I know why they're so busy. Because their food is soooo good! The noodles have such a good chew and the right bounce to it. My favorite dish was probably the knife cut noodles. Came on Friday night around 7pm and no wait! Service was quick and attentive. Our server got us sharing bowls and ice water without us asking. Food came out quick and was great. Ordered 5 dishes and only remember to take pictures of 3. 1. Cucumber salad was sweet/tangy/refreshing. 2. I've been to Highland Noodles a number of times now and it's become one of my favorite places for noodles. The beef noodle soup with either hand pulled noodles or knife cut noodles are amazing. I've also had the hand pulled noodles with pork belly which is delicious. The spicy baos were a new item so I wanted to try them. They were really good but definitely had a spicy kick. Everything labeled spicy is extremely hot so be careful. The dining area is beautiful and they can accommodate large groups. The service is very fast here which I also love. Not sure if this is normal, but this entree came with a non-spicy broth on the side. The plain broth was very very good by itself. The pork rib was very well seasoned and easy to chew. Since the rib was spicy, I thought the noodle would be too, but I didn't think it was spicy even though the noodle was soaked in spicy sauce. I had to add the additional spicy oil that was provided on the table. I would give the spicy pork rib and side broth a solid 5-stars, but the noodle was meh. The thin noodles are my preference but my mom liked the knife cut. Both had a bouncy and satisfying texture, and I bet it's even better warm and fresh. The broth is delicious and light. The pork bowl came with a little tub of black vinegar as well. The little beef cubes in the beef noodle soup weren't my favorite presentation for beef noodle soup, since I think there is something satisfying about big pieces of beef. The restaurant itself looks modern and there's plenty of space between tables. We ordered with the QR code. There's more than just noodles; there's appetizers like pig ears, dumplings, yea eggs, and more. Spicy Beef Noodles in Incense Pot: These noodles came with safety scissors which was so funny! Good thing though because they were so thick and long. These were the classic, flat, Szechuan numbing Chinese spicy noodles that I expected. It came with bamboo, celery, chunks of beef, and my favorite topping, soy wrap. Spicy Pork Spear Rib Topping Soup Noodles: These noodles had soup on the side, which was nice so that the noodles didn't expand in the broth if you were slow to eat/wanted to take it home. The ribs were HUGE and flavorful. I wish the meat was a bit more moist though. It was spiced but not Szechuan spicy, so we alternated between the dishes. Tea egg: I never had one of these before. I love noodles and knew I had to stop by after seeing this place on Instagram. We ordered: - Lanzhou Hand Pull Beef Noodle (3.5/5): Broth was a clear, light broth, very "clean" tasting. Some of the beef pieces were pretty chewy. Noodles were cooked well. I probably wouldn't get this again - Cucumber salad (4/5): Simple, but refreshing and very garlicky. - Spicy beef flat noodles (4/5): Good level of spiciness with lots of bold fragrant flavors. I could taste the mala and numbing from the szechuan peppercorns. A bit on the oilier side, but these type of dishes usually are. I'd suggest getting a cold dish like the cucumber salad to help with the grease. Noodle were al dente and chewy, and the bean curd skin and celery was a nice touch. The beef was really soft as well. I would get this again! - Pork Xiao Long Bao (4/5): Pricey for only 4 pieces, but the baos were really good! Each piece was filled with a lot of meat as well. Pork belly was soft and moist from the braising, with a good amount of fat to meat ratio. The sauce flavor is on the lighter side. It comes with soup on the side, which was a nice clear broth that was perfectly seasoned. - Lam skewers (4/5): The lamb was moist and cooked well with lots of seasoning. We had gotten spicy, which wasn't spicy at all. Lots of cumin flavor that shines through and there's a good amount of dry seasoning on each piece, which we liked - Sugar-coated hawthorn: This is the first restaurant I've been to that offers tanghulu. The coating was crunchy and sweet. The hawthorn is really sour/bitter, so if you're not a fan of sour/bitter things, then I'd recommend not ordering this. It did take awhile to receive our food and the arrival of our food was very spaced out. Each dish would come out at least 10-15 minutes after the previous dish; none of the food came out at the same time. By the time we received our cucumber salad, we were almost done eating. While waiting for the cucumbers, I had ordered the sugar-coated hawthorn and that had come out almost immediately. The beef were tiny cubes. It was buried under the noodles. The sweet and sour pork took forever to come out. Presentation is beautiful, 5 stars. Came here for a Yelp Elite event and was impressed by the beautiful decor in the restaurant. There are no paper menus or ordering with a server, instead you place an order by scanning your table-specific QR code (or menu is online at https://www.39miles.com/p/07228108). We were served with free hot tea as soon as we sat down! We ordered: - Braised Beef Slided Noodles ($14.99) - They should fix this typo, it's supposed to be "Sliced" noodles. The broth was average and not that great, but after adding in the chili oil and vinegar it was at least drinkable. The beef was kind of dry (I prefer brisket), but the standout were the hand-pulled noodles - they were AMAZING!! Probably the best hand-pulled noodles I've ever had (even better than the ones at Shang Artisan in Vegas) - they were super bouncy and QQ and ADDICTING!! 12/10 stars for the noodles!! - Cold Mix Bean Curd ($3.99) - this was a nice cold dish that had all the right elements. Would definitely order this again - Sweet & Sour Crispy Pork ($16.99) - this wasn't the Northern Chinese Guo Bao Rou version that SO was expecting, so he didn't really like these. I thought they were fairly good - hard crunchy exterior with a sweet and sour glaze. - Spicy Beef Noodles ($15.99) - SO really loved these. He wasn't impressed with the other dishes, but he said he would come back just to eat these! The NOODLES are SO SO GOOD and the sauce is really great as well (relatively similar to a mala xiang guo). There are only small bits of beef in there (same beef as the braised beef they use in the noodle soup). He actually wanted Spicy Pork Ribs and they ran out. One thing was that they give you these kiddie like plastic scissors to cut the noodles, which annoyed him. Not sure whatever advantages to the flavor of keeping the noodles uncut is worth the aggravation of having people cut them. - Chrysanthemum Herbal Tea Drink ($2.50) - another drink from Wang Lao Ji, a great pairing with this type of food - Banwangsi peach flavored soda ($4.00) - They should fix this typo, it's pear, not peach. I didn't really like this but SO did Overall had a nice meal and appreciated the menu offerings (and even little touches like how they put up coat hangers in the bathroom). Some recommendations for the restaurant: - Don't have someone use a power drill to fix the screws for a chair RIGHT next to dining customers. This was incredibly piercing and loud and irritating and went on for around ten minutes, when they could have done that outside - Change your menu options to list your best items first and group all the noodles together. Came here for a weekday lunch and was seated immediately which was very nice. Its always interesting to try out all the new restaurants in the Milpitas plaza as they change out very often. I ordered the Lanzhou Hand Pulled Beef Noodle and thought it was very okay. I really appreciated all the different options they had for the noodles - I think they had 5 different widths which was very impressive (+1 star). The flavor was good, I really liked the soup as it had a slight medicine-y and black pepper flavor but wasn't too heavy. However, I felt like the beef cubes were kind of weird because it was cut kind of small and wasn't particularly tender. Also the noodle to soup ratio was a bit off as I had a lot of noodles left over. Overall, a very okay noodle soup place in the South Bay. I turned my head around and saw someone in the kitchen slamming the dough again the table and he was pulling the dough apart like he's making hand pull noodles. However, it was not clear since the kitchen was not very visible. But we all liked the texture of the noodles we ordered. The veggies and the protein portions seems to be on the smaller side. The noodles only came with a few slices of daikon and small portions of diced beef. Broth was good, no feeling of dirty after meal! To me, means minimal or no use of MSG! As for service, there's room for improvement. I didn't feel like the servers were that friendly at the check in when I said I was checking in for Yelp elite event. And at the check out,the guy or maybe the manager, didn't have much affection on his face... throughout the entire visit, we didn't hear "thank you." I attended the Yelp elite event for this place and loved it- so now I'm back with the hubby. As usual, the dishes are great and the quality of the noodles stand out. They are so fresh, bouncy, and delicious! You actually see the cooks rolling them out at the back. My husband got the pork belly with flat noodles and like before, they were excellent. The pork belly was very tender and the noodles had a great thickness. He added a tad of chili oil and it complemented it beautifully. I got the vegetarian noodles! This is a comfort food carb bomb and super good with flat noodles. This is not a chow mein but a saucy dish! It's not spicy at all but so tasty! I ordered the Lanzhou hand pull beef size small with no spicy, medium thin noodles. The broth had great flavor! The beef pieces were a little small but portioned well for me and tasted great! I felt that there was more noodles than what I expected and I couldn't finish it. My friend ordered the pork belly topping soup noodles with wide flat noodles. She said that it tasted great! The inside is very clean and organized, I like how they have clear tall long dividers in between the booths. They have two separate bathrooms that allow one person at a time- which are relatively clean, it would be nice to make them both gender neutral Downside is that parking can be limited, it's in a somewhat busy area. Got invited to go with my sister for the south bay elite event and I'm so glad I did. Drove all the way from South City and it was definitely worth the drive. When ordering, you get to choose the kind of noodles you want. I got the noodles that is already assigned to it. When it arrived, I got 2 bowls - one with just a broth & the other with the pork belly & juices on top of the noodles. I assume you're to pour the broth over the noodles if you want it more as a soup but I actually preferred it separate. The pork belly was extra tender and the braising juices were delicious. The noodles were super fresh. You can actually see them making & pulling the noodles in the kitchen. I ordered rice for my daughter and she ate the pork belly with the rice and enjoyed it so much she forgot about the noodles. We also ordered the dan Dan noodles. We were a bit hesitant about the spice level but it wasn't too bad. At first glance you would think it was going to extra spicy by its deep red color but it was the perfect amount for our tastebuds. The star of the show is definitely the noodles. About 90% of their menu is noodle based with hardly any side dishes. I'm a big fan of noodles so this place hit the spot. I'm always looking for a good beef noodle soup (especially when I miss my mom's), and I was blown away by how authentic and hearty every dish was. Plus, they make ALL their noodles in house! Here's what I tried: Griddle prawns: seriously in love with how incredible the mala flavor was, and how it really balanced the natural sweet fragrance of the prawns. Would highly recommend even though it's a bit messy to eat! Spicy tofu with vegetable: like the griddle prawns, the soft fried tofu is cooked in a super yummy and slightly numbing mala sauce. The tofu they use is incredibly fresh, and oh so tender! Seafood stir fried noodles: I was expecting a chow mein, but I was pleasantly surprised at how unique this dish was! They cook the noodles in a slightly sweet tomato sauce, as well as a decent amount of shrimp and squid. Jincheng fried Ma noodles: definitely one of my favorite dishes, especially with the generous amount of seafood and the unique, slightly spicy and slightly sweet (from the cabbage) broth! Braised beef sliced noodles: a really solid traditional beef noodle soup, although their broth has an unique and slightly herbal taste! Their beef is super tender, and I love how you get so many pieces as well! Lanzhou hand pull beef noodles: definitely a solid option if you're craving something lighter! Their broth is still flavorful and rich, and pairs beautifully with the naturally savory nature of the beef and noodles. I had such an incredible time trying out all these dishes, and I can't wait to be back with my family to try more. This place is so good omg I can't wait to come back!! Amazing selection of authentic noodle dishes and appetizers, the beef wraps were so good I ordered another to bring home with me. What really stood out to me was how clean this place was, the service was super friendly and efficient too! They speak both English and Mandarin here, and also have a mobile ordering system if you scan the QR codes at the table. The food came out quickly and the staff were friendly. Food: Candied haws - I've been wanting to try these so badly ever since I saw them in Chinese dramas I liked them but my friend did not. It's definitely a unique taste. Beef Noodle Soup - not the best but not the worst. Certainly not bad! I like that you have the options for how wide you want your noodles. We tried the wide flat, and it was wide asf and al dente. Pork belly noodle - slightly different taste from the beef noodle soup. This comes with the soup on the side. Tofu skin pork roll: pate like texture. Wasn't bad but wouldn't order it again. Fried buns with condensed milk: :)))) the picture on the menu showed 4 buns but we ended up with 8! I love these. Tried this place during elite week. I have never had hand pulled noodles and was very excited to try. We were greeted as soon as we walked in and seated. There was also a pot of hot tea ready on the table for us. The staff were all very friendly. You do not order with staff rather you scan a bar code to get the menu and then order. The food was brought out relatively quickly. I got the beef noodles and wife got the spicy beef noodles. We also got the pat cucumber as an appetizer. The cucumber appetizer was great. Fresh and tasted really good. My beef noodle soup was the star. The broth was as good a broth I've had and the noodles were fantastic. Also lots of tender beef as well. The reason for 4 stars and not 5 was the spicy beef noodles. It is not a soup and we were aware of that due to the pictures. It was good but not as good as the beef noodles in broth. Both dishes were also really good size and we couldn't finish all the food. I highly recommend this place and strongly suggest you get the beef noodles. This place has some of the most authentic hand-pulled noodles I've had in the Bay Area! Not only are they serving fresh hand-pulled noodles, they have a whole array of items on their menu as well. The restaurant itself it super modern on the inside with great lighting and plenty of seating. We ordered a bunch of food and everything came out super quickly which was much appreciated. Service was attentive as well and quick to help when needed. I also enjoyed the fact that you order through a QR code which minimized the time talking to a server and made the entire dining process quick and efficient. (5/5) Lanzhou Hand Pulled Beef Noodle: This dish came with thinner hand-pulled noodles that were incredibly QQ and flavorful. I really liked how they weren't skimpy on the beef and the portion size was decent for a small bowl. (5/5) Spiced Beef Slices Noodle: This noodle dish came with a clear broth and many slices of beef. The noodles were the thicker hand-pulled noodles and perfectly chewy. (5/5) Spicy Fry Lamb Skewer: These were perfectly crispy but not dry at all and came with 2 pieces. The spicy version comes coated with a lot of chili flakes, but it wasn't too spicy. (4/5) Braised Chicken with Flat Noodles: This dish was HUGE! It comes in a huge platter full of thick noodles, various vegetables, and chicken. It is fairly spicy so be cautious if you can't handle a lot of spice! (5/5) Scallion Pancake: These were incredible! They were perfect crispy and the order came with so many thick pieces for only $7! (5/5) Beef Wrap: Probably one of my favorite Chinese snacks. One of my favorite places I've eaten at this year. Fresh chewy hand-pulled noodles hit different. The freshness, taste, and texture takes the noodle experience to the next level. Plus, you can get the noodles in whatever thickness you like. It's all so good! I first checked out Highland Noodles for a Yelp Elite! event, but it was so good I had to take the family back because we couldn't get enough of the noodles and flavors in every dish. Wifey and I absolutely love the Spicy Beef Noodles with the thick cut noodles. It is loaded with balanced savory and spicy flavors and love the kick from the mouth-numbing Sichuan peppercorns in the sauce. I also love the unique flavors and fermented bean taste of the Noodles in ground pork sauce. My daughter loves the Braised Pork Sliced Noodle soup. The braised pork is perfectly cooked and ultra tender. It's so good. TBH, you can't really go wrong with whatever you like here. There's something for everybody. We can't wait to go back. read more

Rich! The food here is rich in flavor and is definitely shareable amongst each plate. Sharing will let you try more food. The noodle plates are too much for one person to tackle, but if that's all you're getting then go for it! The beef noodle soup is bomb.com, it's the soup you didn't know you needed in your life! It's easily a split amongst 2 (ask for little bowls). The spicy pork "burger" (it's like paratha stuffed with minced pork) was a let down. It was lacking flavor. It was oily and bland. Pro tip though, spoon some broth from the beef noodle soup so it's like eating birria tacos. Maybe I should have tried this before anything else but it came at the end. Maybe all the flavors from the other plates took away from this dish. The spicy noodles are my favorite! Again, these plates are plentiful, so you can totally share on a date night! The spice is nice, and not over the top, it'll fill those with insatiable hunger. The noodles are super long so you will have to cut them to pull some out. Noodles have a favorable chew. Once it starts to cool down it looses traction and the oil pools at the bottom. I did see some people struggle with the spice, be aware if you don't like things spicy! Came here with family and decided to try their hand-pulled noodles as was recommended by the reviews. I took away a few stars because the online menu can be confusing and they brought out the food randomly (desserts before all the main dishes were served). My noodles came 20 minutes after my family had gotten all their dishes, so they ended up having to wait for me to finish. However, the meal itself was good. I enjoyed the shredded potato as it reminded me of my childhood when my aunties would make this for me. The level of spice/mala was about 3.5/5, it definitely took a while to kick in. Everyone said the noodles were pretty good, and it came with a side of soup which was nice. The texture of the noodles were bouncy and chewy, very good! The dan dan noodles were basically doused in oil, so it wasn't very easy to eat. I would recommend asking if they do dry dan dan noodles! Had to take a star away because I waited for my noodles and by the time they arrived, my family had already finished 3/4 of their own dishes. The sweet and sour pork was unlike any other we had ever tried, it was deep fried and super carmelized, then stacked into a jenga formation. I personally found it to be very overwhelming in flavors, and the meat was not well seasoned. But my family thought it was alright. If you plan to come with family, they have a wide room of seats and the staff are all masked. They primarily speak mandarin but are accommodating to English speakers. The space itself is clean, and they are quick to refill water. I would stick to noodle dishes if you come here, and the appetizers/dessert options are not bad. read more

Wow wow! What a delicious feast this was! I'm elated to have experienced this noodle heaven. Every dish was well worth it. I also wish I had five stomachs so I could try everything off the menu! Next time ;) -FOOD- Highly recommend the LanZhou hand pull beef noodle (flat noodles are my go to; but you can select your preference from 5-6 noodle size types). If you go with the combo, you can choose a side (I tried the garlic seaweed salad, and the steamed egg with ground pork -- both solid), as well as a dessert cold soup (white fungus sweet soup or brewed rice in milk) Housemade Flour Jelly Noodle = Perfection. This was recommended by a friend who had tried many dishes here and this was her favorite. It certainly did not disappoint! The flavorful sauce (I would love the recipe) mixed with freshly shredded carrot & cucumber and tofu... I am still salivating over it. Fry Lamb Skewer = 2 very sizable skewers, either with spicy or non spicy options. The spicy powder was not overbearing at all! It was a mild taste but added that right amount of kick to the lamb meat. Cabbage with Dry Chili - a great savory vegetable side dish to accompany the carbs and meats -SERVICE AND AMBIANCE- Around 1 pm a bit past the lunch rush, the wait queue took about 30 minutes and there is an iPad inside for the waitlist process. Once seated, the ordering was smooth using the QR code and webpage, and food literally came out in record time (felt like 5 minutes)! The decor and interior seemed clean and new, and was overall a very pleasant happy experience :) *side note: I usually am very aware about how restaurants charge their tip total, as it should be a % of the subtotal and not total. Like many others, I found Highland Noodles from various foodie social medias and wanted to try it asap! I arrived at around 7pm on a Monday to a packed restaurant, waiting approximately 10 minutes before being seated. You can easily waitlist on the tablet they have in the restaurant, but note that it is not connected to Yelp, so you won't be able to waitlist online prior to arriving. The menu can be accessed via QR code, and provides both a Chinese and English menu option. Ordering can be done directly through the phone, but I'm sure you can also order with a staff if you prefer. We ordered the Beef Wrap Rolls, Lanzhou Hand Pull Beef Noodle, and Spicy Beef Noodles. My favorite ended up being the Lanzhou Noodles, and I recommend going with the non spicy soup base. It is refreshing and the flavors shine through. Since the noodles are very long, the staff can provide scissors to aid in cutting them up for sharing! Overall, I had a really great experience at Highland Noodles! The place was bustling with families and service was quick and easy. The only downside is that some of the silverware was not clean, but that can easily be exchanged. read more
