The pho at Pho Ga Hai Van is almost exactly like what we had in Vietnam. The broth was deep with chicken flavor and served with plentiful amounts of culantro and basil. I loved the chicken, which had the characteristic chewy QQ yellow skin of free range chickens. The biggest treat was they serve the unlaid chicken eggs (Trung non) which are deliciously bouncy. It is very expensive though at $8 for a plate of only a few eggs with some other assorted chicken offal (liver, giblets, and heart).
