    This place has good mazemen. It reminds me of Kajiken but I actually like this place better. The flavor profile is more what I'm looking for (it is less soy sauce based) and the noodles are thicker (closer to udon noodles). I did think the noodles were on the al dente side so a bit more hard than I personally like but it was fine. I may be in the minority of liking softer noodles. The Tokyo mazemen was quite good still and perfect amount of spicy. You can add vinegar to make it more tangy! They also give you a small side of rice to make a risotto with the sauce at the bottom. Service was friendly. They let me use the table purse holder tool (!) which I've never see anyone else offer before! Also I thought it was great the bathroom had female sanitary products! I've also rarely seen these offered!

    This meal was DELICIOUS! I get the dry ramen hype! I tried the mentaiko ramen which was solid and had a yummy big shrimp tempura. However I think the Deluxe is better, more dynamic and complex and aromatic. The Deluxe had a delicious soft boiled egg and scrumptious pork slices that made me stop in my tracks. I could gobble an entire bowl. I can see myself trying more of the menu but missing the Deluxe every time hahaha. They give you a little bowl of rice at the end to finish off all the delicious dry ramen sauce.

    Second time at Wadaya in Fremont, and a much smoother experience than when they first opened! We walked right in and were seated immediately. The service was great since it wasn't too crowded. We got the takoyaki and two Tokyo ramen entrees--the ramen came out right before the app, which was a little funny, but no big deal. The food quality feels consistent, and it remains one of the rare spots in the South Bay for this. Highly recommend!

    My husband and I dropped by for a late lunch and really enjoyed eating here. There was fast and attentive service. They even kindly boiled the kale in my vegan mazemen for me given my concern over the current cyclosporosis outbreak! Super grateful My husband really enjoyed his karaage and tonkotsu ramen, and I loved the ika karaage and my vegan mazemen was extremely filling and delicious.

    I was very happy to hear that Wadaya opened in NorCal. I've been to the LA location several times and loved it so much. No wait on a Sunday evening. Service was friendly and efficient. I ordered the deluxe mazemen. It has a slight kick of spice from the spicy minced pork but nothing too crazy. I love how flavorful their mazemen is and especially love how creamy it gets after mixing the poached egg with the noodles. Their soft boiled egg is always cooked beautifully as well with a jammy yolk. I love adding vinegar to my mazemen for the acidity. Tried some of the mentaiko mazemen as well which wasn't bad but I definitely preferred my deluxe mazemen by a landslide. Thought the raw mixed greens didn't really complement the dish that well in my opinion. They give a small scoop of rice at the end to soak up the remaining sauce. Rice was on the soggy end but I personally didn't mind. Would definitely come back and highly recommend.

    I completed an online order for a Deluxe mazemen bowl for pick up and the pick up process was straightforward and smooth. The shop itself was clean and not very busy when I arrived, so I was able to get my food on time with no issues. The meal itself had instructions on how enjoy it, which I appreciated. It was very flavorful and rich, which was good at the start, but eventually it got too much to finish. I am not used to adding umami vinegar halfway through/towards the end and I felt it made the dish not as good, so I'm glad I didn't add a lot of it. The portion size was great and most definitely can be shared if you aren't too hungry and want to also eat appetizers too. I would try another dish again in person.

    Wadaya's mazemen was a very interesting and uncommon experience. You are instructed to mix, add vinegar halfway, and rice to eat with the remaining sauce, and this procedure did change up the experience. I ordered their flagship Deluxe mazemen, and while the flavor was "good" it also seemed "too much" and did not mend well. It wasn't bad per se, but very distracting. I would return to try their other bowls though! The restaurant was very clean and well decorated, and the staff were incredibly attentive! An excellent casual experience with a fun twist.

    Wonderful service. Explained what dry ramen was and what to get based on what flavors we were looking for. Got the MENTAIKO MAZEMEN and it did not disappoint. It was creamy, delicious and very similar to carbonara just like he said. Huge portion for me and pricing was just right. The little rice at the end to soak up the sauce was yum :) The ramen soup was also thoroughly enjoyed by the other party. Thanks!

    The ramen broth was rich, the noodles were plentiful and the egg was boiled great. The chashu was okay, I wish it was charred or cooked a bit longer it felt very flimsy and not as cooked through but still good! We also had Chicken Karaage which was very good as well. Crunchy and sweet and sour on top with spicy mayo as dipping sauce. We also got French fries and they were SUPER good and crunchy. The service was good. They were super busy we had just come in before the lunch rush. The ambience was inviting and the decor was great.

    First time having mazemen & it definitely will not be my last! This meal was absolutely delicious! My mom and I started with some shishito peppers as an appetizer. These were perfectly flash fried and seasoned generously with salt. Great with a touch of lemon. For my mazemen, I got the Tokyo. The meat sauce was so rich and flavorful, the noodles were perfectly chewy, and the egg tied everything together with a slight creaminess. With a dash of vinegar and chili oil, this was a perfect bowl of dry noodles for me. My mom got the spicy mentaiko which was very reminscent of cream pasta. It was tasty, but I definitely enjoyed the tokyo bowl more. They finish you off with rice at the end to make a sort of risotto with the leftover sauce. The workers were really attentive and informative throughout our meal, explaining to us the proper way to eat the mazemen. The food also came out relatively fast. The place is very casual looking. Prices are a bit in the higher end for the portion, but it is really filling.

    This place rocks! It was my first time trying mazemen and this place set the bar high. Our servers were so attentive, they were on top of everything before we could even ask. I got the deluxe and it was a great portion -- could definitely feed two with appetizers. The chicken karaage was bomb. The staff happily made alterations to the cheese mazemen for my vegetarian friend. The yuzu cheesecake was delish. Interior is clean and modern.

    Came with a group of 5 and was able to get seated immediately during off hours around 2:30pm on a Saturday. This was my first time and I opted to try the deluxe mazemen, which was pretty good! Portion size was good and left me feeling pretty full at the end. The deluxe was a bit spicy, so maybe not the best if you can't handle spice. Service was awesome! Since it was my first time here one of the servers explained the menu in detail and offered recommendations and also highlighted some of the seasonal/new items on the menu. Our waters were also constantly refilled.

    So I tried mazemen at a different restaurant before and didn't love it, but didn't hate it either. Fast forward to Thursday evening, we ended up coming here as a party of 3 around 6pm. We were able to sit wherever we wanted since it wasn't busy yet, but it filled up quickly after we arrived. All of the servers were so kind and helpful. We started with a couple pints of Asahi and a small hot sake. I went with the Deluxe Mazeman. Since it was my first time here, our server instructed us to mix everything quickly before eating, then at about halfway through, to try it with some vinegar. Can't forget to add the ground up sesame seeds. Every bite was full of flavor. Towards the end of the meal, they give you the cutest scoop of rice to eat with the remaining sauce. I could have done without it though because it felt like carb overload lol. I was in a good food coma afterwards, but so satisfied. Thoroughly enjoyed my meal at Wadaya more than my last mazemen experience. Can't wait to come back!

I would compared it to a Yoshinoya and the irony is that I actually like the beef bowl from Yoshinoya better at half the price? lol. Our friend shared a little bit of her katsu with us and we thought it was way too dry. Perhaps it's been sitting at the heat lamp for way too long... Overall, what I feel about Hinodeya is that they've definitely have some unique ideas in their dishes but the execution and consistency still needs to be worked on. I noticed that there were 4 different spicy level and I was a little curious as to what they were. It wasn't until I asked the waiter that they explained them to us. I was a little puzzled because this seems to be what they wanted to push but we just weren't told to us in our visit until way later... It's a 50/50 whether I'll come back or not. I think there are definitely improvements for a good ramen spot that people would crowd upon in the bay area for sure.
