folktale that Night Rooster takes its name from. A heroic archer shoots down eight of the nine suns burning the earth. The final sun retreats in fear. The world goes dark. And despite every effort by every person who tries to call the light back, it is only the persistent, stubborn, completely ordinary crow of a rooster that finally does it. That's the whole story. A rooster, crowing into the dark until the sun comes back. Chef Shirley Chung was diagnosed with stage IV squamous cell carcinoma of the tongue in 2024. Tongue cancer. For a chef whose entire career is built on tasting, on developing flavors, on a palate she spent decades refining in kitchens alongside Thomas Keller and José Andrés, this is not just a medical diagnosis, it is a direct attack on the thing that makes her who she is. She underwent chemotherapy and radiation. She had to relearn how to speak. How to swallow. How to taste. Her cancer is now in full remission. And the first thing she did when she came out the other side was come to Dallas and open a restaurant. I want you to hold all of that while I tell you about the Wagyu cheeseburger potstickers. Night Rooster is at 1000 N. Riverfront in the Design District, on the first floor of the building that also houses The Saint upstairs, and the room is everything the folktale promises it should be. Dim and moody, red booth seating, gold accents, butterflies and florals worked into the design in ways that feel deliberate and earned rather than decorative. You walk in through a curtain. You sit down. The lighting does something to the room that makes everyone look like they are exactly where they are supposed to be. The Wagyu cheeseburger potstickers arrive and I need to explain what is happening here because it requires a moment of context. Someone took a Wagyu beef cheeseburger, with bacon tomato jam, and put it inside a dumpling. Not as a gimmick. Not as an Instagram moment, though it is that too. As a genuinely considered culinary decision made by a woman who trained under some of the most technically rigorous chefs alive and then looked at all of that training and said, I am going to make a cheeseburger potsticker and it is going to be extraordinary. It was extraordinary. I ate one and immediately recalibrated my expectations for the rest of the evening upward. The tea-smoked duck is the dish people talk about first and for good reason. Brined for twenty four hours, smoked with jasmine tea and hickory wood, served with a plum sauce that has no business tasting as complex as it does. Chung cannot do spice the way she used to since the treatments, so instead she went deep on sauces, on richness, on layers of flavor that build rather than hit. The result is a menu that rewards paying attention, which is the correct kind of menu to have in a room this serious about its own atmosphere. The Cacio e Sichuan Pepe is pasta carbonara run through a Sichuan peppercorn lens and it should not work as a concept and works completely as a reality, which is a pattern I noticed repeating itself across everything I ordered. The lobster and shrimp air eggrolls are light enough that you eat three before you understand what just happened. The drunken yellowtail is tequila soy and lime and bird's eye chili and is the kind of dish that makes you put down your fork mid-bite just to appreciate the moment. Chung and restaurateur Andy Hooper talked about opening something together for over twenty years. They first worked together at an Italian steakhouse in Las Vegas. Two decades of conversation, a cancer diagnosis, a cross-country move, a remission, and then Dallas, in January, in the Design District, with a rooster and a folktale and a woman who had to relearn her own palate and came back making food this good. I drove home on Riverfront thinking about the archer and the eight suns and the rooster crowing alone in the dark until the light came back. And then I thought about the cheeseburger potsticker, because the cheeseburger potsticker was also genuinely that good and deserves to be in the same sentence as the rest of it. I had a great experience at this restaurant near downtown. The atmosphere alone is worth the visit the décor is absolutely beautiful and really sets the tone for a nice night out. I went on a Tuesday evening and was able to walk in without much of a wait, which was a plus. The drinks were amazing definitely a highlight of the night. As for the food, the fried rice was hands down my favorite and honestly some of the best I've ever had. The dumplings were also pretty good, and while the pork dish I ordered was just okay, it wasn't bad. The egg roll wasn't really my favorite, but it might be something others enjoy. Overall, I would definitely recommend checking this place out, especially for the ambiance, drinks, and that fried rice! read more

My friend and I dined here and had an enjoyable time. Parking was easy and we were seated quickly. The service amongst our waitress and staff was great and very attentive! We started out with a few appetizers - lobster and shrimp air egg rolls, jumbo wagyu cheeseburger potstickers, duck fat spicy chicken wontons, and the drunken yellowtail. I really enjoyed the wontons (wasn't overly spicy) and yellowtail (very fresh) but the eggroll could've held more flavor (the dipping sauce was good) and if you enjoy cheeseburgers you'll like the potstickers (wasn't for me). For the main, we shared the prime filet and broccoli + added a side of steamed white rice and lava potato puree. The beef and broccoli were delicious and meat cooked well but I would've enjoyed a little bit more sauce. The puree was tasty and was a nice addition to the meal. We ended with tea and a matcha dessert - we enjoyed both! Overall, this was a good dining experience and definitely recommend! read more

What an exceptionally beautiful restaurant. As delicious as the food was and as wonderful as the service was, the ambience was absolutely exquisite, definitely my fav part of the establishment. The service was excellent too, maybe a little too excellent. We had way too many callbacks to the table by multiple people which at times felt disruptive, the table was too small for all the utensils making eating sometimes awkward, and the food all came out way too quickly, even though it was staggered. If I am being critical at any point of this review, it's just because it was an expensive experience and I just want to provide feedback that can help the owners down the road. Time for the food. The chicken nugget with caviar for $16 just seemed overpriced for what it was. We tried it. It was ok. Don't think we would order it again. The Yellowtail cold dish was absolutely delicious. Really loved that bite of food, the flavors absolutely shined. The cheeseburger potsticker was my favorite bite of the meal. Wished there were more than two per plate, though it was a larger portion. The shumai was very beautiful to look at it, but my wife and I agreed that the meat had kind of a pasty texture inside. The wrapper on the shumai was really good though. Last we shared the sweet and sour halibut. What an excellent dish and super beautiful to look at. The pomegranate sauce was such a perfect accompaniment to the honeycomb wrap on the fish which was cooked perfectly. We definitely enjoyed this one. All this with two mocktails and tip was $200. Would we come back. Yes. We definitely would love to try more items on the menu. Hope they can improve on a few of the kinks. read more

They deserve 5 stars for service alone! This restaurant is a sister restaurant of the steakhouse The Saint and is located on their first floor. They do offer valet parking. Overall the food was good, I did not like their lobster and shrimp egg rolls as they were bland in my opinion but the manager was very sweet about it and took it back, I absolutely enjoyed prime filet and broccoli it was delicious. Their Jumbo Wagyu Cheeseburger Potstickers are definitely something for an acquired taste but I am happy I tried them. We also tried Duck Fat Spicy Chicken Wontons and that was delicious! A dark, trendy, and intimate vibe that's perfect to set the tone of the meal without distracting from the delicious meal you're about to indulge in! Here's what we had: -Lobster and Shrimp Air egg rolls -Caviar bites -Jumbo Wagyu Cheeseburger Potstickers -Drunken Yellowtail -Duck Fried Rice Let's start with this - EVERYTHING is delicious. My only recommendations are: (1) if you're going to start eating in any particular order, start with the cheeseburger potstickers. There's nothing wrong with them but all the rest of the dishes are SO elevated that having the potstickers second will kind of throw you off a bit. (2) the duck fried rice has amazingly tender bits of duck. Whatever your main course, GET THIS FRIED RICE! Service was excellent! Perfect balance of regular check ins. We didn't feel like we were constantly interrupted or needed to hunt around for our server. Of the food, the lobster and shrimp egg rolls and duck fried rice were amazing, and the lava potato puree was maybe the best mashed potatoes I've ever had. My experience here could not have been better. I'm a fan of Chef Shirley Chung from her times on Top Chef. The food was incredible. The oysters (raised in Alabama) were briny and a little sweet. I would recommend the carpaccio, perfect with the chips. The flavors of the tea and smoke come through on the duck. The potatoes are insane. Don't think, just order them! We were delighted to be seated at a booth for two. We always enjoy sitting side by side rather than across from each other. The lighting and decor are gorgeous. Service was really attentive without being overwhelming. We even got to meet Chef Shirley at the end of our night, as she was dining as well that night! I can't wait to come back. read more

Night Rooster I have eaten at what many critiques refer to as the best restaurants in the world. Most of them lived up to their reputation. But I must say the Night Rooster exceeded my greatest expectations. When you enter the restaurant, you instantly are in awe of the décor. It's breathtaking. The wait staff makes you feel welcome and their smiles tell you they love what they are doing. You know that you are going to have a great experience and we did. The menu was one page that offered something for everyone at our table. I honestly don't think the food could have been better. I'm sure my taste buds thought they were in heaven. Every bite just got tastier. Even though we had our own waiter, I noticed the staff paid attention to every table and every guest as they passed by. I will go back again. Night Rooster is a great restaurant. It is decorated meticulously- every item has been addressed. It's a really stunning restaurant. I will begin with service - it was top notch. All waiters, runners and even water service came on time and didn't interrupt. My wife had a cocktail and it was awesome, and she is very picky. With the food I will start with the best part of meal - the duck. We got a half of duck and with the sauces and veggie accompaniments it was amazing. We ordered the lava puree was perfect - didn't go with duck but still would order anyways. We ordered cheeseburger potstickers and they were good but not fantastic. We also ordered the rooster salad - the dressing and chicken croutons were great but rest of salad was nothing special.
