I asked and found out that the udon is replaced with a shirataki tofu noodle that is dubbed a "miracle food" in that it is virtually calorie free and has loads of fiber and does not become soft and soggy like ordinary noodles when you take too long to eat them. These stayed unnaturally firm even after an hour it took me to drive home, shower and reheat. I instantly wanted more with the first bite that I scooped of my korean fried rice plate that I ordered on my first time here. One of if not the best that I have ever tasted. Man this is a little tough. I was craving a carne asada burrito but when I saw this yellow truck, I had to visit. Talk about a total 180 from Mexican to Korean in less then 30 seconds or in this case the trucks being 30 feet apart. After pacing back and forth between the two menu signs, I decided to get Cupbop's most popular dish. It happen to be the Korean combo of surf and turf or to non locals Garlic Shrimp and Kalbi. Yea they had me at garlic. The whole time I was there, the two ladies working there were smiling. They really enjoyed their work and made small talk with everyone. It was pretty entertaining watching the lady use the small grill to cook the kalbi. The hot plate looks like a little Gorge Foreman grill. But you can tell the two ladies there were happy to be working. After about 5 mins my plate was ready and I started to head home. While I was driving home, the aroma from the food was driving me crazy. Open the plate and visually it looked delicious. 6 pieces of shrimp and one strip of kalbi cut into four parts. First my comment on the sides of kimchi, mac, and toss salad. Not bad, all three were average taste. Jasmin rice was cooked just right fragrant and not mushy. Garlic shrimp was fantastic. Not too buttery, where you feel your heart screaming no more but the stomach saying "feed me". It was just the right amount. Now the kalbi was delicious but tough. Tough like in, which will separate first: the meat from the bone or my teeth from my skull? Now it was flavorful but really chewy. I don't think I'll be getting the kalbi again from here. Overall three stars. The service and shrimp are worth coming here to pick up a plate. The kalbi needs to marinate more in my opinion. I'm always down for Korean food and supporting a small business. This food truck was being run by 2 cute little Korean ladies. I'm not one for frequenting food trucks, but we were all hungry and thirsty, so we decided to give Chef's Cup Bop a try. We ordered a Kalbi and Garlic Shrimp plate to share amongst myself and 2 little ones. It wasn't enough food, so we ordered a plate of just Garlic Shrimp. Kalbi was a teeny tiny portion, mostly fat. Shrimp was delicious. Nice, hot and buttery with a nice amount of garlic. Plates were served with a small side of kimchee, piece of sliced fresh pineapple and cabbage salad with French dressing. I tried subbing the rice on our plates to Kimchee fried rice. The woman said it would be an up charge of $7.00. Mmm.. No thanks. We stuck with the regular white rice. Cupbop is a Korean food truck located in the parking lot behind Coach store area. It's next to Whip truck. Cup means cup and bop means rice in Korean. The two Korean ladies were nice and friendly. They let us know their chicken katsu is their popular item. But we ordered Teri chicken and Bulgogi (beef) bowl. One order can easily feed two people. The portion is pretty big with lots of rice, cabbage, bean sprouts, kimchee and tobiko(fish eggs). Teri chicken was a standard Teri chicken taste. Bulgogi was nicely marinated and soft. This food truck was just OK. Nothing special with the spicy pork and kalbi. My biggest disappointment was the absence of banchan (small side dishes typically served with Korean food). Sure, they had the ubiquitous won bok kimchee, but mac salad & fresh shredded cabbage slaw? Plus the amount of rice was, in my opinion, less than what's expected for local plate lunches. Maybe being located at the Waikele Premium Outlets they have geared their plates for the tourist palate, but for the same price I'd rather go to Song's Korean BBQ down the street in Waipahu or Yummy Korean BBQ. read more

Their menu features a bunch of plate lunches that are Hawai'i favorites but majority of their menu is Korean items. I was craving shrimp and opted for the garlic shrimp plate. The typical moody Korean lady that runs this place took my order, and without word - no 'thank you', no 'just one moment' - proceeded to make my order. Of course I knew this plate would not live up to those north shore shrimp plates and yup I was right. Note to tourists reading: don't settle for this shrimp! The trip to the north shore shrimp plates is worth it, not just for the shrimp, but for the scenic drive and possible beach session before and/or after! I recently was out trying to look for a local business to support during these times. I came across this food truck located in Waikele outlet and wanted to try it out. At first, I thought they were closed due to the mall being empty but they were open. These two cute Korean ladies were working and they were incredibly very nice. The wait was around 10-15 minutes and wasn't to bad. I ordered Black bean noodles and it was delicious, It was better than the ones I make prepackaged from the grocery store. The price for the meal was good for the portion you get. Overall, I really find this business to have very good customer service and petty delicious food. The Waikele establishment seems to have arranged a nice little spot for this handful of trucks to permanently reside. So basically I come here for the dokbokki (varied spelling) and they offer it in a nice size takeout bowl (like an Acai bowl) with the option of cheese! I know this place gets pretty busy for lunch as they were out of my favorite dish last time. The nice lady who owns/operates the truck let me get a mandoo and fried rice mix bowl at a discount instead. Decided to venture to the left side, where there were two trucks: Tropical Whip and Youngs Cupbop. This isn't a fancy, decked-out, hipster food truck you'd see at eat the street, just a simple yellow food truck run by two sweet Korean ladies. Cupbop? What the heck is a cupbop? I still don't even know exactly, but what I can tell you is that it's delicious! It's like Korean BBQ plate lunch meets sushi donburi... well, kinda. The cupbop is basically a bowl that comes with rice, kimchee, bean sprouts, cabbage, furikake, and.... masago?! Idk if it's just me, but I've only eaten masago with seafood. Typically mixed with poke or on the side in a chirashi bowl or something. But with Korean BBQ meat? Never would have thought.
